1 pound ground beef
½ cup bread crumbs
½ cup chopped green and red bell pepper
1 small onion, diced
1 egg
⅓ cup ketchup
¼ cup pineapple preserves
¼ cup brown sugar
¼ teaspoon garlic powder, or to taste
1 teaspoon Worcestershire sauce
⅓ cup ketchup
¼ cup pineapple preserves
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground beef, bread crumbs, bell peppers, onion, egg, 1/3 cup ketchup, 1/4 cup pineapple preserves, 1/4 cup brown sugar, garlic powder, and Worcestershire sauce in a food processor until combined; put into a bread pan.
  • Bake in preheated oven for 30 minutes.
  • Stir 1/3 cup ketchup, 1/4 cup pineapple preserves, and 1/4 cup brown sugar together in a bowl; pour over the meatloaf.
  • Continue baking until no longer pink in the center, about 20 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Ok, this might sound weird, but trust me, it's delicious!! Everyone raves over this meatloaf, and it really is the topping that makes it!

1 1/2 lbs ground beef
1 cup crushed Ritz cracker
1/3 cup milk
1/4 cup chopped onion
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 egg
1/2 teaspoon salt
1/8 teaspoon pepper
1 (8 1/4 ounce) can crushed pineapple, undrained
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons cornstarch

Steps:

  • Combine meatloaf ingredients.
  • In ungreased 13x9 pan, form mixture into 9x4 loaf.
  • Bake at 350º for 45 minutes.
  • Combine all sauce ingredients in saucepan.
  • Cook over medium heat until boils and thickens,stirring frequently.
  • Spread on top of loaf; bake 15-20 minutes more.
  • Let stand 5 minutes before slicing.

1/2 cup quick-cooking oats
1/2 cup onion, finely chopped
1/2 green bell pepper (or any color of your choice)
1/4 teaspoon salt
1 lb lean ground beef
8 ounces crushed pineapple, drained

Steps:

  • Combine egg, oats, onion, bell pepper and salt. Add beef and pineapple. Mix
  • well. Place in a baking dish and bake uncovered at 350 degrees for 35 to 40
  • minutes or until meat is no longer pink. Top with BBQ sauce if desired.

I got this recipe from my nephew David.... His grandmother Slagle was a good cook... I don't know if this was her recipe or not... but I am putting it on here as one of hers until I hear different.

MEATLOAF
2 lb ground beef
2 lb ground turkey
2 lb pork sausage
3 c soft bread crumbs
2 can(s) crushed pineapple (do not drain)
1 of each: green and red bell peppers (diced)
4 large eggs (beaten well)
1 1/2 tsp of each: salt and pepper
BACON COATING
12 - 16 slice bacon
OPTIONAL
8 large bell peppers

Steps:

  • 1. Preheat oven to 350 degrees. Cut bacon into two pieces each. Put half of the bacon in the bottom of baking pan.
  • 2. Mix meatloaf mixture together and put on top of bacon in pan. Put remaining bacon on top of meatloaf. Refrigerate for 2 hours.
  • 3. Bake for 1 hour.
  • 4. *** Make gravy from juices in pan along with a little water and cornstarch, cooking over med-high heat until thickened. Add A little garlic pepper if needed. *** Serve with mashed potatoes and a salad.
  • 5. You can stuff several bell peppers and then bake in a roast pan. We have made this both ways.

1 lb ground turkey breast or ground beef.
1/2 c bread crumbs
1 large egg
1/2 tsp garlic powder
dash(es) worcestershire sauce
1/3 c ketchup
1/4 c light brown sugar
1/4 c low-sugar or sugar-free pineapple preserves

Steps:

  • 1. Heat oven to 350. Spray a 9" x 5" loaf pan w/ cooking spray.
  • 2. In lg bowl, combine turkey, bread crumbs, egg, garlic powder and worcestershire sauce. Mix well. Place mix evenly in pan.
  • 3. In bowl, whisk together ketchup, brown sugar and preserves. Bake meatloaf 50 mins. 20 min before meatloaf is done, pour sauce over meatloaf.

This is very moist and highly seasoned from the spices and herbs you add and those in the breadcrumbs & sausage! You can make a small meatball and fry it to taste test for additional seasoning. This is the point where you can tell if you need to add salt as well as spice! But I doubt it! As for the parmesan, bread crumbs and sausage is salty.

1 onion, finely chopped
3 garlic cloves, minced
1/4 cup crushed pineapple, drained
10 ounces frozen chopped spinach, thawed and well well well drained
3/4 cup seasoned bread crumbs
1/2 cup parmesan cheese, grated
2 eggs, beaten
2 teaspoons dried basil
2 teaspoons fresh sage, minced
1/4 teaspoon pepper
1 lb ground turkey
1 lb Italian turkey sausage (removed from casings and crumbled)
3 pineapple rings
1/4 cup pineapple preserves
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Heat olive oil in large skillet and cook onions and garlic until tender. Remove to large bowl.
  • Add pinapples, spinach (squeezed dry), bread crumbs, cheese, eggs, basil, sage and pepper. Mix well.
  • Add turkey and turkey sausage and mix gently.
  • Form into round loaf and place in 2 quart casserole dish.
  • Bake for 40 minutes, top with pineapple rings or mix the preserves and brown sugar spread on loaf, bake 15 more minutes or until internal temperature registers 160 degrees.
  • Let stand, covered, for 15 minutes before slicing.

1/2 lb chopped beef
1 c well drained crushed pineapple,canned in its own juice(not sugar syrup)
1-3 c cracker crumbs
1 egg, beaten
1/2 tsp salt and pepper

  • 1. Preheat Oven to 350*
  • 2. In a mixing bowl, Combine all ingredients.The amount of cracker crumbs will depend on how well in pineapple is drained. The loaf mixture should be fairly stiff, not mushy. Pack in a 9x5x3 loaf pan,leaving space around the sides.
  • 3. Bake 45 mins..or until done...
