1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/2 cup cold butter
1 egg yolk
4 to 5 tablespoons cold water
1/2 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
3 cups sliced nectarines
2 cups sliced plums
1 tablespoon lemon juice
2 tablespoons cold butter
1 tablespoon sugar

Steps:

  • In medium bowl, mix 1 1/2 cups flour, 1 teaspoon sugar and the salt. Cut in 1/2 cup butter, using pastry blender or fork, until crumbly. Stir in egg yolk with fork. Sprinkle with water, 1 tablespoon at a time, tossing until ball of dough forms. Flatten ball to 1/2-inch thickness. Wrap in plastic wrap; refrigerate 30 minutes.
  • Heat oven to 425°F. On lightly floured surface, roll pastry into 13-inch round, about 1/8 inch thick. Place on ungreased large cookie sheet.
  • In large bowl, mix 1/2 cup sugar, 3 tablespoons flour and the cinnamon. Stir in nectarines and plums until coated. Sprinkle with lemon juice; mix. Spoon fruit mixture onto center of pastry, spreading to within 3 inches of edge. Cut 2 tablespoons butter into small pieces; sprinkle over filing. Fold edge of pastry up and over fruit mixture, pleating crust slightly as necessary. Brush edge of pastry with small amount of water; sprinkle with 1 tablespoon sugar.
  • Bake 30 to 40 minutes or until crust is golden brown and fruit is tender. Cool on cooling rack at least 1 hour before serving.

1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
1/4 pound unsalted butter, cold
2 tablespoons cold water
1/4 cup flour
5 cups nectarines and plums seeded and sliced
1 pint blueberries
1 cup sugar
Confectioners' sugar, for dusting
Creme fraiche, for garnish

Steps:

  • Mix flour, sugar and salt in a mixing bowl. Work butter into flour mixture with hands or a pastry blender until it resembles coarse meal. Add enough cold water to bring dough together into a ball, handling dough as little as possible. Wrap dough ball in plastic wrap. Chill at least 30 minutes.
  • Preheat oven to 425 degrees F.
  • Roll the dough into a free form circle, approximately 14-inches in diameter. Place on baking sheet lined with parchment paper. Sprinkle center of dough with 1/4 cup of flour. Toss nectarines, plums and blueberries with 1 cup of sugar. Spread mixture in center of dough to within 3 inches of edge. Fold dough border over the mixture, leaving a circle uncovered in the center. Bake for 30 to 35 minutes or until the dough is golden brown and fruit is tender.
  • Dust with confectioners' sugar. Serve warm or at room temperature with creme fraiche.

Whether you call it a crostata, a galette or a rustic fruit tart, this juicy, messy confection has a charm that lies with its flavors rather than its looks. It hits the same luscious, buttery, jammy notes as a fruit pie, but instead of being neatly trimmed, crimped and latticed, it features hasty folds and raggedy edges: perfectly acceptable points of style. Unlike jewel-like tarts crowned with perfect fruits, crostatas do just as well with weeping, bruised specimens, as long as you cut out any obviously funky bits. And crostatas are easy to improvise. You can use whatever fruit you have, making this a handy recipe to pull out when the result of your farmers' market shopping exuberance begins to wrinkle and fade.

1 cup (130 grams) all-purpose flour
1/3 cup (40 grams) whole-wheat flour
1/2 cup (100 grams) plus 1 tablespoon (15 grams) sugar
1/2 teaspoon (2 grams) plus a pinch fine sea salt
1 large egg
Heavy cream
6 tablespoons (85 grams) unsalted butter, cut into small pieces
3 cups sliced and pitted ripe sugar plums or mix of other plums about 1 1/2 pounds before pitting
1 1/2 tablespoons (22 grams) cornstarch
1 small bunch lemon thyme (or use 1 teaspoon lemon thyme leaves)

Steps:

  • In a food processor fitted with a steel blade, pulse together the flours, 1 tablespoon sugar and 1/2 teaspoon salt until blended. In a measuring cup, lightly beat the egg, and add just enough cream to get to 1/3 cup. Lightly whisk the egg and cream together.
  • Add the butter to the flour mixture and pulse to break up the butter. Do not over-process; you need lima-bean-size chunks of butter. Drizzle the egg mixture over the dough and pulse until it just starts to come together but is still mostly large crumbs.
  • Put the dough on the counter and knead to make one uniform piece. Flatten into a disk, wrap in plastic and chill for 2 hours or up to 3 days.
  • Heat the oven to 375 degrees. Roll the dough out to a 12-inch round (it can be ragged). Transfer to a rimmed baking sheet and chill while preparing the filling.
  • Toss together the plums, all but a tablespoon of the remaining sugar, a pinch of salt and the cornstarch. Pile fruit on the dough circle, leaving a 1 1/2-inch border. Gently fold the pastry over the fruit, pleating to hold it in (sloppy is fine). Brush pastry with cream. Sprinkle remaining sugar on top, with the thyme.
  • Bake for 30 to 40 minutes, until the crust is golden and the fruit is tender. Cool for 5 minutes, then transfer to a wire rack. Remove the thyme branches (some leaves will cling; you want this). Serve warm or at room temperature.

