1 fresh pineapple, peeled and cubed
4 medium bananas, sliced
1/4 cup packed brown sugar
2 tablespoons all-purpose flour
TOPPING:
1/3 cup old-fashioned oats
1/4 cup all-purpose flour
2 tablespoons sweetened shredded coconut, toasted
2 tablespoons brown sugar
1/4 teaspoon ground nutmeg
1/4 cup cold butter, cubed

Steps:

  • Preheat oven to 350°. In a large bowl, combine pineapple and bananas. Sprinkle with brown sugar and flour; toss to coat. Transfer to an 11x7-in. baking dish coated with cooking spray., In a small bowl, mix the first 5 topping ingredients; cut in butter until crumbly. Sprinkle over pineapple mixture., Bake 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm or at room temperature.

1 golden pineapple, peeled, cut in half, cored, and sliced into half moons
1/3 cup dark rum
1 cup sliced almonds
3 tablespoons light brown sugar
1/4 teaspoon cinnamon
Pinch ground ginger
3 tablespoons flour
3 tablespoons butter

Steps:

  • Cook and caramelize pineapples in non-stick pan until softened. Add rum and cook off alcohol.
  • Pulse almonds, light brown sugar, cinnamon, ginger, flour, and butter in food processor. Fill 5-inch round gratin dishes with cooked pineapple and top with crisp mixture. Cook in a preheated 400-degree oven until brown and bubbly on top, about 10 to 12 minutes.

While sailing I found myself with a bunch of bananas that were ripening too quickly, so came up with this quick, easy, delicious dessert. It's sophisticated enough to serve to guest!

4 large firm ripe bananas
1 tablespoon lime juice (or lemon juice)
1 tablespoon orange-flavored liqueur (like cointreau)
1/4 teaspoon grated nutmeg
3 tablespoons brown sugar
1/4 cup all-purpose flour
1/4 cup oatmeal
1/4 cup coconut (shredded)
1/4 cup butter

Steps:

  • Preheat oven to 400 degrees.
  • Butter 9 inch pie pan or shallow baking dish.
  • Topping:.
  • In small bowl mix together flour, oatmeal, sugar, coconut and butter.
  • With fingertips, blend the ingredients until the mixture resembles coarse crumbs.
  • In separate bowl combine orange liquor and lime juice.
  • Peel bananas and slice them on the diagnal in 1/4 inch ovals.
  • Arrange the slices in a single overlapping layer and sprinkle with lime juice mixture, nutmeg and brown sugar.
  • Sprinkle topping evenly over the bananas.
  • Bake until the juices are bubbly and the topping is crisp and brown, about 20 minutes.
  • Serve warm with fresh cream, yogurt or ice cream.
