Number Of Ingredients 17

6 habanero peppers (all but stem) (very finely minced)
8 clove garlic (very finely minced)
1 small onion (very finely minced)
3 can(s) crushed pineapple (including juice)
2 1/2 c brown sugar
1 c apple cider vinegar
1 c lemon juice
6 large cans, tomato paste
5 can(s) water
1 1/2 Tbsp canning salt
1 1/4 tsp ground black pepper
1 tsp ground cloves
2 tsp garlic powder
1/2 c dark molasses
1/3 c corn syrup, light
1/3 c each: tabasco sauce and worchestershire sauce
1 large lemon (zest and juice)

Steps:

  • 1. Put all ingredients in a large stainless steel kettle. Bring to a rolling boil, stirring constantly on medium-high heat. Turn the heat down and simmer on low heat for 30 minutes, stirring constantly. Bring it back up to a boil that can not be stirred down. Turn off heat.
  • 2. Ladle quickly into sterilized pint jars leaving 1/4 inch head space. Remove bubbles. Wipe rims. Place lids and rings, tighten to fingertip tight.
  • 3. Place jars in boiling bath, put the lid on canning kettle. Bring to a boil for 30 minutes. Remove the lid, wait 5 minutes. Remove jars to a towel lined surface to sit and cool for 24 hours before moving to store them in pantry. Check jars to make sure they sealed before moving them.
  • 4. *** Be sure and taste this several times to get the flavor you like, add or take away pepper and spices as desired. *** This is very good on burgers, chicken, beef and pork... especially when grilled. I wouldn't serve this to children.

Pineapple-Mango Ketchup Recipe - Chili Pepper Madness image

A recipe for homemade pineapple-mango "ketchup" made with spicy chili peppers, fresh fruit, tomato and seasonings. Use in place where you normally use ketchup, but it's also great as a sauce. Super easy to make.

Number Of Ingredients 13

2 tablespoons olive oil
1 cup chopped onion
1 cup chopped peppers ( I used jalapeno peppers but add in hotter if you'd like, such as habaneros or ghost)
4 cloves garlic (minced)
6 ounces tomato paste
1 cup chopped pineapple
1 cup chopped mango
1 cup chopped tomato
3 tablespoons red wine vinegar
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon sugar (or more to your tastes)

Steps:

  • Heat oil in a large pan and cook down onion and peppers about 5 minutes.
  • Add garlic and cook another minute.
  • Add tomato paste and stir. Cook down a minute or two.
  • Stir in the pineapple, mango and tomato. Cook it down about 15 minutes, or until the mixture is softened and begins to break down.
  • Stir in the vinegar, cayenne, salt, pepper, and sugar. Cook another 5 minutes.
  • Cool the mixture, then process it until smooth in a blender or food processor.
  • You can serve it as is, or strain it through a fine sieve for more of a "ketchup" consistency.
  • Store in airtight containers in the fridge.

3 tablespoons vegetable oil
2 shallots, sliced thin
2 teaspoons ginger, minced
1/4 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1 teaspoon garlic, minced
1/4 pineapple, peeled and chopped
1/4 mango, peeled and chopped
1/4 cup cider vinegar
1/4 cup pineapple juice
5 tablespoons brown sugar
2 tablespoons lime juice

Steps:

  • Heat medium saucepan over high heat.
  • Heat vegetable oil and add shallots, ginger, cloves, cinnamon and garlic.
  • Reduce heat to medium and cook for 2 minutes, stirring often.
  • Add the pineapple, mango, cider vinegar, pineapple juice, brown sugar and lime juice.
  • Bring to boil and reduce to a simmer.
  • Simmer for 10 to 15 minutes.
  • Remove from heat and puree in blender or food processor.
  • Strain and let cool.
