3/4 cup butter
1 cup packed brown sugar
1/2 cup sugar
1/4 cup skim milk
1 egg
1 teaspoon vanilla
1 cup whole wheat flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3 cups old fashioned oats
1 cup raisins
dried apricot
assorted dried fruits
1 (6 ounce) container yogurt (your choice on the flavor) or 1 (6 ounce) container white chocolate chips, melted

Steps:

  • Preheat oven to 325.
  • Spray 2 pizza pans, pie pans, or cookie sheets with cooking spray.
  • Beat butter, sugars, milk, egg, and vanilla until smooth.
  • In another bowl, stir together flour, cinnamon, baking soda, and salt.
  • Gradually add to butter mixture and mix well.
  • Stir in oatmeal and raisins.
  • Divide dough in half and spread into desired dishes.
  • Pat dough into 9-inch"pizzas".
  • Bake 30-40 minutes, or until firm to touch.
  • Once cooled, top with yogurt or white chocolate and decorate with dried fruit.

1 pouch Betty Crocker™ oatmeal cookie mix
1/2 cup butter, softened
1 egg
1 tablespoon water
1/3 cup old-fashioned oats
1/3 cup pecans or walnuts, chopped
1/4 cup butter, cold and cut into cubes
3 medium apples, cored and thinly sliced
1 teaspoon lemon juice
1/3 cup granulated sugar
1/2 teaspoon ground cinnamon
1 cup powdered sugar, sifted
2 to 3 tablespoons milk
1 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray large round pizza pan with cooking spray.
  • Measure out 1/3 cup of the oatmeal cookie mix, and set aside.
  • In medium bowl, beat remaining cookie mix with the butter, egg and water 2 to 3 minutes or until smooth and creamy. Drop dough onto pan, and spread so it completely covers the bottom.
  • Bake 5 to 6 minutes or until edges just begin to turn brown.
  • In medium bowl, mix reserved cookie mix, the oats and nuts. Use pastry blender to cut butter into dry ingredients until it is the size of small peas.
  • In large bowl, toss sliced apples, lemon juice, granulated sugar and cinnamon. Scatter apples on top of partially baked cookie crust, and sprinkle with oat mixture.
  • Bake 10 to 12 minutes or until topping is crisp. Cool completely.
  • Mix Icing ingredients. Drizzle on top of cooled cookie pizza. Let stand 15 minutes before serving.

1/4 cup honey
1/2 cup light brown sugar
1 egg white
1/3 cup applesauce
2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups old-fashioned oats
1/3 cup dried apricots, finely chopped
8 ounces low-fat cream cheese, softened
1/4 cup frozen apple juice concentrate, thawed
2 tablespoons grated lemon zest
4 kiwis, peeled and sliced
1/2 cup canned sliced peaches packed in light syrup, strained
1/2 cup strawberries, cut in 1/2 lengthwise
1 medium banana, cut into 1/4-inch slices

Steps:

  • Preheat oven to 350 degrees F.
  • To make the cookie crust: Cream the butter, honey, and brown sugar together in a mixing bowl.
  • Add the egg white and combine. Mix in the applesauce and vanilla.
  • Sift the flour, baking soda, salt, and cinnamon together. Add to the sugar mixture, stirring just to combine. Gently stir in the oats and apricots, just to combine.
  • Spread the batter on a 12-inch nonstick pizza pan or line a baking sheet with parchment paper into a 12-inch circle. Bake until lightly browned, 30 to 35 minutes. Let cool in the pan for 5 minutes, then carefully transfer to a wire rack and let cool completely.
  • To make the topping: In a mixing bowl, whip the cream cheese with the apple juice concentrate and lemon zest until light and creamy.
  • Spread the cream cheese mixture over the cookie, leaving a 1/2-inch border around the rim. Arrange the fruit over the top. Slice into wedges with a pizza cutter and serve.

Steps:

  • Preheat oven to 375°F Line large cookie sheet with parchment paper. On sheet of waxed paper, mix flour, baking soda, and salt until well blended.
  • In 3-quart saucepan, melt butter on low. Remove pan from heat; with wire whisk, stir in brown sugar and granulated sugar until blended. Whisk in egg and vanilla extract. With wooden spoon, stir in flour mixture, then oats, chocolate chips, and walnuts until combined.
  • Spoon batter into center of prepared cookie sheet. With spatula, spread batter to an even 8-in. round. Bake 18 minutes, or until cookie is golden brown. Let cool on cookie sheet on wire rack 15 minutes. Transfer to cutting board lined with waxed paper; cut cookie into 12 wedges and serve warm.
