GLUTEN FREE PEPPERONI PIZZA QUESADILLA
In my quest for gluten-free, yeast-free pizza, I'm always trying different things to get that pizza taste that I crave but can't have. One day a few months ago I was really craving pizza while I was at the grocery store, so I bought some pizza sauce, turkey pepperoni and mozarella cheese and this is what I came up with. Not quite the same thing as the pizza I remember, but a pretty close second and it's ready in a pinch! Note: I've also made this with Italian turkey sausage or just plain cheese depending on my mood.

Steps:
- Spread one half of the tortilla with the pizza sauce.
- Top with half of the cheese.
- Top with pepperoni.
- Top with remaining cheese.
- Fold top over.
- Heat a grill pan over medium high heat.
- Spray with oil.
- Place quesadilla on grill pan.
- Cook for 5 minutes and flip.
- Cook for about 2-3 more minutes or until cheese is melted.
- Cut into wedges and enjoy!

PEPPERONI PIZZA QUESADILLA

Steps:
- Place one flour tortilla on a baking sheet or pan. Place 2 tablespoon's of pizza sauce or spagetti sauce (bertolli is great) on tortilla and spread evenly over surface of tortilla.
- Place 4-6 pepperoni slices on top of sauce, then sprinkle with parmesean cheese.
- Take one slice of provolone cheese and tear it into four equally sized pieces. Place the four pieces on top of tortilla surface.
- Sprinkle mozzerella cheese (not very much) over all ingrediants.
- Place 4-6 more pepperoni slices over mozzerella, then sprinkle minced garlic over the mozzerella.
- Put second flour tortilla over top of your now tortilla pizza. Place one more whole slice of provolone directly in middle of toritlla, put just sprinkle of mozzerella cheese, then some crushed red pepper.
- Place in oven (set for 450 degrees) and wait about 10 minutes.
- Check on your quesidilla and see if it is done (the tortillas need to be a little brown on the outside to give it a crust like texture). If its done take it out.
- Cut into four triangles, and enjoy!
EXTREMELY EASY QUESADILLA PIZZA
I threw this together for lunch because I was tired of making sandwiches. It was really easy to make and my kids loved it. You can substitute different toppings or cheeses with whatever you have around the house.

- Preheat oven to 350 degrees.
- Lay 2 tortillas side by side on a greased cookie sheet.
- Mix shredded cheddar and monterey jack and cover tortillas. Then place the other two tortillas on top.
- Spread tomato sauce on.( I recommend Ragu Chunky Mushroom spaghetti sauce).
- Cover with mozzerella and toppings.
- Bake at 350 for 5 to 10 minutes. Watch these closely as ovens vary. They are done when all of the cheese is melted.

Steps:
- These are made just like any other quesadilla or grilled cheese sandwich.
- Spray the bottom of a non-stick skillet with cooking spray and preheat.
- When the pan is fairly hot place 1 Flour Tortilla in the pan.
- Fairly quickly (because you want to get everything on before the bottom starts to brown) spread on a few tablespoons of sauce.
- Then add a layer of Pepperoni (and anything else you like).
- Then top with shredded cheese.
- Top it off with the 2nd Flour Tortilla.
- Just like any other quesadilla or grilled cheese let it brown then flip it over. If all of the cooking spray was absorbed you can spray on a little more, but you usually don't need to.
- After both sides are browned and the insides are hot and melted take the "pizzas" out to cool.
- Once cooled slice in 1/4 like a pizza and wrap snugly with plastic wrap or aluminum foil.
- Tips and Ideas.
- My son is not super picky so I made these in batches and freeze and then take them out the morning of school and pop into his lunchbox. It is usually thawed and yummy by lunch time. If you freeze them you need to let the cool completely first the wrap them separately in plastic wrap and then aluminum foil to prevent ice crystals from forming.
PIZZA QUESADILLA

- Heat griddle or skillet to medium low heat. Butter one side of each tortilla. Place one tortilla, buttered side down, onto hot griddle or skillet. Sprinkle a light layer of cheese. Spoon sauce on to cheese, leaving 1/4" edge sauce free around tortilla. Place a thin layer of favorite ingredients (ours is pepperoni!). Top with remaining cheese. Place second tortilla butter side up onto cheese. Allow to cook until bottom tortilla is golden and crispy. Flip and cook second side until golden and crispy and cheese has melted. Remove from heat, slice and devour!

SPUR-OF-THE-MOMENT ESSENTIALS: PIZZA QUESADILLA
Made these yesterday as a kind of mid-day snack. Although it was raining, the temps were nice, so we just sat outside and enjoyed the weather. Since they were made individually, each of choose what we wanted in it, and then they were served with some of my homemade sauce. I am going to show you how to cook them, and then give you ideas on what to put in them. Oh, and no sauce in the quesadilla, serve that on the side. So, you ready... Let's get into the kitchen

- You will need a skillet to make these yummy pizzas. Although they could be made in an air fryer, or even baked, I have not tried those methods, yet.
- Best Cheeses for Pizza Before making any pizza, you need cheese, but not just any old cheese, it is essential to understand what makes a cheese a good cheese for pizza. It needs to have: • Good browning capability without burning. • Just the right melting structure that will melt smoothly, and still retain a certain thickness. • Stretchability that leaves those yummy strands clinging to the pizza as you pull away your slice. • Low fat content helps the cheese to achieve that perfect stretch and melt • Low moisture levels helps the cheese develop that awesome browning without burning With that said, these are some of my favorite cheeses to use when making pizzas: • Mozzarella • Provolone • Parmesan • Gouda • Goat • Gruyere • Ricotta One more thing, never buy pre-shredded cheese, they come with things like cellulose (that comes from trees). Either cut off slices of fresh cheese from a bloc or shred your own.
- Best Meats for a Pizza Lots of good stuff out there... here are a few of my favorites: Pepperoni Pepperoni is a good call on any pizza. To get rid of some the excess grease I usually put them between two paper towels and nuke them for about 20 seconds before tossing them on the pie. Soppressata Similar to pepperoni, with a deeper flavor. Sausage A good Italian sausage is best if crumbled and spread all over the pizza; although, I sometimes like it in chunks. Do not forget to precook and drain as much of the excess grease as possible. Bacon Precooked, diced, and crispy, bacon is always a good choice Prosciutto Thinly sliced and spread over the pizza like a comforting blanket... Yummy. Meatballs Placed on the pie whole or sliced up. Italian pork/beef meatballs are the way to go. Chicken Cooked and shredded chicken with some Italian spices, or how about some buffalo chicken, served with some ranch dressing as a dipping sauce... Do I have your attention?
- The Best Spices for Pizza Here are a few of the spices that I like: • oregano • basil (fresh) • dried onion flakes • garlic powder • thyme • fennel • paprika • ground black pepper
- Dipping Sauce If I am not dipping my pizza into homemade ranch dressing, then it will be a yummy tangy pizza (red) sauce. - Gather your ingredients (mise en place).
- Add a tablespoon of butter to a skillet over medium heat. While the butter is melting, brush some mayo on one side of a tortilla. Add mayo-side down, then add the cheese and other good stuff. The mayo helps in the browning process, and adds rich/deep flavor.
- Brush some mayo on one side of another tortilla, and add to the top, mayo-side up.
- When browned, about 3 - 4 minutes, flip and brown the other side. Just look at that yummy melted cheese.
- FYI: The pizza quesadilla I photographed for this recipe was the one for my housekeeper... she just likes cheese. The rest of us are carnivores.
