1 pound bacon strips, diced
1 large onion, chopped
3 cans (two 55 ounces, one 28 ounces) baked beans
2 cans (one 20 ounces, one 8 ounces) crushed pineapple, drained
1/2 cup packed brown sugar
1/2 cup ketchup

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels. Drain, reserving 2 tablespoons drippings. Saute onion in drippings until tender. , In a very large bowl, combine the beans, pineapple, bacon and onion. Combine brown sugar and ketchup; stir into the bean mixture., Transfer to two greased 3-qt. or 13-in. x 9-in. baking dishes. Cover and bake at 350° for 20 minutes. Uncover; bake 25-35 minutes longer or until bubbly and beans reach desired thickness.

1/4 cup packed brown sugar
2 tablespoons ketchup
2 teaspoons spicy brown mustard
1 (20 ounce) can pineapple tidbits, well drained

Steps:

  • Preheat oven to 350 degrees.
  • Combine everything but pineapples and pour into a 2 quart casserole or baking dish.
  • Bake for 30 minutes, uncovered.
  • Stir in pineapples and bake 30 minutes more.

2 Tbsp real bacon bits
1 Tbsp dried onions
2 Tbsp brown sugar
1 Tbsp worcestershire sauce
1 tsp mustard, yellow

Steps:

  • 1. Drain pineapple and reconstitute the onions in the pineapple juice.
  • 2. Mix together the beans (do not drain) and sauce with pineapple, bacon bits, brown sugar, Worcestershire sauce, and mustard. Drain the juice off the onions and add them to the beans, mix well.

1 can pork and beans (30 oz)
1 pound ground beef
1 cup onion -- diced
1 can crushed pineapple (large)
1 cup brown sugar -- (to 1 1/2)
2 tablespoons mustard -- (to 3 Tbs)
1 tablespoon worcestershire sauce
2 cups ketchup

Steps:

  • Brown and drain meat and onions. Drain pineapple juice and combine with mustard, worcestershire, brown sugar, ketchup in skillet. Boil until thick. Mix beans, meat and onions, pineapple and sauce together in large pan. Bake at 350 for 1 hour. 1/2 batch will fit into a 9x13 baking dish. NOTE: drain all or some of the liquid from the beans depending on how thick you want the end product to be. If you do not drain at all they will be rather soupy.

  • To make pineapple rings, beat egg well. Mix in the flour and make a thick paste. Dip pineapple slices in the batter and fry in medium hot oil.
  • To serve, place baked beans in bowl and top with pineapple rings.

1 cup chopped onion
1 (19 ounce) can pork and beans in tomato sauce
1 (16 ounce) can red kidney beans
1 (8 ounce) can crushed pineapple

4 pork loin chops, 2 inches thick
2 tablespoons brown sugar
2 tablespoons coarse salt
1 teaspoon black pepper
6 ounces slab bacon, rind removed and cut into 1/2-inch dice
1 cup onion, 1/2-inch diced
2 teaspoons garlic, minced
1/4 cup ketchup
2 tablespoons molasses
2 tablespoons French's mustard
1 tablespoon brown sugar
1 jalapeno, minced
2 Granny Smith apples, cored and 1-inch chopped
1 can Buschs baked beans, drained and rinsed
Salt and pepper
1 golden ripe pineapple, peeled and sliced lengthwise into 3 equal parts
2 cups red cabbage, thinly sliced
1 carrot, peeled and coarsely grated
1 teaspoon cider vinegar
1 teaspoon sour cream
Salt, to taste

Steps:

