2 (15.5 ounce) cans pinto beans, drained
1 ½ cups chopped, cooked chicken
1 (11 ounce) can Mexican-style corn (such as Green Giant®), drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), undrained
1 (8 ounce) can tomato sauce
1 teaspoon dried minced onion
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon salt
ground black pepper to taste
1 ½ cups corn chips (such as Fritos®)
2 cups shredded Colby-Jack cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Spray a large casserole dish with cooking spray.
  • Combine pinto beans, chicken, corn, diced tomatoes and green chiles, tomato sauce, onion, cumin, garlic powder, salt, and pepper in a large bowl.
  • Spread corn chips on the bottom of the prepared casserole dish and evenly distribute the bean mixture over top. Sprinkle with Colby-Jack cheese.
  • Bake in the preheated oven until cheese has melted and casserole is heated through, about 25 minutes. Serve immediately.

1 package (9 ounces) tortilla chips
2 cans (15 ounces each) pinto beans, rinsed and drained
1 can (15 ounces) whole kernel corn, drained
1 can (14-1/2 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 envelope taco seasoning
2 cups shredded cheddar cheese
Shredded lettuce, sour cream and salsa, optional

Steps:

  • Crush tortilla chips and sprinkle into a greased 13x9-in. baking dish. In a large bowl, combine the beans, corn, tomatoes, tomato sauce and taco seasoning. Pour over chips. Sprinkle with cheese. , Bake, uncovered, at 350° for 18-25 minutes or until heated through. Serve with lettuce, sour cream and salsa if desired.

1/2 cup chopped onion
1/2 cup chopped green bell pepper
24 ounces cooked pinto beans, canned to save time
15 ounces stewed tomatoes, canned
6 ounces part-skim mozzarella cheese
1 cup self-rising cornmeal, plus
2 teaspoons self-rising cornmeal
1 cup skim milk

Steps:

  • Saute beef, onion, and pepper.
  • Place in a sprayed casserole dish.
  • Layer next 3 ingredients.
  • Mix milk and corn meal together.
  • Pour on top of other ingredients.
  • Bake at 400 degrees for 20 to 25 minutes until golden brown.

1 tablespoon bacon grease
1 (9 ounce) package Mexican-style chorizo
½ cup chopped onion
¼ cup chopped bell pepper
2 cloves garlic, minced
1 (29 ounce) can pinto beans, drained
1 cup tomatillo and Hatch chile salsa verde (such as San Antonio Farms®)
salt to taste
8 ounces canned roasted Hatch green chile peppers, diced
1 cup shredded Jack cheese with jalapenos

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  • Melt bacon grease in a large skillet over medium heat. Add chorizo, onion, and bell pepper; cook and stir until browned and crumbly, 7 to 8 minutes. Add garlic and cook until fragrant, about 1 minute. Add pinto beans and salsa verde; mash most of the beans. Season with salt.
  • Spread 1/2 of the bean mixture in the bottom of the prepared casserole. Layer with 1/2 of the chile peppers and 1/2 of the cheese. Repeat layers once. Cover with foil.
  • Bake in the preheated oven until thoroughly heated, about 30 minutes. Remove foil and turn on the broiler. Broil until cheese starts to turn golden brown, 2 to 3 minutes.

1 can (15 ounces) Spanish rice
1 pound lean ground beef (90% lean), cooked
1 cup shredded cheddar cheese, divided
Tortilla chips, optional

1 lb extra lean ground beef
30 ounces canned pinto beans
15 ounces diced tomatoes, canned, drained
15 ounces whole kernel corn, drained
15 ounces cream of chicken soup
1/2 cup chopped onion
6 ounces shredded cheddar cheese
1 1/2 cups self-rising cornmeal
1/4 cup self-rising flour
1 1/4 cups skim milk

Steps:

  • Saute beef and onion together, drain well.
  • Combine beef, onion,beans, tomatoes, corn, cheese, and cream of chicken.
  • Stir well and then place into a large baking dish.
  • Mix milk and corn meal together (make sure batter isn't too thin) and spread on top of ingredients.
  • Bake at 400 degrees for 30 or minutes until golden brown.

Found this in a cooking mag and had to try it. We love it and the only side I fix to go with it is wilted lettuce and onions. Gave it to a friend and she says her family has asked for it so much she is ready to shoot me. I like using the Mexican Corn Bread Mix for this recipe.

1 lb roll sausage
1/2 c chopped green pepper
1/2 c chopped green onion
4 can(s) pinto beans
1 can(s) diced tomatoes with chilies (or not)
2 c four cheese mexican shreds
1 pkg cornbread mix

Steps:

  • 1. Preheat oven following directions on the cornbread mix. In a large skillet brown sausage, breaking up with a fork, as it cooks. Add green pepper and onion. Cook until done. Drain. Return to skillet. Add the beans and tomatoes.
  • 2. Pour into a 9 x 13 inch baking dish. Cover the mixture with 1 and 1/2 cups of the cheese. Prepare the corn bread mix according to the package. Spread evenly over the cheese. Sprinkle top with the rest of the cheese. Bake following directions on the cornbread mix package until done and the top is lightly brown.

1 lb. ground beef
1 can pinto beans
1 can tomato sauce
1 pkg. Jiffy Cornbread Mix
1/2 small onion
1 cup shredded cheese

Steps:

  • Chop up 1/2 onion and place in skillet with ground beef and brown. Drain, then place in the bottom of a casserole dish. Pour pinto beans on top of the ground beef, then the can of tomato sauce on top of the pintos. Mix up the Jiffy cornbread according to instructions then pour mixture on top. Bake at 425コ until cornbread is done on top of casserole. Sprinkle shredded cheese on top! Yummy! You can also substitute chili beans for the pintos and rotel for the tomato sauce to spice it up a bit. I always blend my rotel in the blender before adding it to the casserole. If you have a big family, just double the recipe.

8 oz tomato sauce
2 cups Kraft Grated Medium or Sharp Cheese
1 box corn muffin mix
1 egg
1/3 cup milk

Steps:

  • Brown hamburger, onion, and green pepper. Drain. Mix in casserole dish the following:
  • browned hamburger, onion, green pepper, pinto beans, tomato sauce, and grated cheese.
  • Mix corn muffin mix with egg and milk. Blend together. Spread on top of mixture in casserole dish.
  • Bake at 400 degrees F for 30 to 40 minutes until bread on top is golden brown.
