Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 9 inch square baking pan.
- In large mixing bowl, cream shortening and brown sugar. Add eggs, pineapple and rum, mix well. In separate bowl, mix together the flour, baking powder and salt. Slowly add to egg mixture and beat until well blended. Blend in coconut and spread batter evenly in bottom of pan.
- Bake 25 to 30 minutes. Let cool on wire rack before cutting into bars.

Steps:
- To Make Pineapple Filling: Mix 1 cup crushed pineapple and juice (8 1/4-ounce can), 1 cup sugar, 2 1/2 Tablespoons cornstarch, 1 Tablespoon butter, and 1 cup water in saucepan. Cook until thickened, cool.
- Preheat oven to 400 degrees F (200 degrees C).
- Cream together shortening and sugar thoroughly. Stir in flour, baking soda and salt. Mix in rolled oats. Press and flatten half of the mixture over bottom of a 13 x 9 1/2 x 2 inch greased pan. Spread with cooled filling.
- Top with remaining crumb mixture, patting lightly. Bake 25 to 30 minutes, or until lightly browned. While warm cut into bars and remove from pan.

- Preheat oven to 350°. In a large saucepan, combine rhubarb, pineapple, brown sugar, 1 tablespoon water and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until rhubarb is tender, 4-5 minutes., In a small bowl, mix cornstarch and remaining water until smooth; stir into rhubarb mixture. - Preheat oven to 350 degrees; lightly grease a 13x9-inch baking pan.
- In large bowl, combine 2 1/2 cups flour, coconut, brown sugar, and baking soda.
- Using a pastry blender, cut in 1/2 cup butter until mixture is crumbly.
- Reserve 1 cup crumb mixture for topping.
- Press remaining crumb mixture evenly into bottom of prepared pan.
- Bake for 10 minutes.
- In medium bowl, beat remaining 1/2 cup butter and sugar at medium speed with an electric mixer until creamy.

ELSIE'S PINEAPPLE OATMEAL BARS
A sweet lady at the church I attended growing up used to make these for potlucks and church dinners. She once gave me the recipe on a card, which I've long since misplaced, but I had copied the recipe into another cookbook and have made it many times. Every time I take these bars somewhere, people ask for the recipe. They're also great made with zucchini pineapple (the recipe is also posted here on the zaar, by another chef). I like to cut the sugar down by at least 1/4 cup, because the pineapple is sweet enough, and I've always made these with real butter. Quick oats or old-fashioned will work, but the old-fashioned does make it a little more challenging to press the crust into the pan. I intend to try a mixture of the two at some point, but haven't ever done it. These would be great for a bake sale, potluck, or gifts. The crust does tend to be a little soft, so I'd be sure to package with something firm underneath, rather than just wrapping in plastic. I've seen other recipes that add nuts, coconut, etc. I'm sure that would be great as well, but this is just the basic, buttery, oatmeal and brown sugar crust and topping. Yum!

- For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
- For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
- Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.

- 1. First set your oven at 350 degree so it can warm up. In a medum bowl combine flour, oats, brown sugar and baking soda. Set aside.
- 2. In a small saucepan, melt the 1/2c of butter. Heat should be on the lowest setting so not to burn the butter. No browning.
- 3. In a stand or had mixer on medium speed, combine all ingredients together. Mixture should be crumbly. In a 9x9 square pan add 1 1/2 cups of crumble to the bottom of the pan, then press it down. Strain canned pineapple. Add fruit to the top of mixture. Sprinkle 1 tbsp. of Dark Brown Sugar over pineapple. Pour the rest of the oat mix on top. Press down slightly. Bake for 10-15 mins. Make sure that the to is a golden brown. Remove from oven and let cool. ENJOY!!!

- 1. Cream the butter and sugar together until thoroughly combined.
- 2. Sift the flour and salt together and mix. Then add to the butter mixture, mixing until it almost comes together in a ball. Turn the dough out on a board. Lightly pat two-thirds (Reserving 1/3 of the dough) of the dough evenly on the bottom of a 9-inch square baking pan. Spread with the jam. Then, Mix the granola into the remaining dough with your hands. Break the dough into small bits and distribute it on top of the jam, covering most of the surface.

- 1. Preheat oven to 350 degree F. Lightly grease a 13x9-inch baking pan or spray with baking spray.
- 2. In a medium bowl, combine flour, 1/2 cup sugar, and dash of salt. With a pastry blender or fork, cut in the 12 tablespoons of butter until crumbly.
- 3. Spread evenly over the bottom of the prepared pan and press with hands to form a crust layer. Bake for 12 minutes. Drain pineapple well in a colander; set aside

- Cut butter or margarine into flour with pastry blender or two knives.
- Add sour cream and vanilla.
- Mix well and refrigerate 2 hours.

I was looking for pina colada bars without rum, and couldn't find exactly what I wanted: a bar cookie that had 3 layers: cookie, pineapple, and coconut. So I found two recipes and combined them to make what I wanted. (They are Cherry Pineapple Bars and Cherry Macaroon Bars.) I omitted the cherries (marashino - yuck!), and already reduced the sugar to half, since most recipes have too much sugar. It was just right. You may want to adjust to your taste.

Steps:
- Preheat oven to 350 degrees.
- Stir together flour, brown sugar and salt; then cut in the butter - either with two knives or a pastry cutter. (Don't let the butter get too warm.).
- Once the flour/butter mixture gets crumbly, pour it into a 9" x 13" pan and press it inches.
- Bake for 15 minutes, then remove pan from oven and let it cool some.
- In the mean time, combine 1/2 cup sugar and cornstarch in a pot.
- Add pineapple and egg yolks and stir.
- Cook and stir over medium heat until the mixture gets thick and boils slightly.
- Remove from heat and spread on top of the baked crust.
- If you're a multi-tasker, you may be able to work on the coconut mixture in between stirs of the pineapple sauce. Otherwise, do it after.
- In a medium bowl, combine coconut, remaining 1/2 cup sugar, flour and salt.
- Add the egg whites, egg and vanilla extract. (You could substitute almond extract).
- Drop dallops of the coconut mixture and spread evenly over the pineapple mixture.
- Return pan to the oven and bake an additional 30 to 35 minutes, or until lightly browned on top of coconut.
- Cool in pan, then cut into bars. (I couldn't wait, and ended up burning my mouth on the pineapple mixture.).
- Store in a covered container.
PINEAPPLE DREAM BARS
Steps:
- Preheat oven ot 350. In medium mixer bowl, beat butter and 1/3 cup brown sugar. Blend in 1 cup flour until mixture is crumbly. Pat into bottom of 13X9 inch baking pan. Bakein preheated oven 10-15 minutes or until golden. Keep oven hot, but remove pan to cool. Drain pineapple well. In large bowl, beat eggs with remaining 2/3 cup brown sugar until thick. In small bowl, combine reamining 1/3 cup flour, baking powder, cinnamon, nutmeg, and salt. Stir dry ingredients and extract into egg mixture. Fold in pineapple, coconut, nuts and cherries. Spread over baked crust and bake 30 minutes longer. Cool sightly on wire rack before cutting into bars.
