6 boneless pork loin chops (6 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups fresh whole kernel corn
1 can (15 ounces) pinto beans, rinsed and drained
1-1/4 cups chunky salsa
2 tablespoons water
1 teaspoon ground cumin

Steps:

  • Sprinkle pork chops with salt and pepper. Heat a large nonstick skillet coated with cooking spray over medium heat. Brown chops on both sides in batches., Return all chops to pan. Add remaining ingredients; bring to a boil. Reduce heat; simmer, covered, 6-8 minutes or until thermometer inserted in pork reads 145°. Let stand 5 minutes before serving.

2 teaspoons chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
4 boneless pork loin chops (4 ounces each and 1/2 inch thick)
1 tablespoon olive oil
1/4 cup salsa
2 tablespoons apricot spreadable fruit
2 cups sliced peeled nectarines or peaches
2 tablespoons minced fresh cilantro
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano

Steps:

  • In a small bowl, combine the first 6 ingredients. Rub over both sides of pork chops. In a large nonstick skillet, cook pork chops in oil over medium-high heat until juices run clear, 5-6 minutes on each side. Remove to a serving platter and keep warm., In the same skillet, combine salsa and spreadable fruit. Bring to a boil. Reduce heat; cook and stir over medium heat for 1 minute. Stir in nectarines, cilantro and oregano; cook until heated through, 2-3 minutes. Serve with pork.

1-1/4 cups fresh or frozen blackberries (about 6 ounces), thawed and drained
1-1/4 cups fresh or frozen raspberries (about 6 ounces), thawed and drained
1 cup fresh or frozen blueberries (about 6 ounces), thawed
1 medium sweet red pepper, finely chopped
1 jalapeno pepper, seeded and minced
1/2 medium red onion, finely chopped
1/4 cup lime juice
3 tablespoons minced fresh cilantro
1/4 teaspoon salt
PORK:
2 pork tenderloins (3/4 pound each), cut into 3/4-inch slices
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil, divided
1/2 cup white wine or chicken stock
2 shallots, thinly sliced
1/2 cup chicken stock

Steps:

  • Place the first 5 ingredients in a bowl; toss lightly to combine. Reserve 1 cup berry mixture for sauce. For salsa, gently stir onion, lime juice, cilantro and salt into remaining mixture; let stand 30 minutes., Meanwhile, sprinkle pork with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add half the pork and cook until a thermometer inserted in pork reads 145°, 2-4 minutes on each side. Remove from pan. Repeat with remaining pork and oil., Add wine, shallots and reserved berry mixture to the pan, stirring to loosen browned bits. Bring to a boil; cook until liquid is reduced to 1 tablespoon, 4-6 minutes. Stir in stock; cook until shallots are tender, about 5 minutes longer, stirring occasionally. 2 tablespoons vegetable oil
4 -6 boneless pork chops
1 (28 ounce) can crushed pineapple
1 (15 ounce) can cream of coconut
1 teaspoon salt
1/2 teaspoon allspice
1/4 teaspoon cayenne

Steps:

  • combine spice mix & sprinkle over both sides of pork chops.
  • heat oil in large pan (I used my 12" cast iron). Add chops & saute until browned on both sides.
  • add pineapple & cream of coconut. stir carefully.
  • Simmer covered for 5-10 minutes depending on the thickness of the chops. Remove chops to a plate. Raise heat & simer until slightly reduced.
  • Check for seasoning. If it is too sweet, add more salt, allspice & cayenne (carefully) to taste.
  • Serve pork with sauce over rice. I used basmati.

4 center cut pork chops,trimmed
1 Tbsp soy sauce
2 Tbsp coconut oil
14 oz can coconut milk
8 oz can pineapple tidbits, drained
3 Tbsp chopped parsley

Steps:

  • 1. In your cast iron or electric fry pan, sear the pork chops in the coconut oil for about 2 minutes on each side. Add soy sauce and coconut milk to the pan; bring to a boil then turn heat to medium and simmer, for 3 minutes until just done.
  • 2. Stir in pineapple tidbits and continue to simmer until sauce thickens, about 4 minutes. Remove pork chops from pan and pour sauce over pork. Sprinkle with parsley.
