2 1/2 cups flour
2 1/4 teaspoons yeast
1 teaspoon salt
1 cup water
2 tablespoons cooking oil
1/2 cup pepperoni or 1/2 cup ham
1 cup onion, chopped
1/2 cup green pepper
2 medium tomatoes
1/3 cup tomato paste
1 teaspoon basil
1/2 teaspoon salt
1/2 teaspoon thyme
1 1/2 cups cheese, shredded
3 tablespoons water

Steps:

  • Mix 1 1/4 cups flour, yeast and salt in bowl.
  • Stir in warm water.
  • Beat on low speed for 1/2 minute. Scrape bowl constantly.
  • Beat 3 minutes on high speed.
  • Stir in remaining flour with a spoon.
  • Turn dough out on floured surface. Knead 6 to 8 minutes.
  • Cover dough; let rest for 10 minutes.
  • Divide into 6 parts.
  • (Dough is also excellent pizza dough.) Filling instructions: Brown and drain sausage, green pepper and onion.
  • Add chopped tomatoes and tomato paste, spices and water.
  • Cook 5 minutes.
  • Roll each portion of pizza pocket dough into rounds.
  • Spoon 1/6 of filling and 1/6 of cheese onto each pizza pocket round.
  • Fold dough in half and close with fork tines.
  • Brush with beaten egg.
  • Bake at 375 degrees for 30 to 35 minutes.

Steps:

  • Preheat oven to 400°F (200°C).
  • Cut the puff pastry into six rectangles and place on a nonstick baking tray.
  • On one rectangle, spread a tablespoon of marinara, avoiding the edges of the pastry. Top with pepperoni slices and cheese.
  • Place a rectangle of pastry on top and seal the edges with a fork. Repeat with remaining pastry rectangles.

2 teaspoons instant or active dry yeast
8 cups all-purpose flour
2 teaspoons kosher salt
2/3 cup olive oil, plus more for coating the bowl
1 tablespoon olive oil
2 cloves garlic, minced
1/2 onion, diced
8 ounces white button mushrooms, sliced
8 ounces brown button mushrooms, sliced
1 tablespoon chopped fresh thyme
1/4 cup white wine
Salt and freshly ground black pepper
Salt and freshly ground black pepper
8 ounces fresh mozzarella, thinly sliced
4 ounces goat cheese, crumbled
8 ounces Italian sausage
Olive oil, for browning sausage
1 jar marinara sauce
8 ounces fresh mozzarella, thinly sliced
4 ounces pepperoni
4 ounces Canadian bacon
1 egg, beaten

Steps:

  • For the dough: Sprinkle the yeast over 3 cups warm (not lukewarm) water. Let stand for a few minutes.
  • In a mixer, combine the flour and salt. With the mixer running on low speed (with a paddle attachment), drizzle in the olive oil until combined with the flour. Next, pour in the yeast/water mixture and mix until just combined and the dough comes together. (The dough will be sticky.) Form the dough into a ball.
  • Coat a separate mixing bowl with a light drizzle of olive oil and toss the dough in the olive oil to coat. Cover the bowl tightly with plastic wrap and set it aside for 1 hour to rise. Then put it in the fridge to chill for 2 hours or longer. (The dough is much easier to work with when very cold.)
  • For the mushroom version: Add the olive oil to a pan with the heat on medium and saute the garlic and onions for about a minute. Add the mushrooms and thyme and saute for 3 minutes. Add the white wine and reduce for a couple of minutes until most of the liquid is gone. Season with salt and pepper. Let cool to room temperature.
  • For the meat version: Crumble the Italian sausage into a skillet with some olive oil and brown until cooked through, 5 minutes. Let cool.
  • When you are ready to make the pizza pockets, take half the dough and roll it out into a large rectangle. Cut into 18 rectangles with a rectangular cutter. Put 9 of the rectangles onto a baking sheet and top them with the fillings for the meat version: some marinara sauce, mozzarella, sausage, pepperoni and Canadian bacon. Lay the other 9 rectangles on top and crimp the edges with a fork. Brush with the beaten egg. Put into the freezer to flash-freeze for 30 minutes.
  • Repeat with the other half of the dough and the fillings for the mushroom version: some mozzarella, goat cheese and the sauteed mushrooms.
  • When the pockets have been flash-frozen, transfer to ziptop bags and store in the freezer.
  • When ready to cook, place on a baking sheet and bake at 450 degrees F for 10 to 12 minutes.

