FISH TACO PIZZA

I had some leftover fish that I had made for fish tacos and didn't feel like tacos again. So after throwing it on some pizza dough, this is what I came up with. My husband just gave me funny looks until he tried it. It turned out really yummy. You could probably use any other cooked and well seasoned meat instead of the fish.

1 lb haddock (or tillapia)
1/4 cup lemon juice
1 tablespoon cajun seasoning
2 teaspoons Old Bay Seasoning
2 tablespoons olive oil
salt
1 lb pizza dough
1/2 cup medium salsa (can adjust for preference)
1 1/2 cups shredded Mexican blend cheese
sour cream
guacamole
chopped onion
scallion
crushed tortilla chips

Steps:

  • Heat olive oil in a nonstick pan.
  • Add fish and top with lemon juice, cajun and old bay seasoning, and salt. Cook until both sides are well cooked.
  • Break up fish into bite size chunks.
  • Preheat oven to 400 degrees.
  • Stretch out pizza dough on a cookie sheet that has no long sides and has been lined with non stick foil.
  • Top dough with salsa, cheese, and fish.
  • Cook for 10 minute and then slide pizza onto the oven rack and cook for another 5 minute.
  • Remove from oven and top with desired toppings.

Another silly idea that worked out great. My daughter, who poo-pooed the idea, ate half the pie. It sounds weird, but think Fillet-o-fish, and give it a shot.

1 pizza crust (I use the ready-made ones from Trader Joe's)
6 ounces fried breaded frozen fish sticks
3 -4 ounces tartar sauce
4 -6 ounces tater tots (any fried potoatoes) or 4 -6 ounces waffle-shaped French fries (any fried potoatoes)
4 -8 ounces shredded cheddar cheese

Steps:

  • Preheat oven to 425.
  • Warm up the fish and potatoes per directions. I used the same skillet that I used to start the crust. I'm sure the microwave or oven would produce the same result. Place them off to the side.
  • Prepare a large skillet (mine doesn't need oil or spray) to start your crust. Turn the stove on to med-high, place your pizza dough into the skillet and spread it out to the sides to form a little edge. I used a flat plate to press it down and shape it. Fry the crust until the bottom is slightly browned, about 5 minutes, and slide it onto a preheated pizza stone or baking sheet. Top with the tartar sauce, then the fish and potatoes, and finally the cheese.
  • Bake 12-15 minutes until golden brown.

TUNA FISH PIZZA

This recipe originally used canned crab meat, but is a great favorite with children in the "tuna" flavor! Not to mention more economical! My children like it so much, I double the recipe.

Steps:

  • Mix tuna with mayo to taste and spread on halved English muffins.
  • Top with cheddar cheese and put on a cookie sheet.
  • Broil for a few minutes until cheese is melted and muffins are a bit toasted.

This is what you can make for those people "who hate fish". It's easy, quick, and will make fish eaters out of non fish eaters. Also, you can add or lessen the amount of seasonings, garlic, etc. to your taste. I like lots of seasonings, so that's why I include minced garlic, even though it isn't required. My husband, who used to have a rule of "I will not eat ANYTHING that naturally has less than two legs or more than four." now ASKS me to make this dish!

4 -6 medium lightly breaded tilapia fillets (I just used the breaded tilapia fillets that you can get at Costco. You don't have to use tilapia fi)
1 (15 ounce) can basic spaghetti sauce
2 tablespoons italian seasoning
2 tablespoons minced garlic (this is optional, I LOVE garlic)
1 cup shredded part-skim mozzarella cheese

  • Preheat oven to 425.
  • Spray 8X8 glass baking dish with Pam or other cooking spray.
  • Lay fillets on single layer in dish.
  • Spread minced garlic evenly over fillets.
  • Sprinkle Italian seasoning over fillets.
  • Layer shredded mozzarella cheese over fillets.
  • Sprinkle some more Italian seasoning over the top of the fillets (optional).
  • Bake at 425 for thirty minutes.

The Recipe#428324 is easy to make and adds to the light, refreshing taste of this pizza. You may use any pan pizza crust if you don't want to make your own. The time does not include dough rising.

1 2/3 cups warm water
2 1/2 teaspoons active dry yeast
2 teaspoons salt
1/4 cup olive oil
4 cups all-purpose flour
1 red onion, peeled and sliced
2 tablespoons rapeseed oil or 2 tablespoons canola oil
1 cup lemon-dill pesto sauce
dill havarti cheese, shredded
1/4 lb smoked salmon, pulled into small pieces by hand
2 tablespoons capers

Steps:

  • Put the water, yeast, and salt into a large bowl. Stir until yeast is dissolved.
  • Stir in olive oil.
  • Slowly mix in the flour until a dough is formed. Knead in a stand mixer or turn out and knead on a lightly floured surface for about 5 minutes.
  • Place the dough into a greased bowl, then roll the dough so the entire dough ball is coated with oil. Cover with a clean kitchen towel and allow to rise until doubled in size, about 1 hour.
  • Punch down dough and knead out bubbles. Divide the dough into thirds. You will only need 1/3 of the dough for this recipe. You may reserve the extra for another time or double/triple the topping recipe to make extra pizza.
  • Preheat oven to 450°F
  • In a large frying pan, sauté the onion with 1 tbsp oil until caramelized and a rich golden brown.
  • Grease a large baking sheet with the remaining oil. Form the dough into a fish shape if desired. To give the tail more definition, you may want to twist the tail section (like a pretzel).
  • Spread the lemon-dill pesto evenly over the dough, leaving the edge bare for the crust.
  • Spoon the shredded dill havarti over the pesto, then evenly sprinkle the onion, salmon, and capers over the pesto and cheese.
  • Bake in center rack of oven until cheese is browned and bubbling, about 20 minutes.

I love pizza. Cant you tell? Am just glad I found recipes that I can make at home. Made this a few times for my brothers. They loved it but asked "where'sthe meat?" You can make this with any kind of meat.

1 1/2 cup(s) bisquick mix
1/3 cup(s) water, boiling
2 tablespoon(s) green onions
1 package(s) cream cheese, room temperature
1/2 cup(s) sour cream
1 teaspoon(s) dill weed,dried
1/8 teaspoon(s) garlic powder
1 can(s) tuna, drained
3 cup(s) fresh veggies, mushrooms, cherry tomato halves & broccoil
1 cup(s) cheddar cheese, shredded

Steps:

  • heat the oven to 450F. In a medium bowl, stir the bisquick, water & onions until soft dough forms. Beat vigorously about 20 storkes.
  • Then in an ungreased 12 inch pizza pan. Pat the dough with floured hands. Try to forming 1/2 inch rim.
  • Then bake for about 10 mins or until light brown. Cool for 10 mins.
  • In a medium bowl stir the cream cheese, sour cream, dill weed, garlic powder & tuna until smooth. Then spread evenly over the crust. Refrigerate 1 to 2 hours or until chilled. Just before serving,topwith the veggies & cheese.
  • Cut into bite size wedges. Place any leftovers in the ice box.
