2 cups baby carrots
1 can (20 ounces) pineapple chunks, undrained
4 teaspoons cornstarch
1/2 teaspoon ground cinnamon
1/2 cup packed brown sugar
1 tablespoon butter

Steps:

  • In a saucepan, bring 1 in. of water to a boil; place carrots in a steamer basket over water. Cover and steam for 8-10 minutes or until crisp-tender. Drain pineapple, reserving juice; set pineapple aside., In a saucepan, combine cornstarch and cinnamon. Add the brown sugar, butter and reserved juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the carrots and pineapple; heat through.

1 tablespoon butter
1/2 teaspoon cinnamon
1/8 teaspoon cardamom
1/2 cup canned pineapple chunk, drained

Steps:

  • Place carrots in a saucepan with water and boil until cooked to your liking.
  • Meanwhile, in a separate saucepan over medium heat, mix honey, butter, cinnamon, cardamom, and pineapple chunks and stir until butter has melted and sauce is heated through.
  • Drain carrots and add to the honey sauce and mix to coat.
  • Serve warm.

1/4 teaspoon ground nutmeg

2 1/2 tablespoons brown sugar, firmly packed
1/2 cup pineapple juice, reserved
1/2 teaspoon curry powder
1/8 teaspoon salt
3 cups carrots, finely shredded

Steps:

  • Drain pineapple, reserving 1/2 cup of the juice.
  • In a large nonstick skillet, combine brown sugar, reserved pineapple juice, curry powder, and slat.

  • 1. Put carrots into slow cooker
  • 2. Mix together preserves and dried onion soup mix and spoon on top of carrots
  • 3. Add in pecans
  • 4. Cook on low for 4 to 6 hours. Note: four-hour cooking time will give you a firmer carrot. Six-hour cooking time will give you softer carrots.