  • Mix the brown sugar, salt and pepper together and rub vigorously into the pork. Refrigerate 4 to 6 hours. Place chops over medium hot coals for 5 minutes and turn 1/4 turn. Cook for 5 minutes and then flip the chop over. Cook for 5 minutes; turn 1/4 turn; cook another 5 minutes. Allow the chop to rest for 5 minutes on the cool side of the grill.
  • Red's Apple Baked Beans: In a cast iron pot with a lid, cook the bacon over medium heat, stirring until browned. Add onion and garlic and cook until browned. Add ketchup, molasses, mustard, sugar, and jalapeno and bring to a boil. Add apples and baked beans and stir to combine thoroughly. Cook on stove top or side grill about 1 hour covered over medium low heat.
  • Grilled Pineapple Slaw: Place pineapple slices over medium hot grill and brown for 3 to 5 minutes. Turn over and brown second side. Slice the pineapple on bias very thinly and toss in a bowl with cabbage and carrot. Mix the vinegar, sour cream and salt to make a dressing and mix in with the pineapple, carrots and cabbage. Place the pineapple slaw on a plate and spread it around to cover the entire plate. Place the baked beans in the center of the slaw, and place the pork on top.

Baked beans are quick to make, cost effective and great to have in fridge for a couple days afterwards to munch on. The pineapple adds a nice dimension to these beans. I like them cold the next day, my mom like to eat them as a sandwich on buttered bread.

1 can(s) 1 can of pineapple chunks, canned or fresh.
4 slice raw bacon cut in 1/2
5 can(s) of different kinds of beans. buy mix of red kidney, pinto, black, navy, great northern, butter, cannellini or lima beans. you want to have an interesting mix! just don't use green beans!
1/2 c ketchup
3 Tbsp yellow prepared mustard, (not dijon, powdered, seed)
1/4 c dark molasses (up to a 1/3 cup if you like it even more "molassessy")
1 large onion, coarsely chopped. i use vidallia, but any yellow onion is fine

Steps:

  • 1. Noe: You can add crushed but i like for noticeable chunks to be floating in the beans. I buy the chunked version and cut them in 1/4's . Toss the pineapple juice. Sorry but you don't need any added extra liquid in baked beans to make them runny.
  • 2. Open all the cans and drain off the liquid in the cans. I just open the can, press the metal lid down inside the can, squish and drain. I then add some water to the can to additionally rinse them a bit, and squish again. Of course, u can just open all the cans into a colander and rinse! I like to avoid messing up extra pans or tools if not needed! Throw all the beans into the dish you are baking them in. Add the ketchup, mustard (yellow, not dijon), molasses, chopped pineapple, chopped onion. Mix together.
  • 3. Cover the top with bacon strips. Bake uncovered in preheated over at 350 for an hour or to your liking. 45 min may be just fine. Take out and let sit partially covered for about 20 min until serving. Remove bacon before serving. Beans are always best the next day, but these will probably be gone by then, though!
  • 4. Note: Although these are baked beans, you can cook them on stovetop on med-low head partially covered for 45 min-1 hour as well. Stir once or twice to make sure not sticking to the bottom. I use tongs to replace the bacon to the top after stirring mostly for appearance purposes. I also make sure to use a non-stick pot always. Turn off the burner and let sit partially covered for 20 min before serving.

2 can(s) baked beans
1 can(s) pineapple tidbits drained
1/2 lb package(s) bacon chopped
2 - 3 tablespoon(s) black strap molasses
1/2 cup(s) plain bread crumbs
1/2 small onion chopped
1/2 cup(s) dark brown sugar

Steps:

  • Preheat oven to 325. In large dutch oven or deep pan heat baked beans on low.
  • In large skillet cook chopped bacon until almost done. Remove bacon from pan and set aside. Save bacon drippings in small bowl. In same pan add chopped onion and cook on low until onion is soft but not crispy. Remove onion and mix with bacon. set aside.
  • In same pan add 1 tablespoon of baking drippings. Drain and add pineapple tidbits and heat on low. Add black strap mollasses, stir and heat through. If needed add a little bit more of the bacon drippings to keep pineapple from drying out. Stir in 1/2 the bread crumbs and heat on low.
  • Remove pineapple mixture from heat. Pour baked beans into a baking dish. Mix pineapple mixture to beans. Mix into the beans 1/2 the bacon and onions. Add remaining bread crumbs to beans and stir. Sprinkle remaining bacon and onions on top of beans. Sprinkle brown sugar on top. Heat in 325 degree oven for 30 minutes.
