1 pound salt cod
Vegetable oil, for frying
3 cups flour
2 tablespoons baking powder
2 teaspoons baking soda
1 teaspoon salt
3 cups 2-percent milk
3 eggs
1 cup fresh cilantro, stems and leaves, finely chopped
Creamy Mustard Sauce, recipe follows
Spicy Orange Chili Sauce, recipe follows
Pineapple Chutney, recipe follows
Shredded Zucchini Salad, recipe follows
1 cup sour cream
2 tablespoons yellow mustard
1 tablespoon coriander seeds, ground in a mortar and pestle
1 teaspoon honey
4 sweet gherkins, minced
Salt
2 teaspoons salt
2 teaspoons sugar
1 1/2 teaspoons white wine vinegar
1 green finger chile, roughly chopped
1 red finger chile, roughly chopped
1 large orange, peeled and roughly chopped
1/4 red onion, roughly chopped
1 tablespoon vegetable oil
1/2 red onion, finely diced
1 pineapple, peeled and cut into a large dice
1/2 cup sugar
1/4 cup white wine vinegar
1 teaspoon fennel seed
Salt
1/4 red onion, julienned
Juice of 2 limes
1 teaspoon salt
1 cup cherry tomatoes, cut in half
1/4 cup fresh cilantro leaves, roughly chopped
1 large zucchini, grated

Steps:

  • Soak the salt cod in 1 gallon of water for 24 hours, changing the water 2 to 3 times until the cod no longer tastes of salt.
  • Place the oil in a pot a third of the way full. Heat the oil to 350 degrees F and line a baking sheet with paper towels. Remove the cod from the water, pat dry and roughly chop. Place the cod in a food processor and pulse until shredded.
  • Remove the cod, squeeze with hands to remove excess water and place the cod in a bowl.
  • Place the flour, baking powder, baking soda and salt in a large bowl, mix. In a separate bowl, whisk the milk and eggs and add to the bowl with the dry ingredients. Add the cod and cilantro to the batter, folding to incorporate. Spoon 1 tablespoon of the cod batter into the hot oil and fry until golden brown and the fritters are cooked, about 3 minutes, turning the fritters over while cooking. Place the cod on the lined baking sheet. Repeat with the remaining cod batter.
  • Serve the salt cod fritters with Creamy Mustard Sauce, Spicy Orange Chili Sauce, Pineapple Chutney and Shredded Zucchini Salad.
  • Place the sour cream, mustard, coriander seeds, honey and gherkins into a bowl, mix, season with salt, cover and place in fridge until serving.
  • Place the salt, sugar, vinegar, green chile, red chile, orange and red onions into a blender and puree until smooth.
  • Heat the oil in a saute pan over medium heat. Add the red onions and saute until tender and translucent. Add the pineapple, sugar, vinegar and fennel seeds and stir. Cook until the pineapple has softened slightly and the juices have reduced, 7 to 10 minutes. Season with salt.
  • Place the red onions, lime juice and salt in a bowl. Stir and allow to sit for 5 minutes. Add the cherry tomatoes, cilantro and zucchini to the bowl and mix.

1 (8- to 10-pound) partially cooked smoked shank-end ham (preferably Cook's brand)
3 cups unsweetened pineapple juice (24 fl ounces)
1 tablespoon sugar
3/4 cup Dijon mustard (7 ounces)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon finely chopped fresh thyme leaves
Garnish: sprigs of fresh thyme

Steps:

  • Put oven rack in middle position and preheat oven to 325°F. Oil a large roasting pan.
  • If ham comes wrapped in plastic, rinse ham and pat dry. Cut away and discard any thick skin with a sharp paring knife, leaving a 1-inch band around shank end, then cut away all but about an 1/8-inch layer of fat where possible. Put ham, cut side down, in roasting pan. Pour 3/4 cup pineapple juice around ham and cover pan tightly with foil, then bake 1 hour.
  • While ham is baking, combine sugar and remaining 2 1/4 cups pineapple juice in a 1 1/2- to 2-quart heavy saucepan and gently boil, stirring occasionally, until reduced to 3/4 cup, 12 to 15 minutes. Transfer pineapple syrup to a bowl and cool 5 minutes. Whisk in mustard, salt, and pepper, then pour 1/2 cup into a small bowl and stir in thyme. Reserve remaining mustard mixture for serving.
  • Discard foil from pan and brush ham with thyme mustard mixture, then bake, basting with pan juices occasionally, until thermometer inserted into center of meat (do not touch bone) registers 145 to 150°F, 1 1/4 to 1 1/2 hours. If pan juices evaporate during baking, add 1/2 cup water. Transfer ham to a platter, discarding pan juices, and let stand, uncovered, 15 to 30 minutes before slicing. Serve ham with reserved mustard mixture on the side.

3 tablespoons minced garlic
3 tablespoons roughly chopped fresh sage
3 tablespoons kosher salt
3 tablespoons freshly cracked black pepper
one 5-6 pound pork shoulder roast
1 small pineapple, peeled, cored and cut into 2-inch cubes
3 red onions, peeled and quartered
FOR THE SAUCE
2 cups pineapple juice
1/4 cup red wine vinegar
1/2 cup grainy mustard
kosher salt and freshly cracked black pepper, to taste

Steps:

  • Preheat oven to 500. In a small bowl, combine the garlic, sage, salt and pepper and mix well. Dry the pork butt with paper towels. With the tip of a sharp knife, make 10 to 12 small cuts, about 1/2 inch long and 1/2 inch deep, evenly spaced over the surface of the pork and push some of the spice rub into each slit. If you have any left over, rub it over the surface of the pork. Place the pork on a rack in a roasting pan, and roast for 20 minutes to brown it. Reduce the temperature to 300, add the pineapple and onions to the roasting pan, and continue to cook until the pork is done to your liking, 1 hour to 1 hour and 10 minutes for medium well. To check for doneness, insert a meat thermometer into the dead center of the roast and let it sit for 5 seconds. 126 degrees is medium-rare, 134 is medium, 150 is medium well; we like to pull it at 147. When the roast is done, remove it from teh pan, along with the pineapple and onions, loosely cover with foil, and allow the meat to rest for about 20 minutes while you make the sauce. Pour off the fat from the roasting pan and place the pan on the stove over two burners at a medium-high heat. Add the pineapple juice and vinegar and bring to a simmer, stirring to dissolve the brown, crusty stuff in the bottom of the pan. Continue to simmer until the liquid is reduced by half, about 5 to 7 minutes. Stir in the mustard, season with salt and pepper, and pour into a sauce boat. Slice the roast and serve with the pineapple and onions, passing the sauce separately.

  • DIRECTIONS: From ham steak, remove rind and trim off all but 1/4-inch of outer fat. Cut ham into serving pieces. In a large saute pan set over moderately high heat, melt half of butter.
