POLYNESIAN CORN
This is one of those dishes that goes great with BBQ anything. I made this last night, with BBQ-ed pork chops. Yummy!!!!! I have also made this as a casserole and added some cheese on top....and baked it 325 for about 20 minutes.

Steps:
- 1. Place everything in a pot cook on low till it is all hot.
- 2. Do not over cook the corn, you'll want to keep the peppers tender crisp.
- 3. When the corn is done top with hot sauce if you want a little bit of a kick.
PANIOLO CORNBREAD (HAWAII)
Adapted from Sam Choy's Polynesian Kitchen. Serve warm with honey and butter. Prep time does not include cooling time.

- Preheat oven to 350°F.
- Sift cornmeal, flour, sugar, baking powder and salt into a medium bowl.
- In a separate bowl whisk together melted butter, coconut milk, and eggs.
- Combine wet and dry mixtures.
- Stir in pineapple.
- Pour into a lightly greased 9" cake pan.
- Bake until firm and golden brown, about 35 minutes.
- Cool in pan for 30 minutes.
- Loosen edges of cornbread from pan.
- Place serving plate on top of pan, and invert cornbread onto plate.
HAWAIIAN CORN
This dish is perfect for your next luau. It's very simple and sweet. It's an island twist on creamed corn, like grandma use to make.

POLYNESIAN RIBS
A friend shared this recipe more than 30 years ago, and I've been using it ever since. I make the ribs a day ahead and let the flavors meld, then I reheat and serve them the next day.

- Cut ribs into serving size pieces. Place ribs bone side down on a rack in shallow roasting pan. Bake, uncovered, at 350° for 1 hour; drain., In a saucepan, combine the brown sugar, cornstarch, celery salt and ginger. Combine the pineapple, water onion, vinegar, soy sauce, Worcestershire sauce, orange zest and hot pepper sauce. Gradually stir into brown sugar mixture. Bring to a boil; cook for 2 minutes or until thickened. Brush ribs with sauce. Bake 25-35 minutes longer or until meat is tender, basting with sauce several times.
