10 plantains, peeled and broken into chunks
½ teaspoon salt
½ cup milk
¼ cup butter
1 tablespoon canola oil
1 pound ground beef
1 yellow onion, chopped
1 green bell pepper, chopped
½ cup tomato sauce
1 teaspoon crushed garlic
½ cube chicken bouillon
½ pound shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking dish with cooking spray.
  • Place plantains and salt into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until plantains turn a darker yellow; add 1 cup water to the pot, bring to a boil, and cook until tender, about 15 minutes. Drain.
  • Mash plantains, milk, and butter together in the pot until smooth.
  • Heat oil in a large skillet over medium heat. Cook and stir ground beef, onion, bell pepper, tomato sauce, garlic, and chicken bouillon, adding water if mixture gets too dry, in hot oil until beef is browned and cooked through, 10 to 12 minutes.
  • Spread 1/2 of the mashed plantains into the bottom of the prepared baking dish. Pour meat mixture over the plantains and top with Cheddar cheese. Spread remaining mashed plantains over the cheese.
  • Bake in the preheated oven until plantains are golden and filling is bubbling, about 10 minutes.

Cornmeal-Parmesan Crust:
1 stick cold butter
1 1/2 cups all-purpose flour plus more for rolling
1/2 cup yellow cornmeal
1/2 teaspoon sea salt
3/4 cup Parmesan cheese
Fillings (Callaloo and Plantain):
2 tablespoons olive oil, divided
2 cloves garlic, diced, divided
1 small yellow onion, chopped, divided
2 tablespoons chopped red bell pepper, divided
1 or 2 Scotch bonnet peppers, seeded and diced, divided
2 tablespoons fresh thyme leaves, divided
2 scallions, diced, divided
4 cups callaloo chiffonade
1/2 cup heavy cream, divided
2 cups cubed ripe plantain (1-inch cubes)
Salt and freshly cracked black pepper to taste
1/2 cup canned corn kernels
2 tablespoons chopped cilantro
Sauce:
1 tablespoon butter
1 tablespoon chopped scallion
1/4 cup dry white wine
1/2 cup heavy cream
1/2 cup whole milk
1 tablespoon fresh thyme leaves
2 tablespoons grated Parmesan cheese
For assembly:
8 ounces fresh mozzarella cheese, cut into 1/2-inch cubes
1/2 cup grated Parmesan cheese, divided
1/2 cup goat cheese
1 egg, beaten

Steps:

  • To make the crust:
  • Cut the chilled butter into very small pieces. Mix the flour, cornmeal, and sea salt in a food processor; add the butter, and pulse until the mixture is a sandy texture that resembles breadcrumbs. Transfer to a bowl, and add half the Parmesan cheese, mixing with a fork or knife until combined. (Reserve remaining cheese for topping the pie.) Measure out 4 tablespoons of ice-cold water, and add to the flour mixture a little at a time until the dough sticks together, mixing just long enough to create a mass. Do not overmix. Wrap the dough in plastic wrap or place in a plastic bag; hold it in the refrigerator for at least 20 minutes. Remove one hour before use to bring to room temperature.
  • To make the callaloo filling:
  • Heat 1 tablespoon olive oil in a large sauté pan over medium heat. Add half the garlic, onion, bell pepper, Scotch bonnet pepper, thyme, and scallion; cook for about 5 minutes until soft. Add the callaloo and cook down for about 8 minutes, until it turns bright green. Stir in 1/4 cup heavy cream. Remove from heat and allow to cool. Season with salt and pepper to taste.
  • To make the plantain filling:
  • Heat 1 tablespoon olive oil in another sauté pan over medium heat, and add the remaining garlic, onion, bell pepper, Scotch bonnet pepper, thyme, and scallion; sauté for about 1 minute. Add the plantain and cook, stirring occasionally, for another 5 minutes. Add the corn and cilantro, and sauté for another minute. Add 1/4 cup heavy cream, and season to taste with salt and pepper.
  • To make the sauce:
  • Melt 1 tablespoon butter in a saucepan over medium heat. Add 1 tablespoon chopped scallion. Add the white wine, and cook, stirring, until the wine is evaporated. Stir in the heavy cream and whole milk. Bring to a simmer. Allow to simmer for about 5 minutes, until the sauce is reduced. Stir in the thyme and Parmesan cheese.
  • To assemble the pot pie:
  • Preheat the oven to 375°F. On a lightly floured surface, roll out two-thirds of the pastry into a large circle, and use it to line the base and sides of an 8-inch pie dish or casserole. Layer half the plantain mixture in the bottom, then distribute half the mozzarella and a sprinkle of Parmesan on top of that. Cover with half the callaloo mixture, then half the goat cheese and more Parmesan. Repeat the layers in the same order with the remaining plantain filling, mozzarella, Parmesan, callaloo filling, goat cheese, and more Parmesan. Pour the sauce over the assembled pie.
  • On a lightly floured surface, roll out the rest of the pastry into an 8-inch round; lay it on top of the pie, trimming away any excess pastry and crimping the edges to seal well. Score an X in the middle of the top crust with a sharp knife. Brush the top of the pie with the beaten egg, scatter with the rest of the Parmesan, and chill for at least 20 minutes. Bake for 30 to 35 minutes until the pastry is golden-brown on top. Allow to cool in the pan for 10 minutes before serving.

