1 (21 ounce) can cherry pie filling
1 (18 ounce) package yellow cake mix
3/4 cup butter, melted
3/4 cup shredded coconut
1 cup pecans, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Spoon pineapple evenly over bottom of 9 X 13 pan.
  • Cover the pineapple with cherry pie filling.
  • Pour the dry cake mix evenly over fruit mixture so that it reaches all sides of the pan.
  • Drizzle entire surface with butter.
  • Sprinkle coconut and pecans evenly over top.
  • Bake until cake is deep brown and a toothpick comes out clean, 55 to 60 minutes.
  • Let cool and serve with ice cream or whipped cream.

For shell
1 stick (1/2 cup) unsalted butter
4 cups coarsely broken gingersnaps (about 3/4 of a 16-ounce box)
1/3 cup sugar
3 cups pie weights or raw rice for weighting shell
1 1/2 pints superpremium vanilla ice cream
For pineapple sauce
1 ripe pineapple (preferably Del Monte Gold)
1/2 cup sugar
Special equipment:
a 10- by 1-inch round fluted tart pan with a removable bottom

Steps:

  • Make shell:
  • Preheat oven to 350°F.
  • Melt butter. In a food processor grind gingersnaps to fine crumbs and add butter and sugar, pulsing until blended.
  • Sprinkle 1 cup (not packed) crumb mixture over bottom of tart pan and press with an offset spatula. Sprinkle 1/2 cup crumb mixture around edge of pan and with your fingers press up side of pan. Carefully line shell with foil, folding over edge to cover crumbs completely, and add pie weights or raw rice. Sprinkle remaining crumb mixture in a shallow baking pan.
  • Bake crumb mixture in lower third of oven 12 minutes and bake shell in upper third 20 minutes. Cool crumb mixture in baking pan on a rack and, when crumbs are cool enough to handle, with your fingers break up any large clumps. Cool shell in foil in tart pan on another rack 15 minutes. Carefully remove foil and weights or rice and cool shell completely (shell may be soft in center but will firm as it cools). Soften ice cream slightly and fold in half of crumb mixture. Spoon ice-cream mixture into shell, smoothing top, and sprinkle with remaining crumb mixture. Freeze tart until ice cream is firm, about 2 hours. Tart keeps, frozen and loosely covered, 3 days.
  • Make sauce:
  • Cut rind from pineapple and quarter pineapple lengthwise. Cut off core and cut pineapple quarters crosswise into 1/4-inch-thick slices. In a dry 2- to 3-quart heavy saucepan cook sugar over moderately low heat, stirring slowly with a fork (to help sugar melt evenly), until melted and pale golden. Cook caramel, without stirring and gently swirling pan, until golden. Remove pan from heat and add pineapple (mixture will vigorously steam and caramel will harden). Simmer mixture, stirring, 5 minutes, or until caramel is dissolved, and cool sauce to room temperature. Chill sauce, covered, at least 2 hours and up to 5 days.
  • Serve tart with sauce.

3 tablespoons sugar
1 tablespoon cornstarch
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons unsalted butter
1 cup old fashioned oatmeal
1/4 cup brown sugar, packed

Steps:

  • Preheat the oven to 350F. Toss together the diced fruit in an 8" square baking dish. In a small dish, whisk together 3 tablespoons sugar, cornstarch, and 1/4 cup flour. Toss that mixture along with the 3 tablespoons reserved pineapple juice with the diced fruit. In a medium bowl, whisk together the remaining 1/4 cup flour, baking powder, salt, and brown sugar. Add the cold butter cubes and use a fork or pastry cutter to break the cold butter into the flour mixture. Add the oatmeal and toss together. Pour the oatmeal mixture over the prepared fruit. Place in the oven and bake 30 to 35 minutes, or until juices from the fruit bubble up around the sides of the pan. Remove the crumble from the oven and let cool 15 minutes before serving

1 tablespoon lemon juice
1 cup crushed pineapple, drained
2 cups cranberry sauce
1 cup quick cooking oats
¾ cup packed brown sugar
½ cup all-purpose flour
½ teaspoon ground cinnamon
salt to taste
⅛ cup butter

Steps:

  • Toss apple slices with lemon juice. Place in a 10 x 6 x 1 1/2 inch baking dish. Spoon pineapple evenly over apples, then cover with cranberry sauce.
  • Mix oats, brown sugar, flour, cinnamon, and salt. Cut in butter or margarine till crumbly. Sprinkle over fruit.