1/2 cup sugar
1 lemon, zested
1/2 cup unsalted butter, cut up
1 medium egg
1 yolk
2 tablespoons raspberry jam
6 plums cut into wedges
1/2 pint raspberries
1 tablespoon honey
2 tablespoons cream or milk
2 tablespoons coarse sugar

Steps:

  • For the dough: In a standing mixer with a paddle blend together flour, sugar and lemon zest. Add butter and continue mixing on low until sandy looking. Meanwhile whisk together egg and yolk. Add to flour/butter mixture and blend on low just until it comes together. Form into a ball and chill.
  • Roll dough out to a 14-inch circle and place on a parchment paper lined sheet pan. Fold over 1/2 inch of the crust to form a rustic edge. Spread jam on center of tart then fan around wedges of plums and dot with raspberries. Drizzle honey over plums, brush edge with cream and sprinkle with coarse sugar. Bake at 375 until fruit is tender and crust is cooked on the under side, about 25 to 30 minutes.
  • Note: You may use frozen raspberries if fresh is not available. Also if you can't find coarse sugar, use raw sugar.

1/2 Thai chile, seeded and minced (optional)
2 pounds Italian prune plums, halved and pitted

Steps:

  • Pulse flour, 1/2 teaspoon salt, and the granulated sugar in a food processor. Add butter, and pulse until mixture resembles coarse meal. With machine running, slowly add ice water until dough comes together. Shape into a disk. Wrap in plastic. Refrigerate for 30 minutes.
  • On a lightly floured surface, roll out dough to 1/8-inch thickness. Fit into an 8-inch pie dish, leaving a 1-inch overhang. Freeze for up to 30 minutes.

Steps:

  • Preheat oven to 400 degrees. Simmer port and 1/2 cup brown sugar in a saucepan over medium heat until reduced to 1/2 cup, about 25 minutes. Transfer to a bowl. Cover, and let cool 10 minutes.
  • On a lightly floured surface, roll out dough to 1/8-inch thickness. Fit into an 8-inch pie dish, leaving a 1-inch overhang.
  • Stir together remaining 3/4 cup brown sugar and remaining 1/2 teaspoon salt, plums, cornstarch, cinnamon, and port syrup. Transfer to pie shell. Also called a "galette" - a delicious fruit dessert that's easier than pie! Flaky pie crust gets folded over the edge of fresh juicy plums and peach slices! You don't even need to peel the fruit! Bake until the plum and peach slices get all juicy and bubbly! Let cool a bit to let the juices thicken up, then serve with some vanilla ice cream or whipped cream! It's a little rustic and a lot delicious!

1 single pie crust (homemade or store bought)
6 plums, sliced
1 peach, sliced
3-4 tablespoons sugar (depending on sweetness of fruit)
1/4 teaspoon cinnamon
1 teaspoon lemon zest
1 teaspoon lemon juice
1 tablespoon flour (if fruit is super juicy add an extra teaspoon flour)
1 egg
2 teaspoons water
2 teaspoons coarse turbinado or sparkling sugar (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • Arrange rolled-out pie crust on baking sheet lined with parchment paper. (I rolled my crust to about a 12" diameter.)
  • Stir together sliced plums and peach with sugar, cinnamon, lemon juice, lemon zest and flour.
  • Arrange fruit in center of pie crust - leaving about 1 1/2 - 2" of crust at edge to fold over. Fold crust over outside of filling, crust will overlap itself. There should be a center circle of exposed fruit.
  • Egg Wash: If using an egg wash. Whisk together egg and water, brush over crust and sprinkle with sugar.
  • Bake for 35-40 minutes. Fruit should be bubbling all over. If crust or fruit starts to brown too much, loosely cover with foil. Remove from oven and let cool at least 30-45 minutes - the filling will thicken up.

1 1/4 cups all-purpose flour, plus more for dusting
1/2 cup sugar, plus
1/4 cup raw sugar, for the outer crust prior to baking
1/4 teaspoon salt
1/2 cup cold butter, cubed and kept chilled
1 tablespoon cornstarch
1/4 teaspoon cinnamon, shopping list
1/4 teaspoon grated orange zest or 1/4 teaspoon lemon zest
1 large egg yolk, mixed with
1 tablespoon water
1/4 cup water (iced)
1 lb plum, any variety cut into 1/8th segments

Steps:

  • In food processor add the 1 1/4 cups of flour, 2 tablesppons sugar and salt - pulse to mix completly. Add butter and pulse to incorperate to resemble a course pea sized mixture. Add cold water slowly and pulse until the dough comes together. (do not over mix) Gather the dough and pat into a rounnd ball wrap in cling wrap and refridgerate for approxiamtely 30 minutes to an an hour.
  • Preheat the oven to 425 degrees position the rack to the thrid level - line the baking sheet with parchment paper. Working on a lightly floured surface roll out the dough into a disk shape to approximately 12 inches in diameter, transfer to the baking sheet and chill for another 15 to 30 minutes.
  • In a bowl combine the remaining regular sugar plus 2 tablespoons (sugar not raw sugar) with cornstartch, cinnamon and organge zest. Add the plums and toss well. Let the mixture stand stirring every 5 mins or so to release the sugars from the plums for apporximately 15 to 20 minutes or until sugar is dissolved.
  • Arrange the fruit in a circular fashion around the dough working into the center making sure to leave a good 1 1/2 inch plus around the outside edges. Fold the dough over onto the plums. Brush the outside rim of dough with the egg yolk whisked with the water - and sprinkle with the raw sugar.
  • Bake the crostata for approx 50 mins or until center fruit is bubbling and the outside crust is golden brown - let cool on baking sheet for a good 30 to 40 minutes cut in wedges and serve with ice cream or whipped cream.
  • You can fridgerate the actual dough for up to 3 days.

The filling for this Italian-style tart begins with a flavorful reduction of port wine and brown sugar; half a fresh Thai chile is added for a subtle-but entirely optional-bit of heat. Start with the best fruit you can find. Small, oval Italian prune plums are firmer and sweeter than other plums; plus, since they are a freestone fruit, their pits are not attached to the flesh and are therefore easily removed.
