Steps:
- Preheat oven at 400*.
- Whisk or blend above ingredients together.
- Grease muffin tins (makes 24 pop up pancakes).
- Bake for 15 minutes or until puffy and golden on top.
- You should be able to loosen the pancake with a knife.
- Serve with syrup, powered sugar, fruit or jelly.
- Enjoy!

What an easy and quick breakfast for those on the go!! These are very simple to make and kids will love them.

Steps:
- 400 degree oven. Grease muffin tins. Mix all ingredients in a blender. Pour mix into greased muffin tins.
- Bake 15 minutes at 400 degrees or until puffy and golden on top. Use a knife to pop or pry out. Puffiness will go down as they cool and they become more like a cup.
- Now they are ready for toppings. Try syrup, powdered sugar, fruit, even fresh jams (strawberry is wonderful). See how easy!!! ENJOY!
