HERB POACHED CHICKEN WITH OLIVE SALSA OVER BASMATI RICE



Herb Poached Chicken with Olive Salsa over Basmati Rice image

1 whole head garlic
1 tablespoon extra-virgin olive oil, plus 3 tablespoons
2 large tomatoes, seeds removed and medium diced
1/2 cup packed chopped fresh basil leaves
1/2 cup packed chopped fresh-flat leaf parsley
1 tablespoon cracked black peppercorns
3/4 cup pitted medium diced kalamata olives
2 tablespoons butter
2 cups basmati rice (before use, place in a bowl, cover with water and skim off any impurities that rise to the surface. Then transfer to a strainer and rinse well)
2 tablespoons minced fresh thyme leaves or 2 teaspoons dried thyme
2 teaspoons salt
1/2 teaspoon ground pepper, black or white
1 quart chicken stock
6 cups chicken stock
1/2 cup packed fresh basil leaves
1/4 cup packed fresh tarragon leaves
1/2 cup packed fresh parsley leaves
6 (5 to 6-ounce) boneless chicken breasts
Salt and freshly ground black pepper
1/2 pound steamed baby cut carrots, as garnish

Steps:

  • Preheat oven to 350 degrees F. Slice the root end off the entire head of garlic and turn it upside down, wrap it in aluminum foil and mold the foil so it supports the garlic to allow the cut end to stand upright in the oven. Pour 1 tablespoon extra-virgin olive oil on the garlic so it slips between the skin and the cloves and wrap with the foil so it is enclosed. Roast for about 1 hour and set aside until it is cool enough to handle.
  • To make the olive salsa for the chicken topping, in a small bowl combine the tomato, basil, parsley, peppercorns, olives and 3 tablespoons extra-virgin olive oil. Gently squeeze the roasted garlic cloves from the skins into the mixture. Fold everything together and set aside to let flavors integrate.
  • For the rice accompaniment to the chicken, melt the butter in a medium saucepan over medium heat and stir in the basmati rice, thyme leaves, salt, and pepper, allowing rice to toast for a few minutes. Then add the chicken stock, bring to a boil, reduce heat to low, cover and let simmer covered and undisturbed for 20 minutes. Remove from heat and let stand 5 minutes.
  • In a large saute pan, heat the chicken broth over medium high heat. Add the basil, tarragon and parsley, bring to a boil to integrate flavors, then reduce heat. This is your poaching liquid. Season the chicken breasts generously on both sides with salt and pepper, rubbing the seasoning in, and place the chicken in simmering poaching liquid. (Remember, you are poaching, not boiling. The liquid should be kept at a simmer.) Poach chicken until cooked through, about 10 minutes, turning breasts midway through cooking period. Remove to paper towels to drain.
  • Spoon some basmati rice onto serving plate, top with a piece of chicken, and spoon olive salsa over chicken. Garnish with baby carrots.

Kosher salt
1 bulb fennel, trimmed and cut into wedges, plus 1 cup fronds
3 medium carrots, cut into chunks
1 head garlic, cloves separated and peeled
1 bunch scallions (white and light green parts), roughly chopped
1 1/2 pounds skinless, boneless chicken breasts, halved crosswise
1/2 pound green beans, trimmed and cut into small pieces
1/3 cup extra-virgin olive oil
1 1/2 tablespoons white wine vinegar
1 tablespoon dijon mustard
1/2 cup fresh parsley
1/2 cup fresh basil
Freshly ground pepper

Steps:

  • Fill a large pot halfway with hot water; add 1/2 teaspoon salt, the fennel wedges and carrots. Bring to a boil; cook until the vegetables are crisp-tender, 3 minutes. Remove with a slotted spoon. Reduce the heat to low.
  • Add the garlic, scallions, fennel fronds and chicken to the pot and gently simmer until the chicken is cooked through, 10 to 15 minutes. Fill a bowl with salted ice water. Transfer the chicken to the ice water using tongs; let sit 30 seconds, then remove to a cutting board.
  • Using a slotted spoon, transfer the garlic, scallions and fennel fronds to a blender; add 1/3 cup of the cooking liquid. Add the green beans to the pot, remove from the heat and let sit 5 minutes; drain.
  • Add the olive oil, vinegar, mustard, parsley and basil to the blender and puree; season with pepper. Cut the chicken into pieces and serve with the vegetables; drizzle with the herb sauce.

