8 ounces purchased pizza dough
3 ounces Gorgonzola, crumbled
3 ounces cherry tomatoes, quartered
2 teaspoons extra-virgin olive oil
1/4 cup fresh basil leaves, torn into pieces
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 475 degrees F.
  • Roll out the pizza dough to 1/4-inch thick. Using a 2 to 2 1/2-inch diameter cookie cutter, cut out 18 circles from the dough. Arrange the circles on a heavy large baking sheet. Sprinkle the Gorgonzola cheese over the circles. Top with the tomatoes, pressing them gently into the dough. Bake until the pizzettes are golden brown, about 10 minutes. Drizzle the pizzettes with oil. Sprinkle the basil over the pizzettes. Sprinkle with salt and pepper. Arrange the pizzettes on a platter and serve immediately.

3 tablespoons olive oil
3 large onions, sliced (about 4 cups)
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon herbs de Provence
1 teaspoon sugar
1 ball purchased pizza dough (about 12 to 16 ounces)
3 ounces goat cheese, crumbled (about 1/2 cup)
2 to 3 ounces prosciutto (about 5 large slices), cut into 2 by 2-inch pieces
Parsley or rosemary sprigs, for garnish

Steps:

  • In a large, heavy skillet, heat the oil over low heat. Add the onions, salt, pepper, herbs de Provence, and sugar. Stir to combine. Continue cooking over very low heat, stirring occasionally, until the onions are caramelized and dark golden brown, about 45 minutes to 1 hour.
  • Preheat the oven to 475 degrees F.
  • Roll out the pizza dough into a 1/4-inch-thick round. Using the cookie cutter, cut out 24 dough circles. Arrange the circles on a large heavy baking sheet. Place a small spoonful of the caramelized onions on each dough circle. Top with a small amount of goat cheese. Bake until golden and bubbly, about 10 minutes.
  • While still hot, top each pizzette with a piece of prosciutto. Arrange on a serving platter and garnish with sprigs of parsley or rosemary. Serve immediately.

1/3 cup finely shredded mozzarella
1/3 cup grated Parmesan
8 ounces purchased pizza dough
Extra virgin olive oil, for deep-frying

Steps:

  • Mix the mozzarella cheese and Parmesan together in a medium bowl, then set aside. Roll out the dough on a lightly floured work surface to 1/4-inch thick. Using a 2 3/4-inch-diameter cookie cutter, cut out dough rounds.
  • Add enough oil to a heavy large frying pan with 3-inch sides to come halfway up the sides of the pan. Heat the oil over medium heat until hot. Drop a scrap of dough into the oil to ensure the oil is hot enough. If the dough sizzles, then the oil is hot enough. Working in batches, add the dough rounds to the hot oil (being sure not to crowd them in the pan) and cook until golden brown, about 3 minutes per side. Using a slotted spoon, transfer the rounds to paper towels to drain the excess oil. Immediately sprinkle the cheese mixture over the hot pizzas. Serve warm.

1 (8-ounce) ball purchased pizza dough
Olive oil, for drizzling
1/4 cup mascarpone cheese, at room temperature
1/4 cup sour cream
2 tablespoons capers, rinsed, drained, coarsely chopped and dried on paper towels
Kosher salt and freshly ground black pepper
2 ounces smoked salmon, cut into 3/4-inch pieces
1/4 cup chopped fresh chives

Steps:

  • Special equipment: a 2-inch round cookie cutter
  • Put an oven rack in the center of the oven. Preheat the oven to 450 degrees F.
  • On a lightly floured work surface, roll the pizza dough into a 1/4-inch thick round. Using a 2-inch round cookie cutter, cut out 15 circles. Arrange the circles on a heavy baking sheet. Using the tines of a fork, prick the dough all over. Drizzle with olive oil and bake until golden brown, about 7 to 10 minutes. Remove from the oven and cool for 10 minutes.
  • In a small bowl, mix together the mascarpone cheese, sour cream and capers until smooth. Season with salt and pepper, to taste. Spoon about 1/2 teaspoon of the mascarpone mixture into the center of each pastry round. Top with a piece of smoked salmon and press gently.