Crust
1/2 cup canola or vegetable oil
4 large semi-ripe (yellow-black) plantains, peeled, cut on diagonal into 2- to 3-inch-long by 1/2-inch-thick ovals.
Filling
1 cup finely chopped red onion
3 garlic cloves, chopped
1 pound ground beef chuck (80% lean)
1/3 cup tomato paste
1/3 cup golden raisins, chopped
1/3 cup pimiento-stuffed green olives, coarsely chopped, plus 3 tablespoons brine from jar
2 teaspoons dried oregano
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground cumin
1 teaspoon ground allspice
1 tablespoon yellow cornmeal
8 ounces queso fresco,* crumbled, divided
4 pimiento-stuffed green olives, drained, sliced

Steps:

  • For crust:
  • Heat oil in heavy large nonstick skillet over medium heat. Working in batches, add plantain slices and cook until golden brown, about 3 minutes per side. Using slotted spoon, transfer slices to sheet of foil. Pat plantains with paper towels and cool. Reserve 2 tablespoons oil from skillet for filling.
  • Line 9-inch-diameter glass pie dish with single layer of cooled plantains; reserve remaining for garnish. Using fingers, firmly press slices together to seal any gaps. Set crust aside.
  • For filling:
  • Heat reserved 2 tablespoons oil in large nonstick skillet over medium-high heat. Add onion and garlic and sauté until onion is translucent, about 4 minutes. Add beef and sauté until brown, breaking into small pieces with back of fork, about 5 minutes. Add tomato paste, raisins, green olives, oregano, cinnamon, cumin, and allspice and simmer until most liquid evaporates and filling is thick, stirring occasionally, about 10 minutes. Season to taste with salt and pepper. Mix in cornmeal.
  • Preheat oven to 450°F. Crumble half of queso fresco over crust, then spoon in picadillo filling and press to compact. Sprinkle evenly with remaining queso fresco. Bake pie until cheese is melted and filling is heated through, about 25 minutes. Garnish center of pie with sliced olives and some plantain slices. Cool 10 minutes and serve.
  • *Queso fresco, also known as queso blanco, is available at some supermarkets and Latin markets. A mild feta cheese can be substituted.

SWEET PLANTAIN PIE

'Piononos' are a Puerto Rican dish that have sweet ripe plantains wrapped around a ground meat filling, then breaded and fried. This fills my craving for them even though it is layered and baked. I served this with basic Puerto Rican white rice and a garden salad with avocado. The meat filling can be made in bulk and frozen in batches for future use. Delicious!

2 tablespoons canola oil
1 pound ground pork
2 ounces cooked ham, cut into small dice
½ cup sofrito
12 small pitted olives, chopped
1 tablespoon capers, drained and chopped
¾ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon dried oregano
½ cup tomato sauce
5 large plantains
¼ cup butter, softened
¾ teaspoon white sugar
2 tablespoons melted butter

