PINEAPPLE SMOKIES

These sausages in a tangy-sweet sauce make an excellent holiday snack. The recipe is quick and easy but makes lots.

Number Of Ingredients 7

1 cup packed brown sugar
3 tablespoons all-purpose flour
2 teaspoons ground mustard
1 cup pineapple juice
1/2 cup white vinegar
1-1/2 teaspoons reduced-sodium soy sauce
2 pounds miniature smoked sausages

Steps:

  • In a large saucepan, combine the sugar, flour and mustard. Gradually stir in the pineapple juice, vinegar and soy sauce. Bring to a boil over medium heat; cook and stir until thickened, about 2 minutes. Add sausages; stir to coat. Cook, uncovered, until heated through, about 5 minutes longer. Serve warm.

LIL' LUAU SMOKIES (A.K.A. LIL' PINEAPPLE SMOKIES)

We had a luau for my step-daughter's 5th birthday and we found a recipe for Luau Smokies on the internet. We messed around with it a bit and this is what we came up with. We used 2 packages of Lil' Smokies like the recipe suggests but next time we will be doubling that amount. These things disappeared really quickly. They have a good balance between tangy and sweet and they really go well with the rest of the luau food. The best thing is that after it's cooked, you just throw it in a crock pot and forget about it!

Number Of Ingredients 10

1 tablespoon finely chopped onion
1 teaspoon olive oil
1 cup brown sugar
3 tablespoons flour
3 teaspoons ground mustard
1 1/2 cups pineapple juice
1 cup pineapple chunk
1/2 cup vinegar
1/2 cup soy sauce
2 lbs lil' smokies

Steps:

  • In a pan, heat oil over Medium heat. Saute onion until tender, about 5 minutes. Remove from heat.
  • In a large saucepan, combine onions, brown sugar, flour and mustard.
  • Gradually stir in pineapple juice and chunks, vinegar and soy sauce.
  • Bring to a boil over Medium heat, stirring frequently.
  • Boil for 2 minutes, stirring constantly.
  • Add Lil' Smokies and stir to coat.
  • Serve in a crock pot set on Warm.

2 lbs mini smoked sausage links

Steps:

  • In a large saucepan combine brown sugar, flour and mustard. Gradually stir in pineapple juice, vinegar and soy sauce. Bring to a boil over medium heat, stir occasionally. Boil for 2 minutes stirring constantly. Add sausages, stir to coat. Cook for 5 minutes or until heated through.
