4 slices bread (thick slices)
2 eggs, beaten
6 1/2 fluid ounces white wine or 6 1/2 fluid ounces red wine
1/2 teaspoon cinnamon
1 1/4 tablespoons sugar
oil (for frying)
confectioners' sugar (to serve)
cinnamon (to serve)

Steps:

  • Cut off the bread crusts and cut into quarters.
  • Be careful not to cut off your hand.
  • Place the bread in a deep dish.
  • Mix eggs with wine, cinnamon, and sugar in a bowl.
  • Pour the mixture over the bread and leave to soak for 3 minutes.
  • Heat the oil[ΒΌ inch deep].
  • Drain the bread and slide it into the hot oil{Watch your hands as it spits}.
  • It would definitely be to your advantage to wear a gauntlet whilst performing this procedure.
  • Fry until golden brown on both sides.
  • Drain on medieval kitchen paper.
  • Sprinkle with confectioners' sugar and ground cinnamon.
  • Feed the hungry.

2 slices bread
1 egg
1 cup milk
1/2 glass sherry wine
2 teaspoons sugar
3 tablespoons oil
1 ounce butter
1 tablespoon sugar

Steps:

  • Cut the crusts off the bread and discard. Cut the bread into dainty sandwich-sized triangles or squares, or make small jam or honey sandwiches and put into a shallow dish.
  • Put the egg, and extra yolk if used, into a basin and beat well, beating in the milk, sherry or brandy, and sugar to taste. Pour in the egg mixture over the bread and leave for a few minutes to soak. Turn the bread over carefully and leave for a few more minutes until all the egg is soaked into the bread.
  • Heat the oil and butter in a large frying pan over a moderate heat until just hazing, and, using a fish slice, carefully put the soaked bread slices into the hot fat. Cook for a few moments until golden, then turn and cook the other side. Drain on kitchen paper and serve on a warm plate, dredged with the prepared sugar.

1 egg
1/4 teaspoon salt
1/2 cup milk (low-fat is fine)
1 teaspoon sugar
1/4 cup all-purpose flour

Steps:

  • Whisk milk, egg, flour, sugar and salt into a smooth batter.
  • Preheat flat fry-pan or skillet to medium heat on stove and small amount of butter to coat the pan.

This dish originated during the middle ages in England and spread all over the world with many variations. Traditionalists would use stale bread, but stale cake is a good substitute. Red wine can be used instead of white, and you can add milk, as I have done here, you then have a more recognizable dish called, incorrectly, French toast. The Poor Knights of Windsor, incidentally, was a military order formed by King Edward III in the 14th Century.

4 slices day-old white bread
2 tablespoons caster sugar
150 ml milk
1 tablespoon sweet sherry
1 tablespoon white wine
4 egg yolks, beaten
75 g butter
1 teaspoon ground cinnamon
4 teaspoons strawberry jam or 4 teaspoons raspberry jam

Steps:

  • Remove the crusts from the bread and cut each slice in half.
  • Place 1 tablespoon of the sugar, the milk, white wine and sherry in a shallow dish and stir to dissolve the sugar.
  • Place the egg yolks in a shallow dish and beat well then dip the slices of bread in the milk mixture and then into the egg yolks.
  • Melt the butter in a large frying pan and fry the bread until golden brown on both sides. Drain well and keep hot while the remaining pieces are fried.
  • To serve - sprinkle with sugar and cinnamon and serve hot with strawberry or raspberry jam.

4 eggs , lightly beaten
100ml milk
2 tsp vanilla extract
2 tbsp golden caster sugar
100g tub full fat soft cheese
2 tbsp icing sugar
4 tbsp blackberry compote
4 slices day old white bread
25g butter

Steps:

  • Put the eggs, milk, vanilla extract and golden caster sugar into a large, deep dish and whisk together.
  • Beat the soft cheese with the icing sugar until spreadable. Spread the soft cheese over 2 slices of bread, drizzle with 1 tbsp compote then sandwich with remaining bread. Submerge the sandwich into the egg mix and allow to sit for 30 secs before carefully turning it over and soaking the other side.
  • Melt the butter in a large frying pan until foaming, then cook the sandwiches for 3-4 mins on each side until golden and slightly puffed. Slice in half and serve with extra blackberry compote and a scoop of ice cream if you like.
