1 cup sliced celery, including some leaves
10 ripe olives, sliced
1 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon Splenda sugar substitute or sugar
1 green onion, white and green part, sliced
salt and pepper

A good old standby and another way to get kids to eat some vegetables. Besides, it always looks good on the table especially when the center is filled with green seedless grapes.

1 (85 g) package lime Jell-O gelatin (jelly crystals)
1 cup sour cream
1/2 cup chopped canned pineapple ring
1/2 cup grated carrot
1/2 cup finely chopped celery
1/4 cup finely chopped pecans (optional) or 1/4 cup walnuts (optional)
1 cup boiling water

Steps:

  • Using a large bowl completely dissolve Jello in the boiling water.
  • Mix in sour cream and whisk until there are no lumps.
  • Stir in pineapple, carrots, celery and nuts.
  • Pour into a ring Jello mould.
  • Place in refrigerator and chill for at least three hours.
  • When ready to serve unmould Jello by dipping the bottom in very hot water for a few moments, place a plate over the top and turn upside down.

1 pineapple, peeled and in 1/2 inch small pieces
1 cucumber, small in 1/2 inch small pieces (optional)
4 stalks celery, cut in 1/2 inch pieces
1 -2 green onion, chopped
1 chile, red (optional)
1 teaspoon garlic, crushed
1 tablespoon ginger, fresh, peeled and grated
1/4 cup soya sauce, clear (or 60 ml)
1 1/2 tablespoons vinegar, white
1 tablespoon brown sugar
1 tablespoon fish sauce (optional)
3 tablespoons peanuts, rosted coarsly crushed

Steps:

  • In a big bowl combine all the vegetables.
  • In a separate bowl combine all the ingredients for the sauce.
  • Just before serving add the sauce to the vegetables, toss well and top with the peanuts.

A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. You never know. :) Here is my Grandma's version of Perfection Salad. I understand it is a little different...

PERFECTION SALAD:
2 pkg (6 ounces each) lime jell-o
4 c boiling water
3 c cold water
2 c finely shredded cabbage
1 c finely shredded carrot
1/4 c thinly sliced celery
1 c crushed pineapple, well drained
1 pkg (3 ounces) lemon jell-o (plus water called for on package)
OPTIONAL DRESSING:
1 c mayonnaise or miracle whip
1-2 Tbsp milk, (more or less to your preference)
1-2 Tbsp sugar, (more or less to taste)

Steps:

  • 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
  • 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
  • 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.

1 (3 ounce) package lemon flavored Jell-O® mix
1 (3 ounce) package lime flavored Jell-O® mix
4 cups boiling water
1 tablespoon apple cider vinegar
2 stalks celery, finely chopped
½ cup chopped pimento-stuffed green olives
2 carrots, peeled and grated

Steps:

  • In a large bowl, stir together the lemon gelatin mix, lime gelatin mix, and boiling water until gelatin has dissolved. Stir in the apple cider vinegar, cover, and refrigerate for about 1 hour to thicken.
  • When the gelatin is thick but not set, stir in the celery, olives, and carrot so they are evenly dispersed throughout. Pour into a 1 quart mold and refrigerate until firm, at least 3 hours. To serve, unmold onto a plate.

1 can (8 ounces) unsweetened pineapple slices
1 tablespoon olive oil
1 tablespoon honey
1-1/2 teaspoons cider vinegar
1-1/2 teaspoons reduced-sodium soy sauce
6 cups torn romaine
1/2 cup thinly sliced red onion

Steps:

  • Drain pineapple, reserving juice. Cut slices in half; set aside. In a jar with a tight-fitting lid, combine the oil, honey, vinegar, soy sauce and reserved pineapple juice; shake well. , Refrigerate for at least 30 minutes. Combine the romaine, onion slices and pineapple slices in a serving dish. Drizzle with dressing; toss to coat.
