Eggplants compliment other foods nicely as a side dish and are hearty enough to steal the show in a main course - as this recipe sure will!

2 large eggplants
1 tbsp salt
1 medium onions, diced
1 bell pepper, diced
1/2 cup diced celery
2 large cloves garlic, minced
1/4 cup olive oil
1/4 cup lemon juice, freshly squeezed
1 tbsp Worcestershire sauce
1 tbsp Lea and Perrins, green label
1/4 tsp Creole/Cajun seasoning
1/2 tsp hot pepper sauce
1 sleeve crackers, crushed for crumbs
1/4 cup grated Parmesan cheese
Salt and cayenne pepper, to taste
3 eggs beaten
1 pound lump crabmeat
1/2 pound boiled or steamed shrimp, peeled (substitute: 6 ounce can, drained)
Seasoned bread crumbs, for topping
2 tbsp butter melted

Steps:

  • Peel and dice eggplant into 1-inch cubes. Boil in enough water to cover with 1 tablespoon salt until tender, about 5 minutes. Drain well and set aside.
  • Sauté onion, bell pepper, celery, and garlic in olive oil until very tender. Fold vegetable mixture into eggplant. Add lemon juice, Worcestershire, Lea and Perrins, Creole seasoning, hot red pepper sauce, 1 cup cracker crumbs, Parmesan, salt and cayenne, then eggs. Gently fold in seafood.
  • Place mixture in greased casserole. Top with bread crumbs and melted butter. Bake at 350 degrees for 25 to 30 minutes.

This is a cajun recipe that I originally found somewhere on the 'net but have made some modifications. I serve this as a side-dish, but it could probably be used as a main dish as well. Recipe is very spicy, feel free to adjust to your own preference.

4 -8 ounces butter (as much as needed for sauteing vegetables)
3 large onions, chopped fine
2 celery ribs, chopped fine
2 medium bell peppers, chopped fine
4 medium eggplants
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons white pepper
1 1/2 teaspoons black pepper
1 1/2 teaspoons salt
4 -6 dashes Tabasco sauce (or to taste)
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
16 ounces canned crabmeat
1 cup chopped green onion
1 cup chopped parsley
grated parmesan cheese, as needed for topping
breadcrumbs, as needed for topping

Steps:

  • Melt the butter in a Dutch oven or other large heavy pot.
  • Add onions, peppers and celery.
  • Cook until the vegetables are very soft, stirring occasionally, about 30 minutes.
  • Meanwhile, peel the eggplants and cut into 1-inch cubes.
  • Place them in a pot and cover with water.
  • Bring to boil and boil slowly for a few minutes, just until they are tender.
  • Drain well and puree until smooth in a food processor or blender.
  • Add the eggplant puree, seasonings, herbs and the juice from the canned crab (if any) to the vegetable mixture, return to simmer and cook over medium heat for 10 minutes, stirring occasionally.
  • Add the crab meat (picked over of course to remove any shell) and cook just long enough to heat through.
  • Remove from heat.
  • Stir in the green onions and the parsley.
  • Spoon the hot mixture into a casserole or individual ramekins, if desired.
  • Sprinkle generously with Parmesan cheese and bread crumbs.
  • Place under broiler just long enough for cheese to melt, and serve immediately.

EGGPLANT DRESSING

A recipe my family grew up on that our mom made, simply ingredients and cooking. Great as a meal with sliced tomatoes or a side dish. **My mom would also slice bell peppers in half, remove seeds and rub a bit of oil on outside then mound this eggplant dressing inside, place stuffed bell pepper in 9 x 13 dish with a just enough water to cover bottom and bake at 350 for 25-30 minutes to be served as a side dish. ***You can also just cook your eggplant down with the seasonings S,P Garlic Powder, onion and bell pepper. Cool then freeze in smaller packages with a good seal. When ready to use take out defrost add cooked meat and rice and heat thoroughly.

2 eggplants
1 1/2 lbs hamburger meat
1 medium diced onion
1 medium diced bell pepper
1 teaspoon garlic powder
1 teaspoon salt and black pepper
1 cup rice

Steps:

  • 1. Cook ground hamburger meat-use a 92/8 mixture drain any fat, add garlic powder, S & P, and chopped bell pepper, and onion cook on low till onion wilted.
  • 2. Peel eggplant, slice and cut each slice into 1" cubes.
  • 3. Add eggplant to meat mixture, turn up heat, put lid on so eggplant will steam. Each time you check mash down eggplant with back of spoon. Continue until eggplant is tender and mixes in with meat mixture. This takes about 45 minutes.
  • 4. Cook rice according to package directions.
  • 5. Stir in cooked rice to mixture and heat so its hot through and through.
  • * Cooking time for recipe maybe a little bit more.