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Butter a baking dish.
  • Heat the canola oil in a large skillet over medium-high heat. Cook the ground pork and cooked ham in the hot oil until the pork is completely cooked and no longer pink, 7 to 10 minutes. Remove from the skillet and set aside, reserving 2 tablespoons of the drippings in the skillet.
  • Reduce the heat to medium-low. Place the skillet over the heat and add the sofrito; cook and stir the sofrito for 5 minutes. Add the olives, capers, salt, garlic powder, oregano, and tomato sauce to the sofrito; cook and stir another 5 minutes. Return the ground pork and ham to the skillet and stir; simmer for 15 minutes, stirring a few times while it cooks.
  • Bring a pot of lightly salted water to a boil. Rinse the plantains and cut off their tips, leaving the skin on; cut each plantain into 2 to 3 segments each about 3 inches long. Cook the plantains in the boiling water until tender, about 15 minutes; drain and peel. Put the peeled plantains in a mixing bowl and mash with a potato masher. Add the softened butter and sugar; mix.
  • Spread about half of the plantain mixture into the bottom of the prepared baking dish. Layer the meat mixture over the plantains. Top with the remaining plantain mixture.
  • Bake in the preheated oven for 15 minutes. Brush the top with the melted butter and continue baking until the top is browned, about 10 minutes more. Remove from oven and allow to rest 10 to 15 minutes before slicing to serve.

1 large onion, chopped
1/3 cup chopped red bell pepper
1/3 cup chopped green bell pepper
1/2 teaspoon salt

2 bay leaves
1/2 teaspoon ground achiote
1 16-ounce can whole tomatoes, drained (juice reserved) and chopped
1/2 cup drained green olives (with pimientos), halved
1/2 cup tomato sauce
1/4 cup raisins
1 1/2 tablespoons cider vinegar
6 semi-ripe plantains (yellow with some spots)
1/2 cup olive oil
2 eggs
3 tablespoons water
1/2 cup grated parmesan cheese

Steps:

  • FOR THE FILLING: Heat a large skillet over medium high heat, add beef and cook, stirring and breaking up clumps, until no pink remains, about 5 minutes. Add onion, chopped red and green bell peppers, salt, pepper, bay leaves and achiote and cook until vegetables are softened and meat is browned, 6 to 8 minutes. Add tomatoes and reserved juice, olives, tomato sauce, raisins and vinegar and simmer, stirring occasionally, until sauce is flavorful and most liquid has evaporated, about 35 minutes. Transfer filling to a bowl to cool and set aside while you prepare the plantains. Peel plantains and cut diagonally into 1/3 inch slices. In a large skillet heat 1/4 cup of the oil over medium high heat and sauté plantains in batches until golden brown, about 2 minutes on each side, adding remaining oil as needed. Transfer cooked plantains to paper towels to drain. Preheat oven to 350ºF. Lightly oil a 3 quart baking dish or casserole. In a small bowl, whisk eggs and water until blended. Pour half of egg-water mixture into baking dish and layer bottom and sides of dish with 1/3 of the plantains. Spread half of the beef filling over the plantains and sprinkle with half of the parmesan cheese. Top with half of the remaining plantains and then spread remaining beef filling, topping with remaining parmesan, and ending with remaining plantains. Pour remaining egg-water mixture over top of pie, tilting to distribute evenly. Cover baking dish with aluminum foil and bake in middle of oven until hot throughout and bubbly around edges, about 1 hour. Cool for 10 minutes before serving pie. (Pie can be inverted onto a serving platter for a nice presentation.) Yield: 6 servings

Steps:

  • Preheat oven to 350°F. Reserve 1 Tbsp. onions for garnish; set aside. Combine cream cheese and remaining onions until well blended.
  • Heat oil in large skillet on medium-high heat. Add plantains; cook 7 to 10 min. or until golden, turning frequently. Layer half of the plantains in 9-inch pie plate or baking dish sprayed with cooking spray. Spread cream cheese mixture over plantains; sprinkle with 1 cup of the shredded cheese. Top with remaining plantains and shredded cheese.
  • Bake 20 min. or until cheese is bubbly and melted. Sprinkle with reserved 1 Tbsp. onions.

½ cup white sugar
¼ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 drop red food coloring, or as needed
1 teaspoon all-purpose flour, or as needed
1 (9 inch) refrigerated pie crust
1 mango, sliced
1 pinch white sugar, or to taste

Steps:

  • Place plantains in a pot with water to cover. Bring to a boil; cook until tender, about 15 minutes. Drain, transfer to a bowl, and mash until smooth. Add 1/2 cup white sugar, vanilla extract, cinnamon, and red food coloring.
  • Preheat the oven to 400 degrees F (200 degrees C). Flour a pie plate; line the plate with the pie crust.
