10 ounces wide egg noodles
6 eggs
4 ounces melted margarine or 4 ounces butter
1/2 cup sugar
1/2 cup parve non-dairy milk substitute or 1/2 cup milk
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla
1 (20 ounce) can crushed pineapple in juice
1/2 cup golden raisin
1 teaspoon cinnamon
1/2 cup corn flake crumbs
1/4 cup brown sugar

Steps:

  • Cook noodles and drain.
  • Mix together next nine ingredients.
  • Add cooked noodles.
  • Pour into greased 9 x 13 inch pan.
  • Mix the topping ingredients together and sprinkle over kugel.
  • If desired, you may increase the amount of topping ingredients proportionately to make an even sweeter, crunchier top.
  • Bake at 350 degrees F for 1 hour.
  • Enjoy!

1 (8 ounce) package wide egg noodles
6 eggs
5 tablespoons unsalted butter, melted
½ cup white sugar
1 (8 ounce) can crushed pineapple, with juice
1 ¼ teaspoons vanilla extract
1 teaspoon ground cinnamon
1 (8 ounce) can sliced pineapple, drained
¼ cup candied cherries

Steps:

  • Boil noodles in boiling salted water just until softened; do not cook through. Rinse, and drain.
  • Beat the eggs with the melted butter. Mix in sugar, crushed pineapple with juice, vanilla, and cinnamon. Stir in the noodles. Spread into a greased 9 x 13 inch baking pan. Place pineapple rings decoratively over the top. Place a cherry in the center of each ring if desired
  • Bake at 350 degrees F (175 degrees C) for 50 minutes, or until golden.

8 oz ricotta or cottage cheese
1 pkg (8 ounces) cream cheese, softened
4 Tbsp unsalted butter, melted
1 c sour cream
1/2 c sugar
6 eggs, lightly beaten
3/4 c crushed pineapple, drained
1/2 c golden raisins, plumped in hot water and drained
2 tsp vanilla
1 tsp cinnamon
TOPPING
1/2 c corn flakes, coarsely crushed (optional)
1/4 c sugar
1 tsp cinnamon

Steps:

  • 1. Beat ricotta cheese or cottage cheese with cream cheese, melted butter and sour cream.
  • 2. Stir in sugar, eggs, pineapple, raisins, vanilla and cinnamon. Combine with noodles and pour into a 13 X 9 inch baking pan.
  • 3. Mix topping ingredients and sprinkle over noodles.
  • 4. Bake at 350 degrees for 45-55 minutes until golden.

1/2 cup butter
1 cup half-and-half cream or 1 cup full-fat milk
5 large eggs, slight beaten
1/2 cup sugar (can use more)
1 teaspoon vanilla
1/2 teaspoon salt
2 cups sour cream
2 cups cream-style cottage cheese
1 (20 ounce) can crushed pineapple, well drained
2 cups corn flakes, coarsley crushed
2 -3 tablespoons sugar
1/2 teaspoon cinnamon
3 tablespoons butter, cut into small pieces

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch glass baking dish.
  • Cook the egg noodles in boiling water with 2 tablespoons salt until just firm-tender.
  • Drain well then transfer to a large bowl, and toss with 1/4 cup butter until the noodles are well coated.
  • In a medium bowl whisk together milk, eggs, sugar, vanilla and salt until well combined, then whisk in sour cream.
  • Stir in cottage cheese and pineapple, then add to the cooked noodles; mix with a wooden spoon to combine well.
  • Transfer to buttered baking dish.
  • In a bowl, mix together cornflakes crumbs, sugar and cinnamon.
  • Sprinkle over the noodles in the dish.
  • Dot with butter.
  • Bake for about 1 hour or until the edges are golden brown and the kugel is set.
  • Let stand for 10 minutes before slicing and serving.

3/4 cup margarine or 3/4 cup butter, unsalted
1/4 teaspoon salt (optional)
2/3 cup sugar
4 cups matzo farfel
2 (15 ounce) cans crushed pineaple in juice, drained
6 eggs
2 teaspoons cinnamon

Steps:

  • Mix eggs in a small bowl.
  • Put the margarine into a 9 X 13 inch pan and put into oven. When it is melted take out pan, swirl the margarine around in the pan making sure the pan is well greased. Pour the melted margarine into a large bowl and set aside.
  • Place a colander in the sink. Put the farfel in the colander and run warm water over the farfel. When the farfel starts to soften, turn the water off. Shake the excess water out. Dump the farfel into the large bowl with the melted margarine. Mix gently, using a rubber spatula.
  • Pour the sugar and the drained pineapple into the mixing bowl and mix gently.
  • Pour the beaten eggs in and mix gently. Add the cinnamon and mix.
  • Pour into prepared pan. Sprinkle the top with additional cinnamon.
  • Bake at 350 degrees for 1 hour or until slightly golden browned.

1 1/4 cups non-dairy coffee creamer
4 eggs
1 cup carrot, shredded
1 (20 ounce) can crushed pineapple, undrained
6 tablespoons margarine, melted

1/2 cup sugar

Steps:

  • Preheat oven to 350°F and spray an 13' X 9" baking dish with non-stick cooking spray.
  • Cook noodles 3-4 minutes in boiling, salted, water or as directed on package.
  • Transfer to a colander and run cold water through; drain well.

1 c unsalted butter, melted and cooled
1/4 tsp salt (optional)
1-1/2 c sugar
1 can(s) matzo farfel, toasted in 325 degree oven for 3 minutes
1 can(s) (20 ounce), crushed pineapple in juice
6 eggs
2 tsp cinnamon

Steps:

  • 1. Toast farfel on a cookie sheet. Mix eggs in a small bowl. Grease a 9 X 13 inch pan very well. Pour the melted butter into a large bowl .
  • 2. Place a colander in the sink. Put the farfel in the colander and run hot water over the farfel. When the farfel starts to soften, turn the water off. Shake the excess water out. Dump the farfel into the large bowl with the melted butter. Mix gently.

My MIL found this recipe in her Mother's handwriting in a recipe file. It isn't very sweet and I will add 1/2 cup sugar next time I make it. I made this for 8 people tonight and while everyone liked it, they all wished it was a bit sweeter. I added some sour cream and some ricotta cheese as well.

1 cup coconut, shredded
1/2 cup butter (or margarine)

  • Boil noodles; drain and place in pyrex baking dish (3 quart).

Steps:

  • Cook noodles as directed on package. Drain and add butter while noodles are still hot. Add remaining ingredients. Pour into baking dish, 13 x 9 x 2. Bake uncovered in 350 oven for 1 hour. (Sometimes I mix everything together the night before and then bake it just before serving time. If you have time, bake it just before you come to my house so it will still be warm when you get here. Then it will be easy to zap in the microwave to make it really hot just before we eat.)

3/4 c sugar

Steps:

  • 1. Prepare noodles according to package directions
  • 2. While noodles cook, combine sour cream, ricotta cheese, butter, sugar, vanilla and eggs in large mixing bowl, blending until smooth and creamy
  • 3. Preheat oven to 350
  • 4. Drain noodles and add to creamed mixture, mix well
  • 5. Fold in oranges, pineapple and raisins
  • 6. Spread noodle mixture in a 12x8x2 baking dish. Sprinkle with cinnamon
  • 7. Bake for 45 minutes or until browned crust forms on edge
  • 8. Serve warm
