My friend served this side dish at her recent dinner. It went well with her baked chicken.

Number Of Ingredients 5

1/2 c butter
3/4 c sugar
4 eggs
20 oz. can(s) crushed pineapple
6 slice white bread, cubed

Steps:

  • 1. Cream butter and sugar in electric mixer. Add eggs and beat well.
  • 2. Drain pineapple and stir into butter mixture. Add bread cubes and stir until coated.
  • 3. Bake in preheated oven at 350' for 1 hour. Enjoy !!

This recipe comes from the The American Country Inn and Bed and breakfast Cookbook, vol.2. Perfect accompaniment to a holiday ham or turkey. Assemble the night before - cook the next morning. Can be served warm or at room temperature. Easy to transport too!!

1/2 cup butter
1 cup sugar
4 eggs
1 (20 ounce) can crushed pineapple, drained
5 slices white bread, remove the crust and cut into cubes

Steps:

  • Butter bottom and sides of a casserole dish (I use a deep, round casserole).
  • Cream the butter and sugar together.
  • One by one, add the eggs, beating on medium for 30 seconds after you add each one.
  • Gently fold in the drained pineapple to the creamed egg mixture.
  • Toss the cubed bread into casserole dish.
  • Pour the pineapple/egg mixture over the bread.
  • Cover dish with plastic wrap and put in the refridgerator overnight.
  • Remove plastic a bake at 350F for 1 hour .
  • Cover with foil until time to serve.

Number Of Ingredients 11

6 tablespoons unsalted butter
1 teaspoon minced ginger
1 tablespoon light brown sugar
1/8 scant teaspoon ground cinnamon
Dash ground nutmeg
1/2 (1 1/4 pounds) fresh pineapple, peeled, cored and sliced into 1/4-inch pieces (about 4 cups)
2 Bartlett pears, ripe but firm, peeled, cored and sliced into 1/4-inch pieces
1 frozen puff pastry sheet, thawed according to directions on package
1 egg yolk, beaten
1 tablespoon dark rum
1 tablespoon powdered sugar

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium saute pan over medium heat, melt 4 tablespoons butter, add ginger and cook for 1 minute. Add in brown sugar, cinnamon and nutmeg. Let cook 2 minutes, then add in fruit, stirring gently to combine. Let cook over medium heat to gently caramelize, about 6 to 8 minutes. Remove fruit from pan, reserve sauce in pan. Let fruit cool to room temperature. Place puff pastry dough on baking sheet. Spread fruit out on puff pastry dough, leaving a 2-inch border all around. With the long end closest to you, fold dough into thirds, then repeat ending with the seam down. Pinch short ends closed. Brush with egg yolk.
  • Bake until golden brown and crispy, about 20 to 25 minutes. While baking, heat up remaining sauce over medium heat, fortify with rum and 2 tablespoons butter. To serve, remove strudel from oven and slice immediately into 6 pieces. Drizzle some of the sauce on dessert plates. Place strudel slice on top and dust with powdered sugar.

8 English muffins, cut into eighths and toasted
3 cups cubed fully cooked ham
1 can (20 ounces) pineapple tidbits, drained
4 green onions, chopped
1 jar (4 ounces) diced pimientos, drained
1-1/2 cups shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 jar (15 ounces) Alfredo sauce
1-1/2 cups evaporated milk
4 large eggs, lightly beaten
1/2 teaspoon salt
1/4 teaspoon cayenne pepper

Steps:

  • Combine first 5 ingredients. Transfer to a 13x9-in. baking dish; top with cheeses., Whisk together remaining ingredients. Pour sauce over layers, pushing down, if necessary, with the back of a spoon to ensure muffins absorb liquid. Refrigerate, covered, 1 hour or overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats. Bake, uncovered, until strata is golden and bubbly, 30-40 minutes. Let stand 10 minutes before serving.

1/4 cup butter, softened
3 tablespoons ground cinnamon
8 slices day-old raisin bread
4 tablespoons brown sugar, divided
6 large eggs, lightly beaten
1-1/2 cups 2% milk
3 tablespoons maple syrup
1 teaspoon vanilla extract
Additional maple syrup

Steps:

  • In a small bowl, combine butter and cinnamon; spread over one side of each slice of bread. Place four slices, buttered side up, in a greased 8-in. square baking dish (trim to fit if necessary). Sprinkle with 2 tablespoons brown sugar. Repeat with remaining bread and brown sugar., In a large bowl, whisk eggs, milk, syrup and vanilla; pour over bread. 1 pound sliced bacon, cut into 1/2-inch pieces
2 cups chopped fully cooked ham
1 small onion, chopped
10 slices white bread, cubed
1 cup cubed cooked potatoes
3 cups shredded cheddar cheese
8 large eggs
3 cups whole milk
1 tablespoon Worcestershire sauce
1 teaspoon ground mustard
Dash salt and pepper

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; add ham and onion. Cook and stir until onion is tender; drain. , In a greased 13x9-in. baking dish, layer half the bread cubes, potatoes and cheese. Top with all of the bacon mixture. Repeat layers of bread, potatoes and cheese. , In a large bowl, beat the eggs; add the milk, Worcestershire sauce, mustard, salt and pepper. Pour over all.
