PAKORA (INDIAN VEGETABLE FRITTERS)

Recipe video above. Vegetable fritters can be so bland and uninspiring ... but not in the hands of Indian cooks! Pakoras are a traditional Indian street food made with all sorts of vegetables. I've used onion, potato and caulifloiwer, but see Note 5 for other options. Serve as starter for an Indian menu, light meal or pass around as canapes. They're gluten free and vegan so everybody can enjoy them!Spiciness: Mild. Large chillies are not that spicy, and we are using 2 across lots of pakoras! Feel free to omit/reduce the fresh chilli and chilli powder.No deep fry method - See Note 7 for shallow pan-fried version.

2 1/4 cups chickpea flour ((Note 1))
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp fenugreek powder ((Note 2))
1/2 tsp chilli powder ((pure chilli powder, Note 3))
2 tsp salt ((cooking/kosher salt))
3/4 cups + 2 1/2 tbsp water
1 1/2 cups onions (, grated using standard box grater (~1 1/2 onions))
2 cups potato ((~1 large), peeled and grated using standard box grater (Note 4))
2 1/2 cups cauliflower ((~1/4 large head), finely chopped into rice size pieces (or grate))
2 large red chillies ((cayenne peppers), finely chopped (adjust spiciness to taste, or leave them out))
1 tbsp fresh ginger (, finely grated)
2 tbsp coriander/cilantro leaves (, finely chopped)
3 - 4 cups vegetable or canola oil ((4cm / 1.5" depth in pot))
2 cups mint leaves
1 cup coriander/cilantro leaves
1/4 cup eschalot (, sliced)
3 tbsp lime juice
1 tsp caster sugar
1/2 tsp cumin seeds
1/2 tsp cooking/kosher salt
2 ice cubes ((loosens + keeps sauce green))
1 cup plain yoghurt
1/2 cup mint leaves (, packed)
1/4 tsp salt

Steps:

  • Make batter: Place chickpea flour in a bowl with the spices (turmeric, cumin, coriander, fenugreek, chilli). Slow whisk in the water.
  • Mix in Vegetables: Add potato, cauliflower, onion, ginger, chilli and coriander. Mix well with a wooden spoon. It should be a thick batter, almost paste-like.
  • Preheat oven to 80°C/175°F - to keep cooked pakoras warm. Set a rack over a tray.
  • Heat oil: Heat 4cm / 1.5" oil in a large heavy based pot to 180°C/350°F (Note 6).
  • Form patties: Drop 2 tbsp of batter roughly formed into a patty shape into the oil. I use my hands (as is typical in India!) but you can also use 2 tablespoons (be careful of splash-age). Don't crowd the pot, it will lower the temperature too much.
  • Fry pakoras: Fry 2 - 3 minutes until golden. Drain on paper towels. Keep cooked pakoras hot in the oven on a rack set over a tray.
  • Serve: Serve pakoras with Coriander Mint Sauce or Minted Yogurt Sauce!

Turn left over rice into a delicious side dish with this easy recipe for cheesy fried rice patties.

2 cups cooked rice, any type
1 medium onion, finely chopped
1 egg
4 tablespoons cornstarch
2 teaspoons of fresh parsley, chopped
2 teaspoons of fresh oregano, chopped
2 teaspoons of fresh thyme, chopped
1 Teaspoon of kosher salt
4 tablespoons of vegetable oil, for frying

Steps:

  • Dice the onion finely and chop the fresh herbs.
  • Combine the left over rice, egg, fresh herbs, onion and cornstarch. Mix well.
  • Using a muffin scoop, scoop out the mixture and press first and then release on a cutting board to make patties. Flatten slightly with your fingers.
  • In a frying pan with curved side, heat oil for shallow frying.
  • When the oil is hot, add the patties, pressing down slightly to form a flat fritter. Don't crowd the pan.
  • Fry one side until golden brown for about 5 minutes and flip.
  • Drain fritters on paper towels to absorb excess oil.
  • Serve with salsa, guacamole, hummus or anything else that has a spicy fresh flavor.

Cottage Cheese Pakora Fritters with Red Bell Peppers image

1/2 teaspoon Chaat Masala or store-bought
1 red bell pepper, minced
1/2 cup large curd cottage cheese
1 small russet potato (or any potato), grated
2/3 cup chickpea flour
1/4 cup finely chopped scallion, green parts only
1 tablespoon peeled and minced fresh ginger
1 to 3 fresh green chili pepper, such as serrano, minced with seeds
1 teaspoon ground coriander
1/4 teaspoon salt, to taste
1 1/2 to 2 cups peanut oil for deep-frying

Steps:

  • 1. Prepare the chaat masala. In a medium bowl, mix together all the ingredients (except the oil and chaat masala) to make a thick, dough-like batter. (If the batter is too soft, add a little more chickpea flour.) Divide into 20 to 25 uneven balls.2. 4 to 6 quarter-size slices of peeled fresh ginger
1 fresh green chili pepper, such as serrano, stemmed
1 small onion, coarsely chopped
1/2 cup coarsely chopped fresh cilantro, including soft stems
8 to 10 fresh spinach leaves, with stems
1 cup raw cashew nuts
1/3 cup rice flour
1/4 cup chickpea flour
1/2 teaspoon salt, or to taste
1/8 teaspoon baking soda
2 to 3 cups shredded lettuce (any kind)
1 1/2 to 2 cups peanut oil for deep-frying

