This is a tasty vegetarian version of a Chinese classic. You won't even be able to tell it isn't chicken! Seitan is made from wheat gluten and is very high in protein and low in fat. I recommend using a chicken-style variety.

2 teaspoons canola oil
1 pound chicken style seitan
2 cloves garlic, minced
1 large bell pepper, cut in strips
1 large onion, chopped
1 (20 ounce) can pineapple chunks with juice
1 cup pineapple juice
⅓ cup brown sugar
¼ cup cider vinegar
2 ½ tablespoons soy sauce
2 tablespoons cornstarch

Steps:

  • Heat the oil in a large skillet over medium heat. Add the chicken style seitan, and cook until browned, stirring occasionally. Add the bell pepper, onion, and garlic. Cook and stir until tender, but still crisp.
  • Stir in the pineapple juice, brown sugar, vinegar, soy sauce and cornstarch. Reduce heat to low; cook and stir until thickened. Mix in the pineapple chunks just before serving.

A very flavorful, simple to throw together meal. Makes the house smell amazing! This is based on a beef recipe we used to make all the time before going vegan. It is absolutely just as tasty with seitan.

1 lb seitan, chunked
6 carrots, chopped
1 large onion, chopped
1/3 cup brown sugar, packed
3 tablespoons soy sauce
1 large garlic clove, minced
1/4 teaspoon red pepper flakes (or more, to taste)
1 (20 ounce) can pineapple chunks, drained, juice reserved
3 tablespoons cornstarch
3 tablespoons cold water
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped

Steps:

  • Place seitan, carrots and onion in crockpot.
  • In a small bowl, mix together brown sugar, soy sauce, garlic clove, red pepper flakes and pineapple juice until sugar is dissolved. Pour into crockpot.
  • Cook on low 8 hours.
  • 30 minutes before serving, dissolve the cornstarch in the water and add to crockpot, along with bell peppers and pineapple chunks.
  • Turn crockpot up to high, and cook for 30 minutes, until peppers are crisp-tender.
  • Serve over rice.

2 cups pineapple juice, divided
3 tablespoons cornstarch
1 cup white sugar
¾ cup ketchup, or more to taste
⅔ cup apple cider vinegar
2 tablespoons soy sauce, or more to taste
2 tablespoons crushed pineapple, or more to taste
1 teaspoon garlic powder

Steps:

  • Whisk 1/4 cup pineapple juice and cornstarch together in a small bowl until smooth.
  • Combine cornstarch mixture, remaining 1 3/4 cup pineapple juice, sugar, ketchup, vinegar, soy sauce, crushed pineapple, and garlic powder in a large pot over high heat. Cook, stirring frequently, until sauce comes to a gentle boil. Reduce heat and continue to simmer until sauce is clear and reaches desired consistency, 15 to 25 minutes.

2 (14 ounce) cans pineapple tidbits (drained and reserve the juice from both cans)
3 tablespoons cornstarch
1 -2 tablespoon vegetable oil
2 garlic cloves (minced, or to taste)
1 pinch cayenne pepper
1/2 cup ketchup
1/2 cup brown sugar
1/3 cup white vinegar
2 tablespoons soy sauce
black pepper (to taste) (optional)

Steps:

  • Drain both cans of pineapple over a bowl.
  • Add/whisk in cornstarch until smooth and combined (no need to measure out the juice) set aside.
  • In a small saucepan heat oil over medium-low heat; add in garlic and a small pinch cayenne pepper; stir for 2 minutes.
  • Add in ketchup, brown sugar, vinegar and soy sauce; cook stirring until simmering.
  • Add in the juice/cornstarch mixture; bring to a boil, stirring or whisking constantly until thickened.
  • Reduce heat to low and simmer for 3-4 minutes.
  • Mix in the pineapple tidbits.
  • Season with black pepper to taste if desired.

1 onion, cut into 8 wedges
1 garlic clove
1 teaspoon grated gingerroot
1 (20 ounce) can unsweetened pineapple chunks, in juice
1 green bell pepper, cut into 1 inch pieces
1 red bell pepper, cut into 1 inch pieces
1/3 cup brown sugar
1/4 cup rice wine vinegar
1/4 cup ketchup
1 tablespoon light soy sauce
24 -36 pieces baked seitan or 24 -36 pieces fried seitan
2 tablespoons cornstarch, dissolved in
2 tablespoons cole water

Steps:

  • Saute onion, garlic, and ginger.
  • When onion begins to get translucent, add pineapple, peppers, sugar, vinegar, ketchup, and soy sauce.
  • When this comes to a boil, add the seitan and the dissolved cornstarch.
  • Cook over high heat until the sauce thickens and the seitan is heated through.
  • Serve over brown rice.
