PINEAPPLE CREAM CHEESE SALAD



Pineapple Cream Cheese Salad image

My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. I hope you try this quick easy dish and enjoy it.

Yield 1 bowl gelatin salad, 6-8 serving(s)

Number Of Ingredients 6

1 (3 ounce) package knox unflavored gelatin
1 (14 ounce) can crushed pineapple, undrained
1 (8 ounce) package low-fat cream cheese, softened
1/2 cup sugar
1/4 cup water
cherries, with if desired (to garnish)

Steps:

  • In a small saucepan, over medium heat, warm the pineapple, cream cheese, and Splenda or sugar until smooth. Stir gently. This does not take long.
  • Remove from heat.
  • In a small dish, add the water. Then add the unflavored gelatin to it. Allow a few seconds for it to dissolve.
  • Add Knox and water mixture to the pineapple mixture. Stir well to blend.
  • Pour pineapple mixture in a pretty glass bowl. Gently place a few cherries on top, if desired.
  • Place in refrigerator to set. Chill at least 3 hours before serving.
  • Note: The 3 hours is your cook tiime. Also note that the small package of Knox unflavored gelatin wasn't labeled with number of ounces. Since I had removed them from the box, I guess at the number of ounces.

FRUIT DIP



Fruit Dip image

Great with fresh fruit! Use apples, pineapple chunks, grapes, oranges or other fruits of your choice. Have toothpicks available to spear the fruit for dipping. Great for showers or parties!

½ cup marshmallow creme
2 cups frozen whipped topping, thawed
¼ cup unsweetened pineapple juice

Steps:

  • Blend together the cream cheese, marshmallow cream and thawed topping. Add enough pineapple juice to make it dipping consistency. Chill for 1 hour.

This cheese ball will keep for several days in the refrigerator. It's delicious! I've found it's especially popular at a party or get-together.

2 packages (8 ounces each) cream cheese, softened
1 can (8 ounces) crushed pineapple, well drained
1/2 cup chopped green pepper
1/2 cup chopped green onions
1 teaspoon lemon-pepper seasoning
1 teaspoon seasoned salt
2 cups chopped pecans, divided
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese until smooth. Stir in the pineapple, green pepper, onions, seasonings and 1/2 cup pecans. Place on a sheet of plastic wrap; shape into a ball. Refrigerate overnight. , Just before serving, roll cheese ball in remaining pecans. Serve with crackers.

I've had people ask me if it is chicken salad, because the pineapple adds a texture that is similar to shredded chicken, and the savory ingredients mask the pineapple flavor. It's perfect for a little bite before a meal or a satisfying afternoon snack on your favorite crackers. If you like, you can sneak in some vegetables, and serve it on celery sticks, or those little tri-color mini bell peppers, cut in half.

1 (8 ounce) can canned crushed pineapple, drained
1 cup chopped pecans
½ cup chopped green bell pepper
2 tablespoons chopped green onion

Steps:

  • Combine cream cheese, crushed pineapple, pecans. bell pepper, most of the green onion, and salt in a bowl, reserving some of the green onion tops for garnish.
  • Serve immediately if desired with reserved green onions sprinkled over, or cover with plastic wrap and refrigerate until ready to serve.
