This easy kielbasa and potatoes recipe is a classic comfort food your family is sure to love.

16 oz. kielbasa sauasage
1 1/4 pounds potatoes (5 medium sized)
1 Vidalia onion (, chopped)
1/2 tsp. paprika
1 clove garlic (minced)
1/3 tsp. Kosher salt
1/4 tsp. oregano ( or Italian seasoning)

Steps:

  • Preheat skillet on med-high heat.
  • Cut the kielbasa sausage into slices, and drop in the heated pan. Stir while frying.
  • As kielbasa is browning, chop the onion and potatoes.
  • Once the sausage has browned for approximately 6 minutes, scoop it out and put aside. Much of the fat will have rendered. Make sure to leave grease in the pan.
  • Dump the chopped potatoes into the hot skillet with the kielbasa grease. Add the paprika, salt and oregano. Stir to coat in the fat and reduce the burner to medium to medium-low. Cover.
  • Brown the potatoes for 13 minutes, stirring regularly.
  • Add the onions and garlic. Cook for about 12 minutes. Covered, but stirring regularly.
  • Once the potatoes have softened and onions are cooked add the kielbasa back into the pan mix in and all cook for 4 minutes.

8 to 10 small red potatoes
2 uncooked bratwurst links
1 fresh kielbasa or Polish sausage link
2 tablespoons butter
5 teaspoons sugar
4 teaspoons all-purpose flour
1 teaspoon salt
1 teaspoon ground mustard
1/2 teaspoon celery seed
3/4 cup chicken broth
1/3 cup white wine vinegar
1 small red onion, sliced
1/2 cup sliced celery
1/4 cup minced fresh parsley

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender but firm. Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink. Remove and cut into 1/4-in. slices; set aside. , In the same skillet, combine the sugar, flour, salt, mustard and celery seed. Cook and stir over medium heat in butter until mixture is hot and bubbly. Gradually add broth and vinegar; bring to a boil. Cook and stir until thickened. Stir in the onion, celery, parsley, and sausage. , Drain potatoes; peel and slice into skillet. Gently stir into sausage mixture. Heat through.

Official Contest Entry: Simply Potatoes 5Fix. This recipe was given to me by my Polish in-laws and has become a staple in our house. The ingredients are easy to have on hand (thanks to Simply Potatoes), it is easy and quick to make, and the entire family loves it. The kids scarf it down and my husband fights them off in hopes of having leftovers for lunch the next day. I love it because it is a one dish meal and clean up is a breeze. Adjust dressing and cheese to taste--we like ours "dripping"!

20 ounces Simply Potatoes, Diced potatoes with onions
3/4 cup Italian dressing, divided
1 lb kielbasa or 1 lb other sausage
1 1/2 cups cheddar cheese, shredded

Steps:

  • Heat 1/4 cup Italian dressing in skillet. Cook bag of Simply Potatoes according to package directions with dressing as substitute for oil, approximately 15 minutes.
  • Slice sausage and add to potatoes. Cook on high heat until both are browned.
  • Add 1/2 cup Italian dressing (more or less to preference) and cook 2-3 more minutes.
  • Sprinkle shredded cheddar over top and allow to melt.
  • Serve and enjoy!
