Fox Bros. Bar-B-Q Smoked Bologna and Pimiento Cheese Sandwich aka

16 ounces grated sharp Cheddar
8 ounces grated Monterey Jack or pepper jack cheese
3 ounces diced pimientos
1 1/4 cups mayonnaise, preferably Duke's
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
One 2-pound chub bologna
Butter, for buttering the bread
24 slices Texas toast
Barbecue sauce, yellow mustard, thin pickle slices and corn chips, such as Fritos, for building sandwiches

Steps:

  • For the pimiento cheese: Add the cheeses and pimientos to a mixing bowl, then add the mayo and mix together. Add the seasoning and mix in. Cover and chill until cold, 1 hour.
  • Form mixture into 12 pimiento cheese patties around the same diameter as the bologna and about 1/4-inch-thick. Set aside.
  • For the smoked bologna sandwich: Slice the bologna chub into twenty-four 4-ounce, 1/2-inch-thick slabs. Sear off the bologna on a hot flat top or in a hot cast-iron skillet, about 3 minutes. Flip and top each with a pimiento cheese slice. Cook until melted, then stack half the bologna slices with a second slice, with pimiento cheese slices on top. Butter the Texas toast and cook on hot flat-top or in the hot cast-iron skillet until browned.
  • Spread liberal barbecue sauce and mustard on the Texas toast. Place pickles on bottom toasts. Place the bologna slices on top of the pickles. Add heaping handfuls of corn chips on top of the melted pimiento cheese and place toasts on top to close sandwiches.

Pimiento cheese:
3/4 cup shredded mozzarella
3/4 cup shredded sharp cheddar
1/4 cup mayonnaise
2 ounces cream cheese, room temperature
2 tablespoons chopped roasted red pepper
1/2 teaspoon hot pepper sauce
1/4 teaspoon garlic powder
Kosher salt
Fried green tomatoes and assembly:
2 large green tomatoes, sliced 1/3" thick
Kosher salt, freshly ground pepper
2 large eggs
1 teaspoon hot pepper sauce
1 cup all-purpose flour
1 1/2 teaspoon garlic powder
1 teaspoon paprika
2 cups panko (Japanese breadcrumbs)
Vegetable oil (for frying; about 3 cups)
4 ciabatta rolls, split
8 slices bacon, cooked until crisp

Steps:

  • For pimiento cheese:
  • Mix mozzarella, cheddar, mayonnaise, cream cheese, roasted pepper, hot sauce, and garlic powder in a medium bowl; season with salt.
  • For fried green tomatoes and assembly:
  • Place tomatoes on a large paper towel-lined baking sheet and season with salt and pepper. Whisk eggs and hot sauce in a shallow medium bowl. Whisk flour, garlic powder, and paprika in another shallow medium bowl. Place panko in a third shallow medium bowl.
  • Using paper towels, pat tomatoes dry. Working in batches, dredge in flour mixture, shaking off excess. Coat with egg mixture, allowing excess to drip back into bowl. Coat with panko, pressing to adhere.
  • Pour oil into a large deep skillet to a depth of 1" and heat over medium heat until thermometer registers 350°. Working in batches, fry tomatoes, turning halfway through, until golden brown and crisp, about 3 minutes per batch. Transfer to a paper towel-lined baking sheet to drain.
  • Meanwhile, preheat broiler. Spread cut sides of each roll with pimiento cheese. Place rolls, pimiento cheese side up, on a baking sheet and broil until cheese is melted, about 2 minutes. Build sandwiches with rolls, cooked bacon, and fried green tomatoes.
  • DO AHEAD: Pimiento cheese can be made 1 week ahead. Cover and chill.

4 ounces pepper jack cheese, shredded
3/4 cup mayonnaise
1/2 cup chopped drained pimientos
1 small shallot, grated

2 cans (11 oz) refrigerated Pillsbury™ Original French Bread
3 tablespoons mayonnaise
1 tablespoon pickle juice
1/4 teaspoon onion powder
1 block (8 oz) sharp Cheddar cheese, shredded (2 cups)
1 jar (4 oz) diced pimiento, drained
1 lb sliced smoked ham
4 large leaves leaf lettuce
8 slices bacon, crisply cooked
2 tomatoes, sliced
1/2 medium red onion, thinly sliced

Steps:

  • Heat oven to 350°F. Spray 12-cup fluted tube cake pan with cooking spray.
  • Remove dough from both cans; do not unroll. Place in pan in a circle; pinch ends together to seal into 1 ring.
  • Bake 35 to 40 minutes or until golden brown. Cool slightly, about 10 minutes. Remove bread from pan to cooling rack. Cool completely, 30 to 40 minutes.
  • Meanwhile, in medium bowl, stir together mayonnaise, pickle juice, onion powder, shredded cheese and pimiento until mixture is combined. Refrigerate until ready to assemble sandwich ring.
  • Carefully slice cooled bread ring in half horizontally. Top bottom ring of bread with ham. Layer lettuce, bacon, tomatoes and onion over ham. Spread cheese-pimiento mixture on top half of bread ring. Place top ring on bottom ring.

I made this when I wanted a grilled cheese and I didn't have any cheese slices and I didn't want to go to the store. This is really great served with a bowl of tomato soup.

2 slices bread (i used white bread)
1 1/2 tablespoons pimento cheese (any kind will do)
1/2 teaspoon margarine (or less)

Steps:

  • On one side of each slice of bread, thinly spread margarine.
  • Place one piece of bread in cold skillet, margarine side down.
  • Spread pimiento cheese on bread in skillet.
  • Place other slice of bread on top of cheese, margarine side up.
  • Turn on stove, and brown on each side for about 4 or 5 minutes or until lightly browned.
