SIMPLE ANASAZI BEANS
The Anasazi bean is an ancient heirloom bean. It has a deep reddish-brown and white spotted appearance. When cooked, the bean has a mildly sweet flavor and it turns pink.

Steps:
- Sort and wash Anasazi Beans. Place the beans in a large bowl and pour cold water on them until they are completely soaked. Let it sit for 8 hours. Drain the water, and rinse the beans.
- In a large pot, add soaked beans, and pour enough water so that the beans are about 1/2,-1 inch below the water surface.
- Place the pot on medium heat and bring it to a boil.
- Once it starts to boil, reduce the heat and let it simmer for 45 minutes.
- Add onion, bell pepper, celery, garlic, carrots, nutritional yeast flakes, vegan bouillon, oregano, onion powder, garlic powder, paprika and salt.
- Cook for five more minutes or until you get the consistency you like. If it is still too watery, cook for longer.

- Put the beans in a large bowl, cover with cold water and let soak overnight.
- Drain and rinse the beans, then put them in a large pot. Cover the beans with water and add the chili powder, cumin, paprika, cayenne, bacon, garlic, bay leaves, onion, bell pepper and some salt and pepper. Bring to a boil, then reduce the heat to low and cook until the beans are tender, 2 to 3 1/2 hours.
HOW TO MAKE A SIMPLE POT OF ANASAZI BEANS
A piece of ham, a ham hock, or bacon can be added to the beans, but they are delicious without meat. If the beans need thickening, mash a cupful and put them back in the saucepan. To make frijoles refritos (refried beans), mash all of the beans by hand or in a processor and fry them in vegetable oil in small batches. - Cover them with water and cook them until they are tender, adding more water if necessary.
- While the beans are cooking, saute chopped onions, minced garlic cloves, and jalapenos in olive oil. Add the vegetable mixture to the beans while they are cooking. Season with cumin, salt, and pepper.

Steps:
- Soak the beans overnight in water to cover.
- In the morning rinse the beans with cold water and place in a large pot with fresh water to cover.
- Stir in the salt, cover and simmer slowly 2 to 2 1/2 hours, until the beans are tender.
- Add water when necessary and stir occasionally to prevent the beans from burning.
- Add hominy and simmer, covered, 1 hour, stirring occasionally.
- The hominy and beans should be very soft and moist, but not too watery.
- While the beans and hominy are cooking, roast, peel, seed and dice the chiles.
- Sprinkle on top of the cooked beans for garnish.
PINTO OR ANASAZI BEANS
There's nothing like a good ole pot of red beans with some yummy hot cornbread. NOTE: to reduce the fat, omit ham hock or salt pork/bacon.

- 1. I found these recently at a local store and decided to try them, they are similar in taste to pinto but with a milder "bean" flavor. They are really outstanding and my new go to bean!
- 2. NOTE: This is a crockpot recipe. These can also be made on the stove top, reduce cooking time to about 2-3 hrs. over a med. simmer.Ham hocks can usually be found in the section of your store where the whole hams are sold. If not using ham hocks, salt pork or bacon, but the ham hocks give you more flavor!
- 3. Rinse beans and pick out any bad ones. Using "Casserole" brand is recommended. Place all ingredients in crockpot. Fill crockpot 2/3 full of water. Turn on low and cook overnight. May need to reseason with a tsp of cumin, chili pwd. or salt after cooking.

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS
Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.
