2 cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter
¼ cup milk
1 egg
1 teaspoon vanilla extract
¼ cup butter
2 (8 ounce) cans crushed pineapple, drained and juice reserved
2 tablespoons white sugar
¼ cup cornstarch
½ cup all-purpose flour
¼ cup butter
1 teaspoon vanilla extract
⅓ cup white sugar

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
  • Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

½ cup sliced almonds
⅔ cup butter
2 (8 ounce) packages cream cheese, room temperature

1 (20 ounce) can crushed pineapple, drained with juice reserved

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine 2 cups flour, confectioners' sugar, and almonds. Cut in butter until mixture resembles coarse crumbs. These squares are so popular in our N. E. Pa. area and are often requested for bake sales. At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
2 whole eggs
1 cup butter or 1 cup margarine
3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.
  • Dough:.
  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.

  • Cream the 1/2 cup butter with the brown sugar and vanilla.

Steps:

  • For filling:
  • Combine chopped pineapple, mango, papaya, brown sugar, orange juice, cinnamon stick, orange peel, lemon peel and ground cloves in heavy medium saucepan. Cook over low heat until reduced to 1 1/2 cups, stirring frequently, about 1 1/2 hours. Remove cinnamon stick. Cool.
  • For crust:
  • Using electric mixer, beat butter, sugar, vanilla extract and salt in large bowl just until blended. On low speed, gradually add flour, beating just until dough begins to come together. Turn dough out onto floured work surface. Gather dough into ball; divide into 2 pieces, 1 slightly larger than the other. Flatten each piece into square. Wrap each in plastic; chill 15 minutes.
  • Preheat oven to 375°F. Roll out larger dough piece on lightly floured work surface to 10-inch square. Transfer dough to 9-inch square metal baking pan. Press dough onto bottom and 1/2 inch up sides of pan. Pour filling into crust. Roll out remaining dough piece on floured surface to 9-inch square. Cut into 1-inch-wide strips. Place 4 strips atop filling, spacing evenly. Place 5 more strips diagonally atop first 4 strips, forming lattice. Trim lattice edges.
  • Bake until crust is golden brown, about 50 minutes. Cool completely. Cut into 9 squares. (Can be prepared 1 day ahead. Store in single layer in airtight container at room temperature.)

2 - 3 oz boxes - island pineapple jello
1 - 20 oz can, crushed pineapple - drained well - reserving juice
1 - 8 oz cream cheese - softened
water
1/2 c chopped pecans

Steps:

  • 1. Drain pineapple well. Reserving juice and add water to it to make 2 1/4 cups of liquid.
  • 2. In a medium bowl, mix cream cheese with dry jello, until well combined.
  • 3. Bring pineapple liquid to a boil and combine with the cream cheese mixture. Stir until jello and cream cheese are dissolved. Refrigerate until jello is almost set, but still a little jiggly. About 1 1/2 - 2 hours.
  • 4. Add the pineapple and nuts and stir well to combine. Pour mixture into an 8 inch pan and spread evenly.
  • 5. Cover and refrigerate for at least a few hours until set well. Cut into squares and serve with a dollop of whipped cream if desired.

2-1/2 Tablespoons of cornstarch
1/4 teaspoon of salt
Pastry Crust:
3-1/2 cups of flour
1-1/2 Tablespoons of Baking Powder
1/2 teaspoon of bakings soda
1/2 teaspoon salt
1/2 cup of sugar
2 sticks of butter, slightly chilled
1 cup of sour cream
3 large egg yolks, slightly beaten
Topping:
1 jar of Maraschino Cherries, drained and cut in half
1 small can of mixed chopped nuts (sundae sized nuts)

Steps:

  • Fruit Filling: Combine all ingredients in a medium saucepan and cook over low heat until think and clear. Set aside to slightly cool. Pastry: Sift dry ingredients together in mixing bowl. Cut in the butter with a pastry cutter until it resembles small pea sized crumbs. Add sour cream and beaten egg yolks and mix until it comes together like a pie dough. Turn on floured board and knead till smooth. Roll out 2/3 of dough and press into a greased 13x18 jelly roll pan (use flour to prevent sticking). Pour slightly cooled fruit filling over crust. Roll out remainder of dough and cut into a strips. Form a lattice top on filling. Top with maraschino cherries mixture of chopped nuts. Bake for 30 minutes in a 350 degree oven (medium rack) until golden brown. Cool completely before cutting into small squares. Store covered in refrigerator after cutting.

1-1/2 cups graham cracker crumbs
1/4 cup butter, melted
2 Tbsp. sugar
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 jar (7 oz.) JET-PUFFED Marshmallow Creme
1 tsp. vanilla
1-1/2 cups thawed COOL WHIP Whipped Topping
1 cup boiling water
2 pkg. (3 oz. each) JELL-O Lemon Flavor Gelatin
1 can (8 oz.) crushed pineapple in juice, undrained

Steps:

  • Heat oven to 375°F.
  • Mix first 3 ingredients until well blended; press onto bottom of 13x9-inch pan. Bake 8 min.; cool.
  • Beat cream cheese, marshmallow creme and vanilla in medium bowl with mixer until well blended. Whisk in COOL WHIP; spread over crust. Refrigerate until ready to use.
  • Add boiling water to gelatin mixes; stir 2 min. until completely dissolved. Stir in pineapple. Refrigerate 30 min. or until slightly thickened. Spoon over dessert. Refrigerate 2 hours or until firm.

