  • Chill a martini glass in the freezer. Fill a cocktail shaker with ice. Add the pineapple juice, vodka, orange liqueur, and lime juice. Cover and shake vigorously, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.)
  • Scatter some turbinado sugar onto a small plate, wet the rim of the glass and dip into sugar. Strain the drink into the chilled glass. Skewer the pineapple and cherry and drop into the cocktail. Cheers.

1 cup catsup
1 cup grape jelly
3 tablespoons lemon juice
3 tablespoons prepared mustard
1 (20 ounce) can pineapple chunks, drained
2 (16 ounce) packages cocktail franks or 2 (16 ounce) packages hot dogs

Steps:

  • If using full-sized dog/franks, cut them into one-inch pieces.
  • Over low heat, simmer catsup, jelly, lemon juice, and mustard together for about 3 minutes, stirring to mix well.
  • Add"dogs" (whatever meat you select) and pineapple chunks and continue to simmer for about 15 minutes, or until"dogs" are hot.
  • To serve, pour mixture into fondue pot or chafing dish to keep it hot during party serving period.
  • Serve with toothpicks for spearing these tasty morsels.
  • NOTE: Any dogs and sauce left in the cooking pot (not served) can be frozen to use for another party!
  • VARIATION: This sauce is also delicious with meatballs.
  • MAKE-AHEAD: These can be made up to 3 days before a party and refrigerated until time to reheat them.
  • Or they can be frozen for up to 2 months before reheating.

3 tablespoons agave nectar or honey
1 cup pineapple juice
2 cups fresh or frozen pineapple cubes
1/4 cup triple sec
1/3 cup tequila

1 1/2 teaspoons chili powder
1 1/2 teaspoons sugar
1/2 teaspoon coarse salt

Steps:

  • Stir together lime juice and agave nectar; add to a blender, along with pineapple juice, pineapple, triple sec, tequila, and ice. Blend until smooth and frothy.
  • In a small shallow bowl or saucer, combine chili powder, sugar, and salt. Rub a lime wedge around the rims of 4 glasses, then dip glasses in spice mix to coat. Divide drink among glasses and serve with lime wedges.

  • Spray 2 1/2- to 3 1/2-quart slow cooker with cooking spray. In slow cooker, mix pepper jelly, brown sugar, barbecue sauce and pineapple. Stir in sausages.
  • Cover; cook on Low heat setting 3 hours.

1 1/4 cups sugar
1 pineapple, peeled, cut into 1 1/2-inch pieces
6 tablespoons distilled white vinegar
1/4 cup dried hibiscus flowers
1 jalapeño, thinly sliced into rounds
5 sprigs mint
1 lime, thinly sliced into wheels
2 cups tequila
1 cup fresh lime juice

Steps:

  • Bring sugar and 1 cup water to a boil in a medium saucepan and cook, stirring, until sugar dissolves, about 3 minutes. Add pineapple, reduce heat, and simmer 10 minutes. Remove from heat and let sit 30 minutes to infuse syrup with pineapple flavor. Strain into a small bowl; stir in vinegar. Cover and chill shrub until cold, about 30 minutes. Cover and chill pineapple pieces until ready to use.
  • Meanwhile, place hibiscus in a small bowl and pour 1 1/4 cups boiling water over. Cover and let steep 10 minutes. Strain tea into an airtight container; discard flowers. Cover tea and chill until cold, about 30 minutes.
  • Set aside 8 slices jalapeño and 8 pieces pineapple for serving. Stir mint, lime wheels, tequila, lime juice, remaining jalapeño and pineapple, 1 cup shrub, and 1 cup tea in a large pitcher and chill at least 1 hour.
  • Serve in ice-filled rocks glasses garnished with reserved jalapeño slices and pineapple pieces.
  • Cocktail can be mixed 6 hours ahead. Keep chilled.

LA PINA (MEZCAL COCKTAIL WITH PINEAPPLE AND CILANTRO)

1/2 oz. [15 ml] fresh lime juice
1 pineapple leaf for garnish

½ cup dark brown sugar
1 medium pineapple, skin removed cut into 1/2 in (1 1/4 cm) rounds
1 cup fresh mint leaf, loosely packed
½ cup fresh lime juice, plus 2 tablespoons
4 cups cachaca
2 cups pineapple juice
8 cups ice

Steps:

  • Make the brown sugar simple syrup: In a small saucepan over medium heat, combine the cold water and brown sugar. Bring to a simmer, then cook until the sugar is dissolved, 5-7 minutes. Remove the pot from heat and let the syrup cool completely.
  • Heat a griddle pan over medium-high heat. Working in batches, grill each slice of pineapple for 2-3 minutes per side, until beginning to caramelize and grill marks appear. Let cool. Once cooled, cut each round into 6 wedges.
  • While the pineapple cools, make the cocktail: In a tall glass, muddle the mint leaves and lime juice.
  • In a large punch bowl, combine the cachaça, pineapple juice, and brown sugar simple syrup. Mix in the muddled mint leaves and lime juice.
  • Immediately before serving, stir in the ice and grilled pineapple wedges, reserving some for garnishing the glasses.
  • To serve, pour into glasses and garnish with grilled pineapple wedges.
