Steps:
- 1. In a small saucepan, whisk together glaze ingredients and bring to a boil. Simmer for about 10 minutes, then cool. It will thicken some as it cools.
- 2. Preheat oven to 350 degree F. Grease a baking dish or small roaster. In a large bowl, mix all ham loaf ingredients until thoroughly blended.
- 3. Pour out meat mixture into prepared baking dish and shape into a loaf as you would a meatloaf. Brush the top of loaf with glaze. Place in oven and bake for 1 hour and 10 minutes, glazing several times during baking process.
- 4. Remove from oven. sprinkle on the pineapple if using and drizzle with glaze. Place back into oven for another 10 - 15 minutes. I broiled the last 5 minutes.
- 5. Place onto a serving platter and slice. Serve with remaining glaze.
SIMPLE PINEAPPLE SAUCE FOR HAM
This simple pineapple sauce is so delicious and easy to make. I got the recipe from my Sister-in-law. Leftovers are great served warm, over vanilla ice cream. I love it with a Honey Baked Ham.

- In a small sauce pan mix the brown sugar, cornstarch and salt.
- Stir in undrained crushed pineapple, lemon juice and mustard.
- Cook over medium heat, stirring constantly until mixture thickens and comes to a boil.
- Boil while stirring for 1 minute.
- Serve warm with ham.

I was looking for something for dinner and this caught my eye and so we had to try it. This is tender and very yummy. Make and excellent dish for a church brunch or pot luck. I got this recipe from The Best of Country Cooking 2002 Taste of Home.

- In a bowl, combine eggs, milk, Worcestershire sauce, bread crumbs, 1 teaspoon mustard, salt and pepper. Add ham and pork mix well.
- Shape into eight oval patties, set aside.
- Drain pineapple, reserving 1/2 cup of juice. Place a pineapple slice between each ham patty. (Refrigerate remaining pineapple and juice for another use.) Carefully place in an ungreased 9 in x 5 in x 3 in loaf pan.
- Pat patties around pineapple to form a loaf. Combine brown sugar, remaining mustard and reserved juice; pour a small amount over loaf. Bake, uncovered, at 350 degrees for 1 1/4 hours or until lightly browned and meat thermometer reads 160 degrees, basting occasionally with remaining juice mixture.

PINEAPPLE GLAZE FOR BAKED HAM
Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

Steps:
- Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
- Turn heat on to medium and stir constantly to prevent burning.
- Continue to heat until mixture thickens and comes to a boil.
- Allow mixture to boil for approximately 1 minute.
- If mixture refuses to thicken, add more cornstarch- a little at a time.
- (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.

LANCASTER COUNTY HAM LOAF WOW WOW WOW
Now THIS is Lancaster County cooking! This is an Amish/Mennonite specialty dish! You will NOT be disappointed! Of course in our area, many of the markets and butcher/meat shops, sell ham loaf meat (already ground and mixed) but I've simplified this by making it possible for all of you outside of the area to create your own!
