BAKED FISH FILLETS PIQUANT

My mother found this in our local newspaper when I was little. She called it "drunk fish". It is really delicious.

1 cup white dinner wine
1 lb fish fillet (I use fillet of sole)
unseasoned breadcrumbs
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup onion, chopped
paprika

Steps:

  • Marinate fish fillets for 1 hours in wine.
  • Drain fillets on paper towels.
  • Dip both sides of fish in crumbs.
  • Arrange in greased shallow baking dish.
  • Mix Mayonnaise, onion, sour cream, and spread evenly over fish.
  • Cover with thin layer of crumbs.
  • Dust with paprika.
  • Bake at 500 degrees F for 10 minutes or until fish flakes.

2 lbs fish (Haddock or Flounder)
1 cup French dressing
1 onion, small finely chopped
2 tablespoons butter (or non stick cooking spray)
1 lemon, sliced
tartar sauce

Steps:

  • If fish is frozen, thaw according to directions. Dry fish between paper towels.
  • Dip fish into french dressing.
  • Heat butter or use non stick cooking spray and add coated fish sprinkling onions over top, cooking over medium to medium low heat for 8 minutes on each side turning only once. Serve.

1 lb fresh or thawed fish filets
1 cup cracker crumbs of your choice or dry bread crumbs
2 Tbsp. Parmesan cheese
1/4 cup butter, melted
4 tsp lemon juice
½ tsp Worcestershire sauce
½ tsp prepared mustard
½ tsp each salt and pepper

Steps:

  • Mix crumbs and cheese. Roll filets in crumb mix and place in a single layer in a 9 x 13" baking pan. Mix remaining ingredients and pour over fish. Bake at 375F for 25 minutes.

1/4 cup Sherry vinegar
Salt and freshly milled black pepper to taste
1 cup olive oil
medium shallot, finely chopped
3 tablespoons each of flat parsley, chives, chervil and tarragon, chopped
3 tablespoons chopped chives
3 tablespoons chopped chervil
3 tablespoons chopped tarragon
6 to 8 small cornichons, chopped
1 tablespoon capers, drained and chopped

Steps:

  • In a medium-size mixing bowl, whisk the vinegar with the salt and pepper. Gradually whisk in the oil. When the mixture has emulsified, fold in the remaining ingredients, cover and refrigerate.
  • Serve the sauce with the smoked fish at room temperature.
