1 tablespoon sugar
2 teaspoons cornstarch
1 can (20 ounces) crushed pineapple, undrained
1/4 cup orange marmalade
1 angel food or pound cake, sliced

Steps:

  • In a small saucepan, combine the sugar, cornstarch, pineapple and marmalade until blended; bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Cool. Serve with the cake.

½ cup shortening
1 cup butter
1 ¾ cups white sugar
6 large eggs eggs
3 cups sifted all-purpose flour
1 teaspoon baking powder
¼ cup milk
1 teaspoon vanilla extract
¾ cup crushed pineapple with juice
¼ cup butter
1 ½ cups confectioners' sugar
1 cup crushed pineapple, drained

Steps:

  • Grease and flour a 10 inch tube pan. Sift together the flour, and baking powder. Set aside.
  • In a large bowl, cream together the shortening, 1 cup butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with milk; beat well. Stir in the 3/4 cup crushed pineapple.
  • Pour into 10 inch tube pan. Place in cold oven. Turn oven to 325 degrees F (175 degrees C) and bake for 90 minutes or until top springs back when touched. Remove from oven and let stand for 10 minutes. Remove carefully from pan.
  • To make the glaze: In a small saucepan, combine 1/4 cup butter, confectioners sugar and 1 cup crushed pineapple. heat and stir until melted. Pour over cake as soon as it comes out of the pan.

1/2 cup sugar
1 tablespoon cornstarch
2 teaspoons butter
1 teaspoon white vinegar
Pinch salt
Vanilla ice cream
Chopped walnuts

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a saucepan, combine sugar and cornstarch; stir in pineapple juice until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened and bubbly., Remove from the heat; stir in the butter, vinegar, salt and pineapple. Serve over ice cream; sprinkle with walnuts.

1 (16 ounce) package angel food cake mix
1 (20 ounce) can crushed pineapple, in juice (not syrup)
1 (20 ounce) can crushed pineapple, in juice (not syrup)
2 tablespoons orange marmalade
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Preheat oven to 350F and lightly spray a 13x9x2" baking pan with nonstick spray.
  • Put cake mix in a large bowl and stir in undrained pineapple until well combined.
  • Pour mixture into baking pan and smooth down the surface. Bake for 25-30 minutes or until golden brown.
  • Transfer to a wire rack and let cool for about 30 minutes then run a thin knife around the edges of the cooled cake before slicing and removing from pan. Serve alone or with the following pineapple sauce (which I highly recommend).
  • For Pineapple Sauce: While cake is cooling, in a small saucepan, gently stir together the sauce ingredients until the cornstarch is dissolved.
  • Bring to a boil over medium high heat and boil for 1 1/2 to 2 minutes or until thickened, stirring frequently.
  • Remove pan from heat and let cool slightly.
  • Serve the warm sauce over the cake slices.
  • Store leftover sauce in a container with a tight fitting lid. You can serve additional sauce either cold or reheat in the microwave till just warm.

1 can (20 oz) pineapple slices in juice, drained, juice reserved
1 jar (6 oz) maraschino cherries without stems, drained
1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
Vegetable oil and eggs called for on cake mix box

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on brown sugar. Place cherry in center of each pineapple slice, and arrange remaining cherries around slices; press gently into brown sugar.
  • Add enough water to reserved pineapple juice to measure 1 cup. Make cake batter as directed on box, substituting pineapple juice mixture for the water. Pour batter over pineapple and cherries.
  • Bake 42 to 48 minutes (44 to 53 minutes for dark or nonstick pan) or until toothpick inserted in center comes out clean. Immediately run knife around side of pan to loosen cake.