Number Of Ingredients 11

1 1/2 cups all-purpose flour
3 tablespoons icing sugar
3/4 cup butter
1 cup crushed pineapple, with juice
4 ounces maraschino cherries, drained and cut up fine
1/2 cup sugar
2 tablespoons cornstarch, dissolved in a little cool water
1/2 cup desiccated coconut, fine
1 teaspoon almond extract
3 egg whites, beaten stiff
5 tablespoons white sugar

Steps:

  • Mix flour, icing sugar and butter with hands and press into an 8"square pan.
  • Bake for 10 to 12 minutes in a 350 degree oven.
  • Filling: Put pineapple, its juice, cherries, and white sugar in top of double boiler and when hot add cornstarch mixture.
  • Cook until thick and clear, stirring continuously. Remove from heat.
  • Add coconut and almond flavouring and spread on top of first mixture.
  • Topping: Beat as for meringue and spread on top of filling. Bake slowly for 20 minutes in 300 degree oven.

4 tablespoons butter
2 tablespoons sugar
2 egg yolks, well beaten (save the whites, you will need them below)
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup crushed pineapple, drained
2 egg whites
1 cup sugar
1 1/4 cups coconut, shredded

Steps:

  • Cream together butter and sugar in a large bowl. Add egg yolks and mix well.
  • Sift together flour, baking powder and salt. Add to the creamed mixture, mixing well.
  • Press into an 8" x 8" cake pan (lightly greased or sprayed with nonstick spray). Cover with pineapple.
  • Beat the egg whites until stiff; add the sugar and coconut. Spread over the pineapple.
  • Bake at 350F for 30 minutes. Cool and cut into squares.

4 cups flour
4 tsp. baking powder
1/4 tsp. salt
1 cup sugar
1 cup shortening
2 eggs
1/2 cup milk
1 tsp. vanilla
Filling:
1 can crushed pineapple
1/2 cup sugar
1/2 cup water
1/4 cup corn starch
Topping:
Confectioners sugar

Steps:

  • -Mix flour, baking powder, salt, sugar, shortening together like pie dough. -Add eggs, milk, vanilla to make pie consistency dough. -Divide dough in half. -Roll one and put on cookie sheet. (15.25"x10.25"x.75") -Boil pineapple, sugar, water, cornstarch together. Boil till clear and thickened. -Pour pineapple filling on top of dough on cookie sheet. -Roll other half of dough and put on top of filling. -Bake at 375 degrees until golden brown. (approximately 20-25 minutes) -Cut into squares and top with confectioners sugar.

LOW-FAT PINEAPPLE OATMEAL SQUARES

The biggest problem I had while making these is that I kept wanting to eat the batter, though I'm glad I saved some for cooking. Note: they hold up better overnight and stay moist if they are slightly undercooked. They have no egg, and can be made with non-dairy margarine for those with dietary restrictions.

6 tablespoons butter or 6 tablespoons margarine, melted
2/3 cup applesauce
2 cups all-purpose flour

2 cups quick-cooking oatmeal
1 -1 1/2 cup crushed pineapple (juice drained and set aside)
additional pineapple juice, as needed
2 tablespoons pineapple juice (from the pineapple)
1 cup confectionars sugar

Steps:

  • Combine the first 6 ingredients until well mixed.
  • If it gets too thick, add a little bit of pinapple juice.
  • Add the pineapple mix until well combined (use more juice as needed).
  • Pour into a greased pan and bake at 350 for 25-30 minutes.
  • Take them out of the oven before the top starts to brown.
  • They will stay moist longer if they are slightly undercooked.
  • Cool.
  • Combine powdered sugar with pineapple juice and spread on top of bars.

2 cups plain flour
1 1/4 cups brown sugar
125 g butter
1 cup chopped pecans or 1 cup walnuts
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 egg
3/4 cup light sour cream
1 teaspoon vanilla essence
1 cup unsweetened crushed canned pineapple, drained well
1/2 cup sultana

Steps:

  • Combine flour and sugar in bowl.
  • Rub in butter until mixture resembles breadcrumbs.
  • Stir in pecans.
  • Press 2 cups of the mixture into a greased slice tray.
  • Blend together baking soda, cinnamon, egg, sour crem and vanilla.
  • Add to remaining mixture combining well.
  • Stir in well drained pineapple and sultanas.
  • Spread mixture over the base.
  • Bake in moderate oven for about 35 minutes or until cooked when tested.
  • Cool in pan before cutting into squares.
