- In a large saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 6-8 minutes; add snap peas and water chestnuts. Simmer 2-3 minutes longer or until vegetables are crisp-tender., Combine cornstarch and pineapple juice until smooth; gradually add to pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened.

This is a great recipe to serve in the warmer months. No cooking over the stove required. I enjoyed this recipe at my sister-in-laws home quite a few times many years ago. It is a great dish to serve to a large number of people. It is easy, other than the chopping, etc. The quantities vary, depending on the likes or dislikes of guests. I think you will enjoy it.

I got this out of BHG Make Ahead Cookbook from 1971. These use some convenience mixes that you probably could make yourself without much trouble. I will post it as it is in the cookbook however!

Steps:
- Prepare sour cream sauce mix according to package directions using the 1 1/3 cups milk. Combine 1/2 cup of the sour cream sauce, the chicken, and green pepper; set mixture aside.
- Sift together flour and baking soda. Combine egg and remaining sour cream sauce. Stir flour mixture into egg mixture.
- Bake batter on hot griddle, using about 2 Tbs mixture for each pancake.
- Place half of the pancakes in a 15 1/2 X 10 1/2 X 1" baking pan.
- Spread each with 1/2 cup chicken mixture.
- Top with remaining pancakes.
- Cover tightly and freeze.
- To serve:.
- Bake frozen stack-ups, covered at 350F for 40 minutes. Prepare cheese sauce mix according to directions. (This is where I would use my own cheese sauce).
- Spoon over pancakes.
- Top with diced cranberry sauce.

- 1. Mix the soups together and bring to a simmer. Add chicken and simmer for 10 mins to heat the chicken thorougly.
- 2. Toppings: Chowmein noodles; Toasted coconut; Pineapple tidbits; Green onions, thinly sliced; Sweet bell pepper, diced; Frozen sweet petite peas, thawed & do not cook them; Water chestnuts, diced; Celery, diced; Slivered almonds, toasted; Grated cheese, optional
- 3. To Serve: Ladle chicken and sauce over rice and top with any combination of the toppings. Caution, this makes a big serving so start out easy with the rice and chicken with sauce as this builds up when adding the toppings. This is a very popular recipe in Utah, not only with households, but restaurants as well. This is such an addictive dish and a big crowd pleaser. I double the recipe and it's still not enough to leave for leftovers!
