- Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-inch pizza pan.
- Stir cookie mix, egg, oil, and water together in a bowl until a soft dough forms. Place dough on the pan; spread out to look like a pizza crust.
- Bake in the preheated oven until edges are light golden brown, about 15 minutes. Let cool.
- Meanwhile, combine cream cheese and sugar in a medium bowl; beat with an electric mixer until light and fluffy. Fold in 1/2 of the whipped topping and set aside.
- Whisk milk and pudding mix together in a medium bowl until thickened.
- Spread the cream cheese mixture over the cookie crust, leaving a little of the crust showing around the edges. Spread chocolate pudding over the cream cheese mixture, leaving a little of the cream cheese layer showing.
- Spread the remaining whipped topping over the pudding, leaving a little of the pudding showing. Sprinkle chocolate chips over the whipped topping. Refrigerate until ready to serve.

CHICAGO-STYLE BUTTER AND GARLIC PIZZA CRUST
This is a recipe I got from Rachael Ray's magazine. It looks so good and I want to try it soon. She got the recipe from nine-time World Pizza champion Tony Gemignani (a pizza throwing champion). This is a deep-dish pizza baked in a 9x13 inch baking dish. This will make 1 14-inch pizza. The number of servings is just an estimate. The rising time is included in the prep time.

- In large bowl, dissolve yeast in 1/4 cup lukewarm water.
- Add 1/4 cup flour and the sugar, stir together.
- Cover with plastic wrap and let rise in a warm place for 20 minutes.
- Stir the remaining 1 cup lukewarm water, 3 cups flour, the cornmeal and salt into the yeast mixture.
- Combine the butter and garlic; mix into the dough.
- Turn out onto a lightly floured work surface and knead until soft and elastic, 10-12 minutes.
- Lightly grease a large bowl, add the dough and turn to coat.
- Cover and set in a warm place until the dough is doubled in size, 1 hour.
- Punch dough down, then knead for 2-3 minutes.
- Grease a 9x13-inch baking pan, then press in dough to cover the bottom and 2 inches up the sides; let rise for 20 minutes.
- Preheat the oven to 500 degrees.
- Top the pizza dough with your favorite toppings.
- Lower the oven to 450 degrees and bake for 30 minutes.

Inspired by a pie from Zorbaz on the Lake, one of my family's favorite spots in Minnesota, my version gets baked in a cast-iron skillet and topped with fresh jalapenos and "hot" (chile-spiked) honey.

- For the pizza: Preheat the oven to 450 degrees F.
- Grease a 12-inch cast-iron skillet with the oil. Place the pizza dough in the center and spread evenly to cover the bottom and 1 inch up the sides. Spread the peanut butter evenly over the dough followed by the marinara sauce. Sprinkle with the mozzarella followed by the pepperoni and then the jalapeno.
- Bake until the cheese melts and browns and the edges are crisp, about 20 minutes. (This is a good time to start the salad.) Remove from the oven and let sit for 5 minutes, then drizzle with hot honey before serving.
- For the salad: Whisk together the vinegar, garlic, mustard, honey, 1/2 teaspoon salt, pinch of black pepper and the oil in a medium bowl until combined. Set aside and let the garlic infuse the dressing, about 5 minutes. Remove the garlic and add the lettuce, radicchio if using, tomatoes, pepperoncini and onion; lightly toss to coat in the dressing. - Spray 4-quart slow cooker with cooking spray. In 10-inch skillet, melt butter with vegetable oil over medium heat. Add onion and garlic; cook about 5 minutes or until onion is softened.
- Stir in cardamom, garam masala, chili powder and coriander. Cook 2 minutes longer, stirring frequently.
- Stir in tomato paste and coconut milk. Heat until thoroughly blended. Pour mixture into slow cooker. Add chicken, yogurt and salt; stir to mix.

- Place pizza dough on cookie sheet or in pizza pan.
- Take peanut butter and microwave with lid off for 30-45 seconds or until peanut butter has runny consistency.
- Pour small amount of peanut butter over crust, spreading around with a knife until you achieve a light coating on your dough.
- Take strawberry preserves and put in a bowl.
- Break preserves up so they are easily spreadable.
- Spread preserves over top of peanut butter.

HAM, CHEDDAR, AND APPLE BUTTER OPEN-FACED SANDWICHES (OR PIZZA)
This is published in the October 2004 Bon Appetit as open-faced sandwiches, but I make this as a 12-inch pizza (a big, round, open-faced sandwich?). I wasn't sure whether we would like the sweetness of the apple butter, but there is enough savory/salty flavor in the rest of the recipe that it works well (I probably used more Dijon, though, and less apple butter, than called for in the recipe). In pizza format, it is good with some sauteed onion and some very well wrung out thawed frozen spinach added. I think this is a recipe that depends a lot on the types of ingredients used; since it has the apple butter, sweeter mustards and milder cheeses would probably not be as good. The relative proportions of Dijon and apple butter (and meat and cheese) can be adjusted for personal taste.

- Brush cut side of rolls with oil.
- Place rolls, cut side up, on baking sheet, and broil until rolls begin to brown around edges, about 2 minutes. For pizza, use crust of choice, brush with a light coating of oil, and prebake.

- In a small bowl or cup mix 2 teaspoons sugar in 1/2 cup warm water until completely dissolved; add in yeast mix slightly with a spoon, then cover with a tea towel and proof for 10 minutes or until foamy.
- Meanwhile place the egg in cup and cover with very warm water.
- In the stainless steel mixer bowl place 3-1/2 cups flour, 2 teaspoons salt, melted and cooled butter, Italian seasoning and Parmesan cheese.

- Remove the dough and divide in half.
- Place on a generously-floured surface; let rest 10 minutes.
- Roll out into a round circle then place onto a pizza pan.
- Spread with pizza sauce then shredded cheese then favorite toppings.
