5-Minute Pink Salad image

A super quick and easy Pink Salad made with cherry and pineapple. This salad is such a delicious treat that the whole family will love.

1 (14 ounce) can sweetened condensed milk (I used fat free, but any type will work)
1 (21 ounce) can cherry pie filling
1 (20 ounce) can crushed pineapple, well drained
1 (8 ounce) container frozen whipped topping (I used Sugar Free Cool Whip, but any similar variety will work), thawed

Steps:

  • Make sure that your whipped topping is completely thawed (by placing it in the refrigerator overnight). Also make sure that your pineapple is very well drained. I like to put the pineapple in a mesh colander and then squeeze it dry with a towel.
  • In a large bowl, stir together condensed milk, cherry pie filling, and drained crushed pineapple. Gently fold in the whipped topping just until combined.
  • Cover and refrigerate until ready to serve.

1 (1/3 ounce) box jell-o sugar-free strawberry gelatin (4 serving size)
4 ounces Cool Whip Lite
1 (20 ounce) can unsweetened crushed canned pineapple, drained

  • In food processor, blend cottage cheese til smooth.
  • Sprinkle dry Jello over top and blend with Cool Whip and pineapple.
  • Refrigerate several hours for Jello to dissolve.

This perfectly pink fruit and cool whip concoction is more of a dessert than a salad, but oh so good. SO EASY! Similar recipes are posted, but none with cream cheese,which I think gives it a great rich flavor. It makes a ton, but keeps for at least a week in the fridge. You could always scale down, and could be easily made with fat free substitutions.

My grandmother made this dessert salad every Christmas I can remember. The original called for making Dream Whip, and this version has been updated to use Cool Whip. She always just made this from eyeing and tasting, so use your judgement as you add ingredients. Pecan pieces can be used instead of halves, if desired.

1 (10 ounce) jar maraschino cherries
1 (8 ounce) can crushed pineapple, drained
8 ounces cream cheese, softened
2 ounces pecan halves
2 (8 ounce) containers Cool Whip
1 (10 1/2 ounce) package colored miniature marshmallows

Steps:

  • Drain the maraschino cherries, reserving the juice. Set the juice aside. Chop the cherries in half. Set aside.
  • Pour in some of cherry juice to the cream cheese and beat with a mixer. Keep adding juice until it reaches desired taste. (Use a bit more than you think is necessary, because the taste will be mellowed out a bit with the Cool Whip.).
  • Stir in the cherry halves, pineapple, and pecans.
  • Fold in the Cool Whip until mixed, and fold in the marshmallows until everything is well combined.
  • Cover with plastic wrap and chill for at least an hour before serving.
