ALREADY FOR MEATLOAF PINWHEEL
As a single working mother of three growing boys, I was always looking for good "make ahead" recipes.. I found this one and it was a winner. A lot of times, I would make it the night before and call the boys to "slice and bake" so it would be ready when I got home..The recipe calls for CheezWhiz for the cheese spread. Recipe prep time does not include rice preparation or chill time.(you can use leftover rice)

Steps:
- Combine meat, crumbs, 1/2 of the CheezWhiz, egg and salt and mix lightly.
- Pat out meat mix to cover a 12 x 10 inch rectangle of foil.
- Combine remaining CheezWhiz, parsley and rice.
- Spread rice mixture over meat.
- Roll up meat, starting at narrow end.
- Wrap securely and refrigerate several hours.
- When ready to cook, slice into 8 slices.
- Place slices on cookie sheet and bake at 350 degrees for 30-35 minutes or until meat is done.

This is one of my favorite meatloaf recipes. It's great cold and in sandwiches.

- Preheat oven to 350 degrees F (175 degrees C).
- Make the filling: Coarsely chop the spinach, and place in a large bowl; set aside. Heat butter in a large heavy skillet over medium heat. Saute mushrooms and onion until onion is translucent. Transfer mushroom mixture to bowl with spinach. Mix in 1/2 cup bread crumbs, 1 egg and parsley. Season with salt, pepper and nutmeg.
- In a large bowl, combine ground beef, ground pork, Cheddar cheese, 1/2 cup bread crumbs, 1 egg. Season with Worcestershire sauce, salt and pepper. Place meat mixture between two sheets of waxed paper, and roll into a rectangle approximately 18x8 inches. Remove top sheet. Spread spinach mixture evenly over meat, leaving a 1/2 inch border. Roll up meat from the short end in jelly-roll style, lifting and removing paper as you go. Place loaf into an 8x4 inch loaf pan.
- Bake in preheated oven for about 1 hour, or until browned and juices run clear. Serve hot or cold.