Steps:

  • 1. In a food processor, process together the ginger, green chili pepper, onion, cilantro, and spinach until minced. Add the cashews and pulse until the nuts are coarsely chopped. 1 1/4 pounds halibut steaks, salmon or sea bass fillets, about 1 inch thick, cut into 1 1/2 inch pieces
3 tablespoons distilled white vinegar
2 cloves garlic (large), finely ground
1/2 teaspoon , hot red pepper flake, , or to taste
1/2 teaspoon ground turmeric
1/2 teaspoon salt, or to taste
1 recipe Basic Batter for Pakora Fritters
2 tablespoons chickpea or rice flour
1 teaspoon ground cumin
1/2 teaspoon , coarsely ground ajwain, seeds
1/8 teaspoon ground asafoetida
2 to 3 scallion, green parts only, minced
1 1/2 to 2 cups oils for deep-frying
2 tablespoons finely chopped fresh cilantro leaves

Steps:

  • 1. Prepare the chaat masala. Place the fish pieces in a bowl. Add the vinegar, garlic, red pepper flakes, turmeric, and salt, and mix well, making sure all the pieces are well-coated. Cover and marinate at least 1 and up to 3 hours in the refrigerator. 2. Prepare the basic batter, then mix in the flour, cumin, ajwain, asafoetida, and scallion greens. 1/2 cup green split peas (muttar dal), sorted and washed in 3 to 4 changes of water
5 quarter-size slices peeled fresh ginger
1 to 3 fresh green chili pepper, such as serrano, stemmed
1 small green bell pepper, coarsely chopped
1 small onion, coarsely chopped
1 small russet potato, coarsely chopped
2 small carrots, coarsely chopped
1 cup coarsely chopped cooking greans, your choice, such as radish, spinach, daikon or mustard
1/2 cup coarsely chopped fresh cilantro, including soft stems
1 1/2 tablespoons ground coriander
1 teaspoon ground dried oregano
1/2 teaspoon , coarsely ground ajwain, seeds
1/2 teaspoon ground cumin
1/4 teaspoon baking soda
1 teaspoon salt, or to taste
2/3 cup chickpea flour, or more as needed
2 to 3 cups peanut oil for deep-frying

Steps:

  • 1. Prepare the chaat masala. Soak the split peas in water to cover by 2 inches, about 4 hours, then drain.2. In a food processor, pulse together the ginger, green chili and bell peppers, onion, potato, carrots, greens, and half the split peas until just minced. (Do not over-process into a purée.) 1/2 teaspoon Chaat Masala or store-bought
1 1/2 cups any dry-cooked vegetable or meat filling (search for "Category: Fillings for Samosas")
1 recipe Basic Batter for Pakora Fritters
12 to 15 outer leaves Napa cabbage
1 1/2 to 2 cups oils for deep-frying
Shredded cabbage to line a platter

  • 1. Prepare the chaat masala and the filling, then preparethe batter. Wash and cut off the leafy top 5 inches of each cabbage leaf. Place in a microwave-safe dish, cover with the lid of the dish, and cook 3 to 4 minutes on high power, to wilt the leaves. (Or wilt over medium heat in a large pan.) Let cool.2. 1 to 3 fresh green chili pepper, such as serrano, stemmed
1 small onion, coarsely chopped
1/2 cup coarsely chopped fresh cilantro, including soft stems
12 to 15 fresh spinach leaves, with stems
2 tablespoons fresh lemon juice
1 1/2 cups peeled and chopped firm unripe papayas
2/3 cup rice flour
1/2 cup chickpea flour
1/2 teaspoon salt, or to taste
1/8 teaspoon baking soda
1 tablespoon vegetable oil
1 teaspoon mustard seeds
1/4 teaspoon ground asafoetida
1 tablespoon coarsely ground dried curry leaves
1 1/2 to 2 cups peanut oil for deep-frying
2 to 3 cups shredded lettuce (any kind)

Steps:

  • 1. In a food processor, pulse together the ginger, green chile peppers, onion, cilantro, spinach, and lemon juice until just minced. (Do not Purée.) Add the papaya and pulse until coarsely chopped (do not mince). Transfer to a bowl. Add the rice and chickpea flours, salt, and baking soda and mix well to make a thick, almost dough-like mixture. Add some more rice or chickpea flour, if needed.2. Heat 1 tablespoon oil in a small nonstick saucepan over medium-high heat and add the mustard seeds and asafoetida. They should splutter upon contact with the hot oil, so cover the pan and reduce the heat until the spluttering subsides. Quickly add the curry leaves, stir 30 seconds, then mix the spices into the mixture.3. Heat the peanut oil as per directions in INFORMATION AND SPECIAL TECHNIQUES: __Frying Fritters (Pakorae Talna).
