FRESH PLUM CRUMB DESSERT

- In a large bowl, combine the plums, brown sugar, 3 tablespoons flour and cinnamon. Spoon into a greased 2-qt. baking dish. , In a small bowl, combine the sugar, baking powder, salt, mace and remaining flour. Add egg; stir with a fork until crumbly. Sprinkle over plum mixture. Drizzle with butter. , Bake at 375° for 40-45 minutes or until plums are tender and top is golden brown. Cool for 10 minutes before serving. Serve warm or at room temperature.

- In a large bowl, cream butter, shortening and sugar. Beat in eggs and extracts until blended. Beat mixture on hight speed for 3 minutes. Combine the flour and baking powder; gradually add to creamed mixture. Spread the batter into a greased 15x10x1-in. baking pan. Arrange plum and apple slices over batter., For streusel, combine the flour and brown sugar. Cut in butter until mixture resembles coarse crumbs; stir in pecans. Sprinkle over fruit. , Bake at 350° for 40-45 minutes or until lightly browned. Cool on a wire rack. For glaze, whisk confectioners' sugar and milk until smooth. Drizzle over streusel.

- Cream together butter and sugar. Beat in eggs, one at a time, until fully incorporated. In a separate bowl, toss currants, raisins and pecans with flour. Fold into butter mixture. Fold in bread, cinnamon, allspice, cloves and pumpkin pie spice. Pour into an 8x8 inch baking dish.
- Bake in preheated oven 40 minutes, until set.

A friend gave me fresh plums, and she shared this recipe. This is phenomenal. This recipe won the Taste of Home 'On the Road' Contest. It's a keeper. Serve with a scoop of ice cream if you like. It was fantastic warm from the oven with no topping in my opinion.

I have a special connection with plums. My uncle would make me homemade plum jam every summer so every time I have anything with plums in it I can't help but love it. This is one of my favorite recipes and everyone else loves it.

- Preheat the oven to 350 degrees F (175 degrees C). Liberally coat a 7x11-inch baking dish with cooking spray.
- Without peeling, slice plums and discard pits. Place plums in a bowl and toss with 1 teaspoon vanilla sugar, depending on their sweetness. Set aside.
- Sift 2/3 cup vanilla sugar, flour, butter granules, baking powder, cinnamon, and salt together in a large bowl. Stir until well blended.
- Whisk orange juice and liquid egg together in a 2-cup liquid measure until well mixed. Blend in oil. Pour into the dry ingredients and stir until thoroughly blended but not overmixed. Pour into the prepared baking dish and cover with sugared plums.
- Bake in the preheated oven until cake is golden and plums are soft and juicy, 55 to 60 minutes.
- Remove from the oven and allow to cool for 30 minutes. Slice into 12 pieces and serve.

- In a medium-sized frying pan over medium heat, add maple syrup and butter. When butter has melted, give the pan a swirl then add plum slices. Cook 5 minutes then flip slices over and add blackberries. Cook until plum slices are soft. You can leave this for up to a few hours before using. When ready to use, reheat. To make the brittle, preheat oven to 350f (180c). On a parchment-lined baking sheet add nuts and a splash of maple syrup (make sure all nuts are lightly coated) and a sprinkling of sea salt. Bake 15 - 20 minutes. Remove from oven and allow to cool. Divide yogurt between two bowls followed by the plum slices. Top with nut brittle and the juice from the plums. The Culinary Chase's Note: If removing from refrigerator, let plums come to room temperature before cooking. Enjoy!
