Perfect Pomegranate Salad image

This pomegranate salad is absolutely irresistible! It stars a sweet tart salad dressing and the vibrant crunch of pomegranate seeds.

Number Of Ingredients 7

1 cup pomegranate seeds (from 1 medium pomegranate)
1 shallot
1 Granny Smith apple or Bosc pear
1/2 cup toasted pecans or glazed pecans*
1 recipe Apple Cider Vinegar Dressing or Pomegranate Vinaigrette (or dress with olive oil and pomegranate molasses)
3 ounces (6 cups) mixed greens
2 ounces soft goat cheese or feta (omit for vegan)

Steps:

  • Cut and seed the pomegranate.
  • Thinly slice the shallot. Thinly slice the apple (and toss it with 1 teaspoon lemon juice or vinegar if desired to prevent browning).
  • Toast the pecans (don't skip: this brings out the nutty flavor). Alternatively, make glazed pecans.
  • Make the Apple Cider Vinegar Dressing or Pomegranate Vinaigrette.
  • Place the greens on a platter. Top with the pomegranate seeds, sliced shallot, toasted pecans, and goat cheese or feta cheese crumbles. Toss with the desired amount of dressing to taste. (Store the extra dressing refrigerated and warm to room temperature and whisk again before using.)

1/2 cup maple syrup
1/4 cup rice vinegar
2 tablespoons Dijon mustard

SALAD:
3 ripe Fuyu persimmons or 3 plums, sliced
2 packages (10 ounces each) baby kale salad blend
1 cup pomegranate seeds

Steps:

  • Place the first 6 ingredients in a jar with a lid; shake well. Refrigerate until serving., To serve, shake vinaigrette and toss 1/2 cup with persimmons. Toss remaining vinaigrette with salad blend. Top with persimmons and pomegranate seeds.

10 ounces arugula leaves
½ red onion, thinly sliced
1 (10 ounce) can mandarin oranges, drained
1 pomegranate, peeled and seeds separated

  • Place the spinach and arugula leaves into a mixing bowl. Add the onion, mandarin oranges, and pomegranate seeds. Toss gently by hand to mix.

1/2 cup pomegranate seeds
1/2 cup chopped pecans or walnuts, toasted
1/2 cup shredded Parmesan cheese
1 large Granny Smith apple, chopped
1 tablespoon lemon juice
1/4 cup olive oil
1/4 cup white wine vinegar
2 tablespoons sugar
1/4 teaspoon salt

Steps:

  • In a large bowl, combine romaine, pomegranate seeds, pecans and cheese. Toss apple with lemon juice and add to salad., In a small bowl, whisk remaining ingredients until blended. Drizzle over salad; toss to coat. Serve immediately.
