- Preheat the oven to 350 degrees F. Spray an 11-by-7-inch baking dish with cooking spray.
- Arrange the bread cubes in an even layer on a sheet pan. Bake until the bread is just beginning to dry but not browned, about 5 minutes. Set aside.
- Beat the butter and sugars in a large bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Add the eggs and mix on low speed until well incorporated. Add the vanilla, can of pineapple with the juices and 1/2 teaspoon salt and mix until well combined. Fold in the cooled bread cubes.
- Pour into the prepared pan. Bake until deep golden brown and bubbly, 45 to 50 minutes.
HAWAIIAN HAM AND PINEAPPLE STUFFING

- Position racks in the upper and lower thirds of the oven; preheat to 250 degrees F. Spread out the bread on 2 baking sheets. Bake, rotating the pans and stirring halfway through, until lightly toasted, 1 to 1 1/2 hours.
- Increase the oven temperature to 375 degrees F. Butter a 3-quart baking dish. Melt 4 tablespoons butter in a large pot or Dutch oven over medium-high heat. Add the ham, onion, celery, jalapeño, thyme, sage, 1 teaspoon salt and a few grinds of pepper; cook, stirring occasionally, until softened, about 6 minutes. Add the chicken broth and bring to a simmer, then remove from the heat. Let cool slightly.
- Whisk the eggs in a large bowl. Stir in the bread and ham mixture. Transfer the stuffing to the prepared dish. Dot with 2 tablespoons butter. Cover with foil and bake 30 minutes.
- Meanwhile, heat the remaining 1 tablespoon butter in a medium skillet over medium-high heat. Add the pineapple and cook until lightly browned, about 3 minutes. Add the brown sugar and stir until just dissolved, about 30 seconds.
- Uncover the stuffing and scatter the pineapple on top. Bake until golden brown, 20 to 30 minutes.

This is my take on pineapple stuffing (or pineapple filling). I had another recipe and I've tweaked it to my liking so it's not as sweet but still just as delicious! I started making this just for Easter but now it is requested ths I bring it to all holiday meals because it's like getting to eat a dessert with dinner! It's a very dense dish and definitely not for the faint of heart. It's also good served with a scoop of vanilla ice cream on top.

- Preheat oven to 350.
- Cream butter and white sugar in a large bowl.
- Beat in eggs and vanilla.
- Stir in crushed pineapple.
- Fold in bread cubes, taking care to make sure that all pieces are covered with the pineapple mixture.
- Pour stuffing mixture into a greased 9x13 glass baking dish.
- Sprinkle brown sugar over the top (use more or less to taste).
- Bake, uncovered, for 45-55 minutes until the center is firm and springs back when touched and the brown sugar is nice and crunchy.
- If the brown sugar starts burning before the center is set, cover it with tinfoil and continue baking.

- Make dressing according to instructions, set aside. Clean the chicken of any extra fat. Slice the breast down the side to make a pocket. Combine the pineapple and stuffing in a bowl.

- Rinse hens and pat dry, removing innards; lightly salt and pepper inside and out.
- Sprinkle pineapple chunks lightly with curry powder and stuff hens.
- Truss hens and close cavity. Tie wings to body and legs to tail.
- GRILL: Balance on spit and secure with holding forks. Grill over medium coals or on rotisserie in gas grill set at medium for 45 minutes to 1 hour, basting occasionally with melted butter mixed with lemon juice.
- OR BAKE: Place bird on rack and bake in 325 dg oven for one hour or until tender, covering with foil if becoming too brown. Baste occasionally with butter/lemon mixture.

Steps:
- 1) While preparing the food soak twenty toothpicks in water to hold chicken together.
- 2) In medium bowl mix 1 Large can of Pineapple Tidbits with juice, Capers, 3 tablespoons of sliced Almonds, 1 Tablespoon Parsley, Olive Oil, & Teriyaki Sauce, Let sit while preparing the chicken breast for stuffing, about 10 minutes.
- 3) Line baking dish with Foil (for easy clean-up) and spray with Pam Non stick spray.
- 4) Trim Chicken Breast and slice pocket in chicken breast.
- 5) Wash Mushrooms, Take the juice only from the Pineapple Caper mix and soak the mushrooms in it while stuffing the chicken breast.
- 6) Mix Garlic Herb Crushed Croutons with 1 of the Large can of Pineapple Tidbits and Juice, mix until moist. (do not over moist stuffing).
- 7) Fill Pocket in chicken breast with stuffing and pineapple mix.
- 8) Place in baking dish.
- 9) Return Juice from mushrooms to Pineapple Caper mix.
- 10) Place Mushrooms between and down the sides of chicken breast.
- 11) Bake for 1 hour covered.
- 12) After 1 hour remove cover and add Tomatoes, sprinkle top with parmesan cheese, and cook for 15 more minutes.
- 13) Remove Chicken from oven and let set 5 minutes.
- Pineapple, Caper Salsa.
- 1) Heat small skillet, add butter, when butter stops bubbling and just starts to turn brown add Pineapple and caper mix and cook on medium for 3 to 5 minutes to reduce.

- 1. Cut bread slices into 1/2-inch cubes and lightly toast in oven. (The best way to do this is place bread cubes in single layer on an ungreased baking sheet, and bake about 10-15 minutes in oven at 250ºF, just until dry and very lightly toasted. Let cool completely.) This step can be done a day or two in advance, and the toasted bread cubes returned to the plastic bread bag(s) until ready to use.
- 2. Preheat oven to 325ºF.
- 3. In 12-inch skillet, melt butter over medium heat. Add celery and onion, and cook 10 minutes or until tender, stirring occasionally.
- 4. Stir thyme, sage, salt, pepper, chicken broth into the onion mixture. Bring mixture to a boil, and quickly remove skillet from heat.
- 5. Place bread cubes in very large bowl. Add celery mixture, parsley, orange zest and pineapple; toss gently until well mixed.
- 6. Spoon stuffing into a lightly greased 13x9-inch glass baking dish, and bake 30 to 40 minutes or until heated through.
