PINEAPPLE AND BANANA COUSCOUS PUDDING

Number Of Ingredients 10

3/4 cup water
1/2 cup plain couscous
1 tablespoon unsalted butter
1/2 large banana, chopped (about 1/2 cup)
1 tablespoon (packed) golden brown sugar
1 1/2 cups plus 2 tablespoons chilled whipping cream
5 tablespoons sweetened cream of coconut (such as Coco López)*
1 tablespoon triple sec
1/2 cup candied pineapple, minced
1 1/2 cups diced peeled fresh pineapple

Steps:

  • Bring 3/4 cup water to boil in heavy medium saucepan over high heat. Stir in couscous. Remove from heat. Cover and let stand until water is absorbed, about 15 minutes. Fluff with fork.
  • Melt butter in small nonstick skillet over medium-high heat. Add banana and sugar and sauté until banana is soft, about 1 minute. Cool.
  • Using electric mixer, beat cream in large bowl until soft peaks form. Fold in cream of coconut and triple sec. Reserve 6 tablespoons whipped cream mixture for topping. Fold candied pineapple, couscous, and banana into remaining whipped cream mixture in large bowl. Divide mixture among 6 parfait glasses or dessert bowls. (Can be made 4 hours ahead. Cover whipped cream mixture and puddings separately and refrigerate.)
  • Top each pudding with some of reserved whipped cream mixture. Sprinkle each with fresh pineapple and serve.
  • Cream of coconut is available in the liquor section of most supermarkets.

1 (15 ounce) can pineapple chunks, drained (juice reserved)
1 cup couscous
1 (15 ounce) can black beans, rinsed and drained
⅓ cup warm water
2 tablespoons taco seasoning mix

Steps:

  • Combine 1/2 cup water and reserved pineapple juice in a saucepan over medium-low heat; bring to a boil and immediately remove from heat. Stir couscous into the liquid to coat. Set aside until the liquid is absorbed and the couscous is tender, about 5 minutes; fluff with a fork. Divide onto 2 plates.
  • Stir pineapple chunks and black beans together in a skillet over medium heat. Mix 1/3 cup warm water and taco seasoning mix in a small bowl; pour over the black bean mixture. Cook and stir the mixture until hot, 5 to 7 minutes. Spoon over couscous to serve.

1 cup uncooked couscous
1 can (20 ounces) pineapple tidbits, drained
1 can (4 ounces) chopped green chilies, drained
1/4 cup chopped pecans, toasted
3 green onions, chopped
2 tablespoons olive oil
1 tablespoon minced fresh mint
1 garlic clove, minced
4-1/2 cups baby spinach

Steps:

  • In a small saucepan, bring broth to a boil. Stir in couscous. Cover and remove from the heat; let stand for 5 minutes. Fluff with a fork. In a large bowl, combine the couscous, pineapple, chilies, pecans, onions, oil, mint and garlic; toss to coat. Refrigerate until chilled. Serve over spinach.

1/4 teaspoon chicken-flavor instant bouillon
3/4 cup water
1/2 cup uncooked couscous
2 tablespoons sliced green onions (2 medium)
1/4 cup pineapple preserves
2 teaspoons sweet hot mustard
2 boneless skinless chicken breast halves (about 1/2 lb)
2 teaspoons water

Steps:

  • In 1-quart saucepan, heat bell pepper, bouillon and water to boiling over high heat. Remove from heat; stir in couscous. Cover; let stand 5 minutes. Stir in onions; set aside; transfer half of mixtue to a small microwavable bowl.
  • Meanwhile, line broiler pan with foil; spray with cooking spray. Place chicken breast halves on pan. Broil 4 to 6 inches from heat 5 minutes. In small bowl, mix preserves and mustard; transfer half of mixture to a small microwaveable bowl.

1 cup couscous

1 tablespoon lemon juice
Dijon-style prepared mustard
1 tablespoon vegetable oil

Steps:

  • In a large saucepan, bring water, butter and garlic powder to a boil. Turn off heat and stir in couscous. Cover and let stand for 5 minutes. Fluff with a fork and let cool.

Four 4-ounce boneless pork chops, about 1/2-inch thick
Kosher salt and freshly ground black pepper
5 cloves garlic, finely minced
2 tablespoons plus 1 teaspoon olive oil
2 teaspoons finely chopped rosemary, from 1 sprig
2 teaspoons finely minced thyme leaves, from 1 large sprig
1 cup pineapple juice
1/3 cup dry white wine
1 pound fresh pearl onions, peeled, or frozen, thawed and drained
1 tablespoon unsalted butter, softened
1 tablespoon all-purpose flour
Mexican Couscous, recipe follows
1 tablespoon unsalted butter
1 cup dried couscous
2 tablespoons finely chopped fresh cilantro
1/4 cup pine nuts, toasted
1 jalapeno pepper, stemmed, seeded, deveined, and finely chopped
Kosher salt

Steps:

  • Generously sprinkle the pork chops on both sides with salt and pepper. In a medium bowl, stir together the garlic, 2 tablespoons of the olive oil, the rosemary and thyme until combined. Rub the mixture evenly on both sides of the pork chops and let stand for 5 minutes.
  • Heat the remaining 1 teaspoon oil in a large heavy skillet over medium-high heat. Sear the pork chops on each side until golden brown, about 4 minutes per side. Reduce the heat to medium, add the pineapple juice, wine and pearl onions. Cover and simmer until the pork chops are cooked through, about 8 minutes.
  • Using a slotted spoon, transfer the pork chops and onions to a serving platter and cover to keep warm. In a small bowl, mash the butter and flour together with a fork until it forms a paste; whisk the paste into the simmering liquid and cook for about 1 minute, until the sauce is thickened. Taste and adjust the seasoning with salt and pepper and drizzle it over the pork chops just before serving. Serve with Mexican Couscous.
  • In a small saucepan, bring 1 cup water and the butter to a boil over medium-high heat. Add the couscous, swirl the pan to evenly incorporate it, remove from the heat, cover, and let stand for 5 minutes.
  • Add the cilantro, pine nuts and jalapenos to the couscous, and fluff it with a fork until evenly combined. Season with salt and transfer the couscous to a serving dish. Serve immediately.

FISH ON PINEAPPLE PLANKS WITH COUSCOUS

Zest and juice from 1 lime
1 tablespoon vegetable oil
1 teaspoon agave nectar or honey
1 jalapeno, thinly sliced
Salt and pepper
8 1/4-inch-thick pineapple rounds (from 1 pineapple)
4 skinless fillets white flaky fish, such as tilapia or halibut (about 5 ounces each)
1 cup couscous

Steps:

  • Heat broiler. Arrange pineapple rounds on a rimmed baking sheet in pairs, overlapping slightly, to form planks. Lay a fillet on each pineapple plank and season with salt and pepper. Broil until pineapple is browned at edges and fish is opaque throughout, 5 to 7 minutes.
  • Meanwhile, cook couscous according to package instructions. Add lime zest and fluff with a fork. Stir together lime juice, oil, agave nectar, and jalapeno; season with salt and pepper. Drizzle fish and pineapple with lime dressing and serve with couscous.

ORANGE-PINEAPPLE COUSCOUS

I love couscous and the combination of pineapple, mandarin oranges and soy sauce sounds great! I may even reverse the juice from orange to pineapple.

1/4 cup cilantro, freshly chopped
2 tablespoons basil, freshly chopped

Steps:

1 cup diced red pepper
1 cup pineapple tidbits

  • Bring chicken broth (or water) to boil in medium saucepan.

2 1/4 c orange juice
1 1/2 tsp ground cumin