1 (13.5-ounce) package of store-bought pizza crust (recommended: Pillsbury)
All-purpose flour, for rolling out pizza dough
1 egg, beaten (for egg wash)
1 1/2 cups marinara sauce, store-bought or homemade

Steps:

  • Heat the olive oil over medium-high heat in a medium-sized, heavy skillet. Add the sausage and cook until crumbled and golden, about 5 minutes. Add the arugula and cook until wilted. Turn off the heat and let cool about 10 minutes. Add the cream cheese, 1/3 cup Parmesan, salt, and pepper and stir to combine. Set aside.
  • Preheat the oven to 400 degrees F. Roll out the pizza dough on a lightly floured surface to a thin 20 by 12-inch rectangle. Cut the rectangle in half lengthwise. The cut each half into 8 equal rectangles.
  • Spoon topping onto 1 side of each of the rectangles. Using a pastry brush, brush the edges of the rectangle with egg wash. Close the rectangle of pizza dough over the topping. Use a fork to seal and crimp the edges. Place the pizza pockets onto a parchment paper-lined baking sheet. Brush the top of each pizza pocket with egg wash. Sprinkle with the remaining Parmesan. Bake until golden, about 15 to 17 minutes.
  • Meanwhile, heat the marinara sauce over low heat in a medium saucepan. Serve the hot pizza pockets with the marinara sauce alongside for dipping.

1 tbsp oil
1 large garlic clove , crushed
½ tsp dried oregano
400g can plum tomatoes , drained and crushed
1 tbsp tomato purée
2 x 320g sheets ready-rolled shortcrust pastry
250g grated mozzarella
80g pepperoni , chopped
160g pack stuffed green olives , halved
1 egg , beaten

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Heat the oil in a saucepan, add the garlic and oregano, and cook for 1 min until fragrant. Stir in the tomatoes and tomato purée, and cook over a high heat for about 5 mins until thickened.
  • Unroll the pastry, cut each sheet into quarters, and arrange on two baking trays. Spread a little of the tomato sauce over half of each quarter, keeping a border about 0.5cm around the edge. Top with the cheese, followed by the pepperoni and olives (this keeps the cheese from sticking to the top of the pastry as it melts). Brush the edges with egg and fold over the uncovered half of the pastry, pressing down the edges with a fork to seal. If you have time, leave the pockets in the fridge for at least 15 mins to firm up.
  • Before baking, make a hole in the top of the pockets and brush with a little more egg. Bake for 20 mins or until golden.

2 ¼ teaspoons yeast
1 teaspoon sugar
3 ½ cups all-purpose flour
1 teaspoon sea salt

3 ½ cups marinara sauce
2 cups shredded mozzarella cheese, plus 2 tablespoons for topping
1 cup pepperoni
1 teaspoon olive oil

Steps:

  • Preheat oven to 450ºF (230ºC), and line a sheet tray with parchment paper.
  • In a large bowl, mix the warm water, sugar, and yeast. Let sit for 5 minutes, or until the mixture becomes cloudy and slightly foamy.
  • Add the flour, salt, and 1 tablespoon of oil to the bowl with the yeast mixture and stir until combined.
  • Turn out onto a lightly floured surface and knead for 3-5 minutes.
  • Wipe the large bowl clean and lightly coat with remaining oil. Place the dough into the bowl and cover with plastic wrap and a dish towel.
  • Set in a warm place for 20 minutes, or until the dough has nearly doubled in size.
  • Once risen, turn dough out onto a lightly floured surface and stretch the dough into a 12x22-inch (30x56 cm) rectangle.
  • Layer the marinara, mozzarella, and pepperoni in the center of the rectangle, lengthwise, leaving 1-2 inches (2 ½-5 cm) on the top and bottom.
  • Slice the dough in half through the center, lengthwise.
  • Fold each piece's center edge towards the outer edge and pat down, creating a long roll-up.
  • Slice each roll into 4-5 equal pieces. Pinch the edges closed on all the pieces and place on sheet tray.
  • Brush the tops with olive oil and sprinkle with cheese.
  • Bake for 15-20 minutes, or until light golden brown.