1 pound raw shrimp
3/4 pound butter
3 medium-large onions, finely chopped
2 green peppers, finely chopped
1 stalk celery, finely chopped
4 large eggplants
3/4 teaspoon cayenne
3/4 teaspoon white pepper
3/4 teaspoon black pepper
Salt to taste
3 dashes hot pepper sauce
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/2 pound crab meat
1/4 cup each chopped green onion and parsley
1 cup oil, approximately

Steps:

  • Peel shrimp; set aside. Cover shells with 2 cups water; boil to reduce to 1 cup. Strain; set stock aside.
  • Heat butter in large skillet; add onion, peppers and celery. Cook slowly, 15 minutes, until mixture is very soft.
  • Peel and cut two eggplants into 3/4-inch cubes; place in saucepan with water to cover half way up eggplant. Cook until eggplant is tender, about 7 minutes; drain to remove as much water as possible; puree.
  • Add eggplant, stock and seasonings to sauteed vegetables; cook over medium-low heat about 20 minutes.
  • Add shrimp; cook 7 to 10 minutes over moderately high heat until shrimp are pink. Add crab meat; heat through.
  • Stir in green onion and parsley.
  • Peel and slice remaining eggplant into 12 1/2-inch-thick slices. Brown in hot oil. Repeat until all slices are done. Drain.
  • Serve dressing over slices of fried eggplant.

4 cups peeled cubed eggplants
1/3 cup milk
10 3/4 ounces cream of mushroom soup, undiluted (1 can)
1/2 cup chopped onion
1 1/4 cups herb seasoned stuffing mix, divided
1/4 teaspoon salt
1 tablespoon butter, melted

Steps:

  • Cook eggplant in boiling salted water 6-8 minutes or until tender; drain well. Combine eggplant, milk, soup, egg, onion, 3/4 cup stuffing mix, and salt, stirring well. Spoon into a lightly greased 1 quart casserole. Combine remaining 1/2 cup stuffing mix and butter; sprinkle over eggplant mixture. Bake at 350 degrees for 20-25 minutes.

QUICK AND EASY CRABMEAT DRESSING

This is great for a dressing, stuffing, as a bed for Shrimp Scampi, or by itself. You can buy those little crab shells to stuff and broil, mold it into a loaf pan and bake, or use it to dress any main meat entree. This is a recipe from my wife's mother's collection.

6 ounces seasoned stuffing mix, instant, cornbread flavored
8 ounces crabmeat, imitation-fresh whichever you prefer
1 garlic clove, fresh, sliced paper thin
1 large onion, diced
1/3 cup celery, chopped
1 tablespoon dried parsley
1 dash paprika
1/2 teaspoon garlic powder
2 tablespoons butter
1/2 cup parmesan cheese
1 1/2 cups water, whatever is called for in the stuffing directions
1/4 cup margarine, whatever is called for in the stuffing directions
1 dash cooking spray

Steps:

  • Sauté garlic, onions, celery, and parsley. Set aside.
  • Shred the crab meat.
  • Prepare the stuffing mix as per instructions on the box but DO NOT COOK. In other words, just mix the water, butter, and stuffing mix together, without cooking it.
  • Stir into the crab meat, add garlic powder, and mix until blended.
  • Spoon into loaf pan treated with no-stick cooking spray (DO NOT PRESS).
  • Brush lightly with butter, sprinkle with paprika, and bake covered in a 375°F oven for 45 minutes.
  • Remove covering, add parmesan cheese, and continue to bake at 400°F for 10-15 minutes to allow the top to brown.
  • Serve as a side dish, the main dish, or a bed for Shrimp Scampi.

Shrimp and eggplant dressing is a very popular dish in New Orleans. This particular recipe is from Nola Cuisine, an excellent New Orleans cooking blog. Prep time doesn't include time to peel and devein shrimp, as some shell-on shrimp already comes split and deveined.