1/3 cup whole-milk ricotta cheese
3 tablespoons olive oil, divided
2 tablespoons finely chopped fresh basil
1 teaspoon finely grated lemon peel
Pizza dough
12 ounces small red, yellow, and orange cherry tomatoes, halved

Steps:

  • Mix goat cheese, ricotta cheese, 1 tablespoon olive oil, basil, and lemon peel in small bowl. Season with salt and pepper. DO AHEAD Can be prepared 1 day ahead. Cover and chill.
  • Preheat oven to 475°F. Line 2 baking sheets with parchment. Roll out dough on lightly floured surface to 18-inch round. Using 2 1/4-inch-diameter cookie cutter, cut out 30 rounds. 1 pound pizza dough
2 tablespoons vegetable oil
1/2 cup hot fudge sauce
1/2 cup marshmallow creme
1/2 cup mini marshmallows
1/2 cup semisweet chocolate chips
4 sheets graham crackers, lightly crushed

Steps:

  • Preheat the oven to 250 degrees F. Place a large grill pan over medium-high heat.
  • Divide the pizza dough into 4 even pieces. Roll out each piece into an oval and brush with the vegetable oil. In batches of 1 or 2, grill the crusts until nice grill marks form, 2 to 3 minutes. Flip and continue cooking on the reverse side until cooked and toasted. As you go, remove the cooked crusts to a baking sheet and keep warm in the oven.
  • Spoon 2 tablespoons of the fudge sauce onto each crust and spread evenly almost to the edge. Dollop each crust with 2 tablespoons of the marshmallow creme and spread slightly. Sprinkle with the mini marshmallows, chocolate chips and crushed graham crackers. Cut into pieces and serve.

One 15-ounce ball pizza dough
All-purpose flour, for dusting
1/4 cup extra-virgin olive oil
1 cup ricotta
8 ounces fresh mozzarella, torn
1 cup cherry tomatoes, sliced or quartered
1/2 teaspoon kosher salt
1 fennel bulb, shaved, fronds reserved
1 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F. Position racks in the upper and lower thirds of the oven.
  • Divide the pizza dough into 4 equal pieces. Dust a counter with some flour and roll each piece into a 1/4-inch-thick round, dusting the dough with flour as needed to prevent sticking. Place 2 dough rounds on each of 2 rimmed baking sheets. Brush the dough with half of the olive oil. Dot each round evenly with the ricotta and torn mozzarella. Sprinkle the tomatoes over the cheeses and season with the salt. Top with the fennel and a drizzle of the remaining olive oil. Bake for 20 minutes, rotating the baking sheets halfway through.
  • After 20 minutes, remove the baking sheets from the oven and sprinkle the pizzette evenly with the Parmesan. Turn the broiler to high and place one baking sheet under the broiler until the Parmesan is melted and browned, about 3 minutes. Remove and repeat with the remaining baking sheet. Sprinkle with the fennel fronds and serve.

BEET, APPLE, AND CHEESE PIZZETTES



Beet, Apple, and Cheese Pizzettes image

Cornmeal, for dusting
1/2 medium apple, such as honey crisp or Pippin, unpeeled and cored
2 small red beets
Flour, for dusting
1 (1 pound) ball store-bought pizza dough
1 cup (4 ounces) shredded fontina or mozzarella (see Cook's Note)
2 tablespoons goat cheese, crumbled (about 2 ounces)
1 tablespoon herbes de Provence
3 tablespoons extra-virgin olive oil

Steps:

  • Preheat a gas or charcoal grill with a cover. (The pizzettes can also be baked in the oven. Place an oven rack in the upper 1/3 of the oven and preheat to 400 degrees F. Bake the pizzettes on a cornmeal-dusted baking sheet until the crust is golden, 12 to 14 minutes.)
  • Dust a baking sheet with cornmeal. Set aside. Using a mandoline slicer, slice the apples and beets into 1/16 to 1/8-inch thick slices. Set aside.
  • On a lightly floured work surface, roll out the dough into a 13-inch diameter circle. Using a 4-inch round cookie cutter, cut out 6 circles of dough and transfer to the prepared baking sheet. Divide the fontina and sprinkle on top of each circle of dough. Divide the apple and beet slices and place on top. Add the goat cheese and sprinkle with herbes de Provence. Drizzle with olive oil and place on the grill over low, indirect heat. Cover the grill and cook until the crust is crisp and golden and the cheese begins to melt, 8 to 10 minutes.