1 small pineapple, about 1-1/2 to 2 lb, peeled, quartered, and diced (core chopped and reserved)
1 tablespoon butter
4 tablespoons sugar, divided
1 teaspoon vanilla
1 tablespoon lemon juice
1 tablespoon dark rum (or Grand Marnier)
1 teaspoon cornstarch (mixed with 2 tsp water)
1 1/4 cups flour
1/3-1/2 cup sugar (depending on sweetness of pineapple)
1/2 teaspoon vanilla
1/4 cup butter, cut into fine dice

Steps:

  • Weight the diced pineapple and reserve 1 lb for the crumble. Process enough of the remaining pineapple, including the chopped core, in a food processor or juicer to obtain 1/4 cup juice, saving remaining juice for another use.
  • Heat butter in a large saucepan and add the reserved 1 lb pineapple, 3 T of the sugar and vanilla. Saute over medium heat for 5 minutes. Transfer to a bowl. Place the reserved 1/4 cup pineapple juice, remaining 1 T sugar, lemon juice, rum and cornstarch mixture in a small saucepan.
  • Cook over low heat, stirring constantly, until mixture thickens and clears. Add juice mixture to cooked pineapple and stir well to mix.
  • To make crumble topping: Combine flour, sugar, vanilla and butter in a food processor. Pulse until mixture resembles bread crumbs; do not over mix.
  • Preheat oven to 350. Transfer cooked pineapple mixture into a large dish. Sprinkle with the crumb topping and bake until golden brown, about 30 - 40 minutes.
  • Serve warm.

4 cups rhubarb, chopped
2 tablespoons cornstarch
1/2 cup sugar
1/2 cup Splenda granular
2 (8 ounce) cans crushed pineapple, drained
1/2 cup brown sugar
1/4 cup Splenda granular
1/2 cup flour
1/4 cup old fashioned oats
3 tablespoons butter, cold

Steps:

  • Preheat oven to 350.
  • Combine rhubarb and cornstarch, set aside.
  • Roll out pie crust into 8 inch pie plate.
  • Pour rhubarb and cornstarch mixture into prepared crust.
  • Combine sugar and Splenda; sprinkle over rhubarb mixture.
  • Top evenly with drained pineapple.
  • Prepare Topping: combine sugars, flour and oats, then cut in butter using a pastry cutter until mixture resembles coarse crumbs.
  • Sprinkle topping over pineapple.

Steps:

  • Combine the apple slices, raisins, drained pineapple and sprinkle with the lemon and pineapple juices.
  • Toss lightly with a mixture of 1/8 C each of white and brown sugar and 1/4 t of cinnamon.
  • Put into a large casserole dish and bake at 350 degrees for 15 minutes.
  • In a medium size bowl (while the apples are starting their cooking), mix the dry crumb topping ingredients together, then moisten with the melted butter.

Her very same shortbread recipe stuck to my pan...And even the dough was near tasteless. So I just added too it, and changed the filling! I made these for my friends parents, and snuck them...

2 stick unsalted butter (room temp)
3/4 c sugar
1 tsp vanilla
2 1/3 c flour
1/2 tsp salt
10 -12 oz pineapple jam or preserves
CRUMBLE TOPPING
1/3 dough (refer to recipe)
2/3 fruitless granola (usually found in the bulk section)

Steps:

  • 1. Cream the butter and sugar together until thoroughly combined.
  • 2. Sift the flour and salt together and mix. Then add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds (Reserving 1/3 of the dough) of the dough evenly on the bottom of a 9-inch square baking pan. Spread with the jam. Then, Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface.
  • 3. Bake bars for about 45 mins at 350. or until lightly browned.
  • 4. Cool for about 2 hours, then cut into 6 bars (or smaller if preferred. And enjoy!! :)

16 ounces canned pineapple chunks, drained, with juice reserved
1 cup fresh pomegranate seeds, free of white pith
1/8 teaspoon ground cinnamon
1 pinch ground cloves
2 tablespoons granulated sugar
2 tablespoons dark brown sugar
2 tablespoons raw sugar
3 tablespoons flour
2 tablespoons unsalted butter, plus extra to coat pan
2 tablespoons corn flakes, with
1/4 teaspoon sugar, added (I substituted Frosted Flakes)

Steps:

  • Preheat the oven to 375.
  • In a bowl, mix together the drained pineapple, pomegranate seeds, cinnamon, cloves, and 1 tablespoons each of the 3 sugars. Add 1 tablespoons of the reserved pineapple juice and set this mixture aside.
  • In another bowl, cream the flour and butter with 1 tablespoons each of the 3 sugars. Further mash the mixture into a coarse meal with a fork. Add the Frosted Flakes (or corn flakes plus sugar) and mash together.
  • Butter a shallow, 6-inch baking dish. Spoon in the fruit mixture and spread evenly. Top with the flour/corn-flake mixture. Cover with foil and bake for 45 minutes. Remove foil for the last 5-10 minutes to brown the crust. If needed, increase heat to 400 and bake an additional five minutes unti lthe crust is golden brown and bubbly. Let cool for several minutes before serving warm.

4 ounces sugar
6 slices tinned pineapple

  • Preheat your oven to gas mark 5/6.
  • Weigh your butter and put it in a large bowl.
  • Chop it into small pieces.
  • Sift in the flour and rub the butter and flour between your fingers until it resembles breadcrumbs.
  • Pour in the sugar and mix in well.
  • Chop your fruit into small squares and placethem all into the container.
  • Pour your mixture of flour, butter and sugar and top so it covers all the pineapple.