1 lb wild caught american gulf shrimp, peeled, deveined, and chopped (Reserve the shells)
1 bay leaf
1 bunch fresh thyme, tied with butchers twine
water, enough to cover the eggplant by 1 inch
1 splash liquid crab boil
4 -5 small eggplants, peeled, enough to yield about 2 1/2-3 Cups Cooked
3 tablespoons unsalted butter
1 large brown onion, finely diced
1 medium green bell pepper, finely diced
4 garlic cloves, minced
2 green onions, sliced thin, keep the green and white parts separate
1 egg, beaten
2 tablespoons fresh thyme, chopped
1 tablespoon Italian parsley, chopped
1 tablespoon fresh basil, chopped
1 cup breadcrumbs (preferably homemade from leftover French bread)
1 cup panko breadcrumbs
1/4 cup parmesan cheese, grated
3 tablespoons butter, melted
1 tablespoon Italian parsley, chopped
1 pinch of salt and a few grinds black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring the water to boil in a Dutch Oven. Add the Bay Leaf, bundled Thyme, reserved Shrimp shells, crab boil, any trim from the diced onion, and a handful of Kosher salt. Boil for about 15-20 minutes, skim off the scum from the shrimp shells.
  • Add the Eggplant and reduce to a simmer. Cook until tender about 20 minutes.
  • In the meantime, melt the 3 Tbsp butter in a saute pan. Add the onion, bell pepper, garlic, and a pinch of salt, saute until the onions are translucent, add the chopped Thyme and the chopped shrimp, cook until the shrimp are just cooked through; set aside to cool.
  • When the eggplant is very tender remove with tongs to a colander to cool. When cool, squeeze some of the liquid from it and chop.
  • In a large bowl combine the eggplant, onion & pepper mixture, egg, fresh basil, and parsley, mix ingredients together well. Add the bread crumbs a little at a time until the right consistency is achieved; it should be not too wet, not too dry. Check the seasoning; season to taste with Kosher salt, Cayenne, and black pepper.
  • Add the mixture to a buttered gratin or baking dish. Mix together the topping ingredients, top the shrimp and eggplant dressing with it.
  • Bake in the preheated oven until bubbly and the topping is a nice golden brown.

2 tablespoons fresh lime juice, or to taste
1/2 pound jumbo lump crab meat

Garnish: about 40 fresh coriander leaves

Steps:

  • Peel jícama and cut crosswise into 1/4-inch-thick rounds. Cut each round into 6 or 8 wedges. In a sealable plastic bag toss wedges with 1 tablespoon lime juice to coat. Wedges may be made 1 day ahead and chilled in bag.
  • Pick over crab meat, removing cartilage, and shred meat. Crab meat may be prepared 1 day ahead and chilled, covered. In a bowl combine crab meat, salsa, remaining tablespoon lime juice, and salt to taste.
  • Top each jícama wedge with 1 tablespoon crab mixture and a coriander leaf.

Steps:

  • Heat oven to 350°. Coat 13x9-inch pan with non-stick spray.
  • In large pan melt butter, add onion, celery and pepper. Cook 3-4 minutes. Stir in soup, sour cream, mayonnaise and Worcestershire sauce.
  • Fold in crab meat and shrimp. Cook till heated through, stirring. remove from heat and set aside.

3 eggplants, medium size, whole
1/2 lb medium shrimp, peeled and deveined
2 medium onions, finely chopped
1 stalk celery, finely chopped
2 bell peppers, chopped
salt and pepper, to taste
1/2 cup breadcrumbs
1/2 lb lump crabmeat
1/4 lb butter
1/4 cup parsley, chopped
3 garlic cloves, finely chopped
1 teaspoon paprika
2 teaspoons olive oil

Steps:

  • Place whole eggplants in a large pot with enough water to cover the whole eggplants, and simmer until they are soft.
  • When soft, remove from heat and cool in cool water.
  • When cool, cut the eggplants in half and scrape the eggplant out.
  • Be careful not to tear the skin.
  • Sauté the onions, celery and bell peppers in butter until soft.
  • Add the eggplant meat that you scraped out and cook until all the liquid has evaporated.
  • Add shrimp and cook for about 5 minutes.
  • Remove from heat and fold in crab meat, parsley and enough breadcrumbs to give the mixture consistency.
  • Fill the empty shells with the mixture and lightly spread breadcrumbs on top.
  • Sprinkle the olive oil on top of each eggplant half and sprinkle with paprika.
  • Bake in a 350 degree F oven for about 25 minutes.