1 pound homemade or store-bought pizza dough
1 large egg
1 tablespoon whole milk
1/4 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • In a medium bowl, combine the chicken, pepperoni, spinach, cheese and 1/2 cup of the marinara sauce, stirring until combined.
  • Sprinkle your work surface with all-purpose flour. Roll the pizza dough into a 12-by-8-inch rectangle. Cut the rectangle in half lengthwise. Cut each smaller rectangle into three 4-inch squares for a total of 6 squares.
  • Divide the chicken mixture among the dough squares, placing it in the bottom corner of each square and leaving a 1/4-inch border around the edges.

1 package of pillsbury prepared pizza crust
1/2 cup pizza sauce (as much or little as you like I use Contadina brand that comes in a Squeeze bottle!)
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1 package pre-sliced pepperoni (60 to 70 slices depending on your taste)
1 cup olives or 1 cup tomatoes (WHATEVER YOU LIKE! Or add them ALL!)

Steps:

  • Preheat oven to 375.
  • Unroll refrigerated crust onto greased cookie sheet.
  • (do not let unopened dough sit on the counter too long before you use it or it will become too sticky to work with! Keep in in the fridge while you prep everything else then open and unroll.) Pull and press the dough into an even rectangle,careful not to pull it too thin or rip it.
  • Spread your sauce long ways across the center of the dough leaving approx 1 1/2inches on each end and 3 or four inches on each side Layer cheese first, then meat/veggies, continue layering.
  • Fill as much as you like but keep in mind, the edges will need to fold up over your fillings!
  • The thinner the dough has to be streached the SHORTER your cook time will be or it will burn!
  • Once your toppings are in fold the long sides of the dough over the topping one at a time like a letter allowing a small amount to overlap.
  • Use a fork to press the short ends closed and seal the Pocket.

1/2 tablespoon olive oil
8 ounces sweet Italian sausage, casings removed
2 cloves garlic, finely chopped
8 ounces broccolini, cut into 1/2-inch pieces
6 ounces shredded mozzarella
1/2 cup whole-milk ricotta cheese
1/4 cup grated Parmesan
Zest from 1/2 lemon
Freshly ground black pepper
Crushed dried red pepper
1 pound store-bought pizza dough
All-purpose flour, for dusting
Marinara sauce, warmed, for serving

Steps:

  • Preheat the oven to 500 degrees F.
  • To a medium skillet over medium heat, add the olive oil and heat until it begins to shimmer. Then add the sausage, cooking and breaking it up into crumbles with a wooden spoon until it begins to brown, about 5 minutes. Transfer the sausage to a medium bowl with a slotted spoon and set aside to cool slightly.
  • Add the garlic to the skillet. Stir to combine, being careful not to burn it (reduce the heat if necessary). When the garlic is fragrant and just translucent, add the broccolini and toss to coat in the garlic and olive oil. Cook until just tender, about 7 minutes. Set aside to cool slightly.
  • Meanwhile, to the medium bowl with the cooked sausage, add the mozzarella, ricotta, Parmesan, lemon zest and black and crushed red pepper to taste. Stir to combine.
  • Divide the pizza dough into four equal parts and roll into balls. On a lightly floured work surface, flatten them into circles, about 1/4 inch thick. Spread them each with one-quarter of the cheese mixture, sausage and broccolini, leaving a 1-inch border around the edges. Fold them in half to make a calzone shape, pinch the edges to seal and then transfer the pizza pockets to a pizza peel, pizza stone or baking sheet, 2 inches apart. Bake until lightly browned on top, 10 minutes. Let cool slightly and serve with warm marinara sauce.

This is not a terribly cheap recipe or a terribly healthy one so it seems a bit out of character for me! But it was created when I needed something for dinner immediately and this is what I had on hand. The kids loved it!