From "Pasta and Company by Request". My friend Sherrie made this for our DD's wedding and it got raves.Very elegant, it's great for large parties as it's best made several days ahead and served at room temperature. For the wedding there was enough for 125.

4 garlic cloves (medium size or bigger, or a lot more)
1 cup extra virgin olive oil
2 tablespoons green peppercorns, packed in brine, well rinsed and drained
1 tablespoon fresh lemon juice
1 teaspoon fresh lemon juice
1 teaspoon sherry wine vinegar
1 teaspoon dried herbs (I use oregano, basil and thyme)
2 lbs chicken breasts, boneless & skinless

Steps:

  • Place garlic and ½ cup of olive oil into food processor and process until garlic in finely chopped. Pour into large bowl. Whisk in the rest of the ingredients except chicken.
  • Have a cutting board and knife ready. In a large sauté pan and in a single layer, poach the chicken in enough salted water to just cover the pieces. As the pieces appear done, Remove to cutting board and slice across the grain into 1 inch pieces. If they appear a little pink, return to the water for a few seconds.
  • Place the sliced pieces immediately into the olive oil mixture and stir to coat.
  • Notes.
  • Can be made in advance, the dish gets better as it ages up to 5 days. Refrigerate to store, but serve at room temperature.
  • If you want to increase the recipe, you don't necessarily have to increase the marinade at the same rate. If you triple the chicken, you can probably double the marinade.
  • We like lots of garlic and used more.
  • The cooking time for the chicken will vary with the size breast you use, you may need 30 minutes, I like to use a thermometer and cook to 180 degrees.

4 skinless boneless chicken breast halves (1 3/4 lb total)
1 tablespoon plus 1/4 teaspoon kosher salt
5 cups water
1 3/4 cups low-sodium chicken broth (14 fl oz)
1 fresh thyme sprig
3/4 lb haricots verts or other thin green beans, trimmed
5 tablespoons extra-virgin olive oil
1 lb tomatoes, cut into 1/4-inch dice (3 cups)
1/2 cup brine-cured green and black olives such as picholine and Kalamata, pitted and chopped
1 tablespoon torn fresh oregano leaves
1/8 teaspoon black pepper

Steps:

  • Sprinkle chicken all over with 1 tablespoon salt and let stand.
  • While chicken is standing, bring water, broth, and thyme to a boil in a 4- to 6-quart heavy pot, then add beans and cook, uncovered, until crisp-tender, 3 to 6 minutes. Transfer beans with a slotted spoon to a bowl and toss with 1 tablespoon oil and salt and pepper to taste.
  • Add salted chicken to broth and cook at a bare simmer, uncovered, 6 minutes. Remove pot from heat and let stand, covered, until chicken is cooked through, about 15 minutes .
  • Transfer chicken with tongs to a cutting board and cool, about 5 minutes.
  • While chicken is cooling, stir together tomatoes, olives, oregano, pepper, and remaining 1/4 teaspoon salt and 4 tablespoons oil in a bowl.
  • Holding a knife at a 45-degree angle, cut chicken across the grain into 1-inch-thick slices.
  • Divide green beans among 4 plates, then arrange sliced chicken over beans and top with tomato olive mixture.

The pool-side restaurant at the Kea Lani Hotel on Maui serves a sauce like this with their burgers and onion rings. I loved it so much I could have eaten it by the spoonful. I brought a bottle home and attempted to replicate it. I think this is very close!
