PINEAPPLE GRILLED CHEESE/ CHIVE GRILLED CHEESE SANDWICHES

Steps:
- Prepare bread by spreading one side of 2 slices of each type of bread with butter. Use a fork to mix cheddar cheese and cream cheese;blend well. Divide mixture into 2 equal parts and place in small mixing bowl. --- Chive & Cheese: To one of the bowl add the chives and paprika. Spread a generous portion on the unbuttered white slice and spread evenly. Place buttered white slice on top of the filling. Place the sandwich buttered side down in a skillet, Butter top of the bread in the skillet. --- Pineapple & Cheese: To the second bowl add the pineapple and brown sugar, mixing well to blend. Spread a generous portion on the unbuttered side of wheat bread. Place buttered side of bread on top of filling, and place in skillet buttered side down. Butter top of bread. --- Brown both sandwiches in skillet until golden brown on bottom then gently flip over and brown other side. --- Any left over filling is great used as a dip for crackers or chips too.
SHEET-PAN HAWAIIAN PINEAPPLE GRILLED CHEESE
This sheet-pan grilled cheese will feed a crowd! Ham, cheese and pineapple are sandwiched between two layers of flaky crescent dough in this twist on an old favorite.

- Gather your ingredients.
- Heat oven to 375°F. Unroll 1 can dough; press into ungreased 13x9-inch cookie sheet.
- Top dough with even layer of ham.
- Sprinkle mozzarella cheese over ham.
- Evenly place pineapple over top of cheese.
- Unroll second sheet of crescent dough; place over top. Press around edges of dough to seal.
- Brush melted butter over top of crescent dough; sprinkle with Parmesan cheese.
- Bake about 25 minutes or until golden brown. Cool 5 minutes before cutting into 12 pieces.

- On the sandwich bread, layer cheese, ham, pineapple, basil and a second slice of cheese; top with remaining bread.
- Melt the butter in a heavy skillet over medium heat.
- When butter is melted, place sandwich in skillet and cook until golden, 2 to 3 minutes.
- Flip the sandwich and cook another 2 to 3 minutes or until second side is golden and cheese is melted.
- Enjoy!
