6 cups chicken broth
6 green onions
30 oz frozen shredded hash browns
1 teaspoon salt
1/2 teaspoon black pepper
1 cup heavy cream
1 cup grated cheddar cheese
**Extra green onions and grated cheddar cheese for topping

Steps:

  • Pour chicken broth into pressure cooker, then add green onions, hash browns, salt and pepper.
  • Lock lid and set to high pressure for 5 minutes.
  • When time is up, let sit for 5 minutes then release all remaining pressure.
  • Turn onto sauté or simmer setting and stir in heavy cream.
  • Sprinkle in cheddar cheese, stirring constantly to break up any chunks. Continue stirring until all cheese is melted and soup has thickened up.
  • Serve sprinkled with extra cheddar cheese and sliced green onions.

2 cups crisp-cooked crumbled bacon

  • 1.Bake potatoes in Microwave until tender. 2.Melt butter in a medium saucepan. Slowly blend in flour with a wire whisk until thoroughly blended. 3.Gradually add milk to the butter-flour mixture, whisking constantly. Whisk in salt and pepper and simmer over low heat, stirring constantly. 4.Cut potatoes in small chunks. When milk mixture is very hot, whisk in potatos. Add green onion, sour cream and crumbled bacon. Heat thoroughly. Add cheese a little at a time until it is all melted in.

3 stalks celery (cubed small)
2 garlic cloves (minced)
2 -3 carrots (sliced)
5 potatoes (cubed for stew)
1 cup rice
2 -3 tablespoons poultry seasoning
salt

Steps:

  • Cook slowly (low heat) the following: onion, celery, garlic and carrots for a few minutes before adding potatoes.
  • Add potatoes and a couple handfuls of rice.
  • Add several tablespoons McKay's Chicken Seasoning to taste.
  • salt to taste.

10 tablespoons oil
100 g pancetta
2 onions
2 carrots
4 garlic cloves
1 bunch parsley
250 g borlotti beans
250 g tomatoes
500 ml chicken stock
1/2 savoy cabbage
250 g bread
1 piece parmesan cheese

Steps:

  • Heat half the oil in a large wide, pan.
  • Once hot (but not smoking) add the (optional) pancetta, followed a couple of minutes later by the onion, carrot, garlic, and parsley. Give it a good stir.
  • Put a lid on it and cook slowly for 20-30 minutes, stirring regularly.
  • Tip half the beans in with the veggies and mash the other half with a potato masher before stirring them in too.
  • Pour in the tinned tomatoes and the stock, and chuck in any old rind of Parmesan (it's wise to keep these, as they are a great source of flavour).
  • When the soup has come to the boil, stir in the roughly chopped cabbage leaves and turn down to the lowest heat.
  • Season well, stir in the chunks of bread and put the lid back on the pan. Don't play with it too much, as you want nice chunks of bread.
  • After 10 minutes, turn off the heat, pour in another healthy glug of olive oil and let it sit with the lid on for a good 5 minutes before serving with yet more oil and some grated Parmesan.