2 pre made pie crusts (packaged)
1 -2 cup spaghetti sauce
1 -2 cup shredded mozzarella cheese
3 mushrooms, sliced (optional)
1/2 cup cooked chicken, cubed (optional)

Steps:

  • Preheat the oven to 425.
  • Unroll one of the pizza crusts onto a cutting board.
  • Cut it in half.
  • On one part of the crust put enough sauce to your liking and to cover most of the crust, leaving a ring around the sides uncovered.
  • Add cheese to taste and toppings, but not so much that you cannot close the crust.
  • Fold the crust in half and seal with a fork.
  • Repeat with the other 3 halves of crust.
  • Bake at 425 for 10-15 minutes or until the crust is flaky and done.
  • Let cool a bit and serve.

1/2 cup marinara sauce

3/4 cup finely shredded mozzarella cheese (3 oz)

Steps:

  • Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.
  • In medium bowl, stir together Bisquick mix, very warm water and olive oil until Bisquick mix is moistened. Let stand 15 minutes.
  • Knead dough slightly to form ball. Divide dough into 8 parts. Flatten and use rolling pin to roll each into circle about 1/8-inch thick. Place circles on cookie sheet.
  • Top each with 1 tablespoon marinara sauce, 2 tablespoons steak and 1 1/2 tablespoons cheese. Fold over, and pinch edges to seal.
  • Bake 15 to 20 minutes or until golden.

I really love BBQ Chicken Pizza... and I really love crescent rolls. I decided one day to combine my love of both and see what I came up with... this recipe! I use Recipe #95569 for the chicken, which works great here. Hope you like it.

1 (8 ounce) can refrigerated reduced-fat crescent rolls
1 cup cooked chicken, shredded & mixed with BBQ sauce
2 tablespoons cilantro, finely chopped
2 tablespoons red onions, finely chopped
1/2 cup mozzarella cheese, shredded
cream cheese (optional)
cooking spray

Steps:

  • Spray a cookie sheet with cooking spray. Preheat oven to 350 degrees.
  • In a small bowl, mix cilantro, onion, and mozzarella. Put aside.
  • Seperate crescent roll dough, pushing 2 triangles together to make 4 rectangles total.
  • If using cream cheese, spread a tiny bit in the center of each rectangle. (This will make it creamy and yummy and delish!).
  • Place about 1.5 tbsp shredded chicken on center of each rectangle.
  • Sprinkle cilantro, onion, and cheese mixture on top of each rectangle.
  • Fold rectangle sides up, making little pizza pockets.
  • Bake for 15 minutes.
  • When done cooking, let stand for 5 minutes.
  • Eat and enjoy - you may have to use a fork for these as they're very gooey and yummy!

1 tablespoon yeast
1 tablespoon sugar
1 cup warm water
2 tablespoons oil
1 teaspoon salt
2 3/4-3 1/4 cups flour
pepperoni, jam, etc
tomato sauce

Steps:

  • Dissolve yeast in warm water. Add sugar. Let it set for a few minutes until foamy (if you're using fast-rise yeast, you can just add the yeast with the flour and go on). Then stir in oil, salt, and flour. Knead 5 minutes. Let sit 5 minutes.
  • Divide dough into 6 pieces. Roll and pat each piece into a circle (about 6-inches across or so). Top half of each circle with filling of choice, keeping back from edges so it will seal well. Fold the other 1/2 of circle over the filling and pinch sides together or seal with a fork. Poke a couple steam vents and bake for 20 minutes at 375°F.
  • For pizza pockets, fill this with a little pizza sauce, then mushrooms, pepperoni, cheese, etc. Also, try with cream soup, chopped cooked chicken and steamed broccoli and some shredded cheese. Use your leftovers and imagination to create something special!

1 (1 pound) loaf frozen bread dough, thawed
cooking spray
1 (8 ounce) can pizza sauce
1 (6 ounce) can tomato paste with Italian herbs (such as Contadina®)
1 (7 ounce) package pepperoni (such as Hormel®)
2 cups mozzarella cheese
1 egg white
2 tablespoons water

Steps:

  • Divide bread dough into 4 balls. Place on a flat work surface; cover with plastic wrap sprayed with cooking spray. Let stand until room temperature and pliable, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Dust work surface with flour and roll out dough into 8-inch circles. Transfer to baking sheets lined with parchment paper.
  • Mix pizza sauce and tomato paste together in a bowl. Spread 2 tablespoons of the sauce mixture over each circle, leaving a 1-inch border.
