"EVERYONE seems to love this dessert, perhaps because it's not too sweet. A cousin gave me the recipe long time ago, much to the delight of my children, who always enjoyed it. It's light and delicious."

1/2 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt
1/4 cup cold butter
FILLING:
1 can (8 ounces) crushed pineapple
1 package (8 ounces) cream cheese, softened
3 tablespoons sugar
1 tablespoon all-purpose flour
1 large egg, lightly beaten
1 cup milk
1 teaspoon vanilla extract
Ground cinnamon

Steps:

  • In a bowl, combine the flour, sugar and salt; cut in butter until mixture is crumbly. Press into an ungreased 8-in. square baking dish. Bake at 325° for 12 minutes. Cool on a wire rack. , For filling, drain pineapple, reserving the juice; set pineapple and juice aside. In a large bowl, beat the cream cheese, sugar and flour. Add egg; beat on low just until combined. Add pineapple juice. Gradually add milk and vanilla. Sprinkle pineapple over crust. Slowly pour filling over pineapple. Sprinkle with cinnamon. , Bake at 325° for 1 hour or until a knife inserted in the center comes out clean. Cool on wire rack for 1 hour. Store in the refrigerator.

For the Crust:
2 cups all-purpose flour
12 tablespoons butter ((1 1/2 sticks), slightly softened)
1/2 cup granulated sugar
Dash salt
For the Filling:
12 ounces cream cheese (room temperature)
1/4 cup granulated sugar
2 teaspoons vanilla
2 large eggs
1 large (20 ounces) can crushed pineapple (well-drained)
For the Topping:
1 1/3 cup/3 1/2 ounces coconut (flaked sweetened)
1 cup pecans (finely chopped)
4 tablespoons butter (melted)

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Lightly grease a 9-by-13-by-2-inch baking pan or spray with baking spray.
  • In a medium bowl, combine flour, 1/2 cup sugar, and dash of salt.
  • With a pastry blender or fork, cut in the 12 tablespoons of butter until crumbly.
  • Spread evenly over the bottom of the prepared pan and press with hands to form a crust layer.
  • Bake the crust in the preheated oven for 12 minutes.
  • Drain pineapple well in a colander; set aside.
  • In a medium bowl, combine cream cheese, 1/4 cup sugar, vanilla, and eggs; beat until smooth.
  • Spread evenly over the baked crust, then sprinkle the drained crushed pineapple evenly over the top.
  • In another bowl, combine the coconut, pecans, and 4 tablespoons melted butter ; sprinkle evenly over the pineapple and cream cheese layer.
  • Bake for 20 to 25 minutes, or until coconut is browned and filling is set.
  • Chill thoroughly before cutting into squares.

CRUST:
1/2 c macadamia nuts, finely chopped
1 1/4 c all purpose flour
1/2 c brown sugar, firmly packed
1/2 c cold butter
1 c flaked coconut
FILLING:
2 pkg (8 oz. each)cream cheese, softened
2/3 c granulated sugar
2 large eggs
2 tsp rum extract or vanilla bourbon extract
21 oz can pineapple pie filling
TOPPING:
1/2 c macadamia nuts, chopped coarsely
1/4 c flaked coconut

Steps:

  • 1. Crust: Combine flour and brown sugar. Cut in butter until fine crumbs form. Add nuts and coconut. Mix well. Press crumb mixture in bottom of buttered 9x13-inch pan. Bake at 350^ for 12-15 minutes until edges are lightly browned.
  • 2. Filling: Beat cream cheese, sugar, eggs and rum extract or bourbon vanilla with electric mixer, until smooth. Spread over hot baked crust. Return to oven and bake another 15 minutes. Spread pineapple pie filling over cheese layer.
  • 3. Topping: Combine nuts and coconut and sprinkle evenly over pineapple. Return to oven and bake 10-15 minutes longer. Cool. Refrigerate overnight. Cut into bars. Keep refrigerated
  • 4. Note: You may want to try other pie filling and combinations too.

1/4 cup granulated sugar
1/2 cup unsalted butter (1 stick softened)
8 ounces cream cheese, at room temperature
1 cup powdered sugar
1 large egg
1/4 cup granulated sugar
1 cup crushed pineapple or 1 (8-ounce) can, drained
1/2 teaspoon pure vanilla extract
1/2 cup white chocolate chips
1/2 cup chopped macadamia nuts

Steps:

  • Preheat oven to 350 degrees F. Combine flour, sugar, and butter until mixture is crumbly. Spread evenly into a 13 by 9-inch baking pan with raised sides. Press down until an 1/8 of an inch thick and bake for 10 to 15 minutes or until edges are golden brown.
  • Mix cream cheese and 1 cup powdered sugar until frosting texture. Add egg, sugar, crushed pineapple and vanilla extract, mix thoroughly. Fold 1/4 cup white chocolate chips and 1/4 cup chopped macadamia nuts reserving 1/4 cup of each. Bake for additional 15 to 20 minutes or until batter is set. Remove from oven, melt reserved white chocolate chips and drizzle on top and sprinkle with 1/4 cup reserved chopped macadamia nuts. Let stand for 1 hour and cut into bars.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1/3 cup butter or margarine, melted
2 tablespoons Gold Medal™ all-purpose flour
1 egg
2 packages (8 oz each) cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla
2 eggs
3/4 cup strawberry spreadable fruit

Steps:

  • Heat oven to 350°F. Spray bottom of 13x9-inch pan with cooking spray.
  • In medium bowl, stir cookie mix, butter, flour and 1 egg until soft dough forms. Press evenly in pan. Bake 15 to 18 minutes or until light golden brown. Cool 15 minutes.
  • In large bowl, beat cream cheese, sugar, vanilla and 2 eggs with electric mixer on medium speed until smooth. Spread evenly over crust in pan.
  • Place spreadable fruit in small resealable food-storage plastic bag; seal bag. Cut off tiny corner of bag. Squeeze spreadable fruit in 3 lines the length of the pan. Use knife to pull spread from side to side through cream cheese mixture at 1-inch intervals. Bake 25 to 30 minutes longer or until filling is set. Refrigerate until chilled, about 2 hours. For bars, cut into 8 rows by 4 rows. Store covered in refrigerator.
