Butter-flavored cooking spray
1/2 cup spreadable honey nut cream cheese
1-1/4 cups sugar, divided
3 cups chopped walnuts
1 package (16 ounces, 14x9-inch sheets) frozen phyllo dough, thawed
1 cup water
1/2 cup honey

Steps:

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray. In a large bowl, mix cream cheese and 1/4 cup sugar until blended. Stir in walnuts., Unroll phyllo dough; trim to fit into pan. Layer 20 sheets of phyllo in prepared pan, spritzing each with cooking spray. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out., Spread with half of the walnut mixture. Layer with five more phyllo sheets, spritzing each with cooking spray. Spread remaining walnut mixture over phyllo. Top with remaining phyllo sheets, spritzing each with cooking spray., Cut into 1-1/2-in. diamonds. Bake 35-40 minutes or until golden brown. Meanwhile, in a saucepan, combine water, honey and remaining sugar; bring to a boil, stirring to dissolve sugar. Reduce heat; simmer, uncovered, 10 minutes. Pour over warm baklava., Cool completely in pan on a wire rack. Refrigerate, covered, until serving.

Pineapple-Cheese Baklava image

1 can (20 oz.) crushed pineapple in syrup
1 pkg (8 oz.) Philadelphia Cream Cheese, softened
1 cup ricotta cheese
1 cup sugar, divided
2 egg yolks
1 tsp grated lemon peel
1 tsp vanilla
1/2 lb frozen phyllo pastry leaves, thawed (8 leaves)
Melted butter
1 tsp lemon juice

Steps:

  • Turn pineapple into strainer, drain, saving syrup. In mixer bowl, combine cream cheese, ricotta, 1/2 cup sugar, egg yolks, lemon peel & vanilla. Blend on medium speed, stir in drained pineapple.
  • Place phyllo leaves between damp towels to keep moist. Place a sheet of pastry in a well-greased 13 X 9 pan. Brush with melted butter. Repeat with 3 more leaves. Spoon on the pineapple cheese mixture & spread smooth. Top with remaining phyllo, brushing each with butter as it is layered. Mark pastry into diamonds with point of sharp knife.
  • Bake in 350 degrees F oven 50 minutes or until golden brown. Combine 1/2 cup pineapple syrup, 1/2 cup sugar, lemon juice, & cook to a thick syrup. Spoon syrup on baklava (one hot other cold).

Number Of Ingredients 12

1 pound thawed filo dough
1 cup melted butter
2 lemons juiced and zested
4 tablespoons honey
2 teaspoons cinnamon
3 cups diced Granny Smith apples
2 cups chopped toasted walnuts
2 cups chopped toasted pistachios
1 1/2 cups sugar
1/2 cup honey
1 pint water
1 lemon rind

Steps:

  • On a sheetpan lined with parchment paper, lay down 1 sheet of filo and brush with butter. Repeat process with 3 more sheets. Cover remaining sheets with damp towel and set aside. To make filling place the lemon juice and zest, honey, cinnamon, apples, and chopped nuts and gently heat for 3 minutes set aside to cool. Spread 1/3 of mixture onto buttered filo stack. Top apple mixture with another stack of buttered filo. Repeat process until mixture and filo is gone (there should be 3 layers). Bake in a preheated 350 degree oven for 1 hour. Mix sugar, honey, water and lemon and bring to simmer. Remove lemon rind and pour over baklava. Let soak overnight, cut into squares and serve.
