GRANDMA'S POOR MAN'S PIE

This is an even simpler recipe that I grew up with (I've looked at the other recipes for Poor Man's Pie and Sugar Cream Pie - the other name for this type pie.) My grandmother's recipe was a 2-2/3-3 formula. It was called Poor Man's Pie because farmers always had the ingredients handy.

Number Of Ingredients 5

2 cups heavy cream (Whipping Cream)
2/3 cup sugar (you can use white or brown, but Grandma always used white.)
3 tablespoons flour
butter, pats
nutmeg

Steps:

  • Pre-heat oven to 350º.
  • Mix the cream, sugar, and flour.
  • Pour into an unbaked 8" pie shell.
  • Float several thin pats of butter on top.
  • Sprinkle with ground nutmeg.
  • Bake at 350º for 30-45 minutes or until top is a nice golden brown.
  • Chill, then refrigerate until ready to serve.

3/4 cup brown sugar
3/4 cup white syrup
1/4 cup shortening, melted
2 eggs
1 teaspoon vanilla
3/4 cup rolled oats (either quick cooking or regular,uncooked)
1/3 cup coconut (optional)
Cool Whip (optional)
1 pie crust (unbaked)

Steps:

  • Beat eggs until foamy.
  • Gradually add sugar.
  • Stir in remaining ingredients except Cool Whip or pie shell.
  • Place mixture into unbaked pie shell.
  • Bake 45 minutes at 350 degrees or until center is firm.
  • Top with Cool Whip after pie is cooled,if desired.

I searched this out originally for a friend who wanted to recreate a pie from her childhood. Now I'm posting it for a request on the boards. I haven't made it, so let me know what you think about it.

1 9 inch pie shell
1 cup brown sugar or 1 cup white sugar, but brown tastes better
1/3 cup flour
1/4 teaspoon salt
1 1/2 cups light cream
3 tablespoons butter, softened

Steps:

  • Preheat oven to 400°F.
  • Line a large 9-inch pie plate with rolled out pastry dough, prick with a fork and bake for 10 minutes.
  • Remove from oven and reduce heat to 350°F.
  • In a small bowl, combine sugar, flour and salt.
  • Mix well and spread evenly over the bottom of the crust.
  • Warm cream in the microwave, (warm, not hot) and then carefully pour the warmed cream over the sugar mixture, completely covering it.
  • In bits, dab butter over the cream.
  • Bake at 350°F for 45 minutes to an hour, or until golden spots form on the top.
  • The filling will seem liquid but will become firmer as it cools.

This is an awesome recipe that I got from my coworker. It can be modified in many ways, including for the slow cooker. It's a simple meal of things you often already have on hand that really sticks to the bones, and it can also be a fun way to use up some leftovers.

1 pound ground beef
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch onion powder, or to taste
1 (10.75 ounce) can cream of mushroom soup
2 (15 ounce) cans green beans, drained
5 cups mashed potatoes
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes; season with salt, black pepper, garlic powder, and onion powder. Drain excess grease. Stir cream of mushroom soup and green beans into ground beef and bring to a simmer.
  • Spread ground beef mixture into a 9x13-inch casserole dish. Spread mashed potatoes evenly over ground beef mixture. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until heated through, about 20 minutes.

just another recipe entry to try sometime..the recipe calls for 5-7 cups of milk..enough to bring ingredients to within 1/2" of top edge The hand written recipe I came across did not give specific baking time..so I am just guessing, since I had to enter something..will post a correction when I get a chance to try this..

15 ounces stale bread, crumbled
5 tablespoons granulated sugar
1 tablespoon flour
2 tablespoons ground cinnamon
5 cups milk

Steps:

  • Preheat oven to 375*.
  • Roll out and line an 8" pie pan.
  • Crumble the hard bread, (You will need enough bread to fill pie shell).
  • Add sugar, flour and cinnamon, sprinkling evenly over top of bread.
  • Fill pie shell with milk to within 1/2" of top edge.
  • Bake until the pie is firm in the middle and you don't see any juice in the middle.

I know. How can a diary/soy/gluten free pie taste good? It really does! The texture wasn't quite as firm though. The recipe comes from godairyfree.com and calls for a gluten free pie crust. I am adding in the almond meal crust I used, or you can use your own. It has coconut milk, but you can't taste the coconut. I also used 3 tsp pumpkin pie spice instead. I would recommend a larger pie tin for this, as I had to scoop some out into a custard cup to bake separately.

1/2 cup brown sugar, firmly packed
1/4 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg or 1/4 teaspoon allspice
1/4 teaspoon ground cloves
1/2 teaspoon salt
2 large eggs
1 (15 ounce) can pumpkin puree (not pumpkin pie mix)
1 teaspoon vanilla extract
1 cup regular coconut milk (not lite)
1 1/2 cups almond meal or 1 1/2 cups almond flour
3 tablespoons Earth Balance margarine, melted
1 teaspoon stevia or 3 tablespoons sugar

Steps:

  • Preheat your oven to 425ºF. (Unless using the recipe's pie crust - see pie crust directions.).
  • Combine the sugars, cinnamon, ginger, nutmeg or allspice, cloves and salt in a small bowl.
  • In a large bowl, beat the eggs. Beat in the sugar mixture, pumpkin, and vanilla until smooth. Fold in the coconut milk.
  • Pour the filling into the pie crust and bake for 15 minutes.
  • Reduce the temperature to 350ºF and continue to bake for 50 to 60 minutes, or until a knife inserted comes out clean. It may be a bit wobbly still, but it will firm-up as it cools.
  • Allow the pie to cool on a wire rack for 2 hours (Be patient! This is important). Serve or refrigerate until ready to serve.
  • Pie Crust Directions:.
  • Preheat oven to 350°F Melt margarine and mix all ingredients directly in the pie pan. Pat into place with your fingertips.
  • Bake for about 10 minutes (I baked mine about 20 and it never browned), until the crust is beginning to brown. Once it starts to brown it will burn quickly, so keep an eye on it.
